Whatcha cooking on your griddle?

So, I'm loving my big Berta and have found myself using the griddle a lot for little things - pancakes, toasting buns, warming up tortillas. My hubby even likes to cook eggs on it. But I feel like I'm under-utilizing it.

For those of you with a griddle, do you have any great dishes you like to whip up on it?

I do not have a griddle on my range top, however I have a monster Griddle-Q on my outdoor barbeque! And let me tell you it gets a workout! We have done the full breakfast on it: hash browns, breakfast meats, eggs, etc. We have done steak sandwiches on it (being a Philly girl at heart this was a no-brainer), fajitas, we love to do tuna steaks on it because we can cook them on relatively high heat and they don't burn, stay nice and moist, and chicken actually grills really nicely on it too--it doesn't dry out. So these are some of the things I can think of that we use it for.

This Griddle Q is available for purchase I think online, in case anyone ever wants to add one to their grill. We bought our grill at a location that was test marketing them way back when. The inventor's brother worked the place where the grill was purchased. We got a great deal on it. And even with the high prices you see on them today, they are workhorses! Sorry to go a little OT there...

Just wanted to report that this thread inspired me to order an electric griddle (I've been making Ann T's oatmeal buttermilk pancakes every other weekend since January!). I used the new electric griddle yesterday, and the pancakes were much prettier and more even than the pancakes on my stovetop griddle, and it was much faster start-to finish given the size of the griddle. My gas range has the two different-sized/output burners, so the rectangular griddle pans never heat evenly (low on the high output burner is like high on the regular burner). And a regular griddle on the low output is just too small to do more than 3-4 small pancakes at once. Now I have to decide where to store the griddle in my tiny kitchen!

I have a 1955 stove with a chrome plated griddle. I use it at least every weekend to make pancakes with great results. I don't cook anything else on it, b/c it is a pain to clean other stuff (cooked eggs and bacon on it once--ACK!). I keep thinking about doing grilled cheese on it, but then I imagine the cleanup... Let's see--a few of my tips: --my pancake batter has oil in it, so I never oil the griddle. As long as it is hot enough, they do not stick. If I oil the griddle, then I basically end up trying to clean cooked-on oil off of the griddle (a very difficult task). --as soon as I am done cooking, I slowly pour water on the hot griddle. This grabs the residual oil and holds it in suspension. Then I use either a rag, or a wad of papertowels held with tongs to mop up the greasy hot water. I usually do that a second time. Then I turn off the griddle and let it cool. This leaves it mostly clean. I just wipe it down later with some cleanser. --I only use eco friendly cleansers, so I also use those on the griddle. If I want to scrub it, I might sprinkle on baking soda first. Not sure if any of this will apply to your griddle, since I don't know what it is made of. :-) Francy

My early iteration of the pro-style range genre was a revelation to me when I got it almost 20 yearo ago. Its highest burner is, maybe 15K, but functionally less since I had to install the propane conv. kit. But still. I went from just heating food to actually cooking it and, after I burnt a fair number of things, I don't think I could ever be happy with the mingy BTUs in my old gas stove. I also love the infra-red broiler. I am using just induction now as we have the range apart for repairs (and since it's a Honey-Do project - as I defintely don't do gas - it's been taking forever) - the induction is OK, efficient, etc. but it doesn't come close to real FIRE! May be over the hols, we'll get the range back on line. After the new market garden fencing is completed; which will happen after the irrigation system is completely blown out and drained, after the roof over the fire truck is reshingled, after, after, after, each of these things that must happen before serious winter arrives. I can't put all the blame on my DH, I've been as distracted and dilatory as anybody. Too much time dawdling on the KF, I fear. L.

Re: stains It was not clear from your phrasing if the stains came as a result of cooking the pancakes or if the plancha had stains out of the box that just seem unremovable after cooking on them. As I noted above, the first time I used my plancha/griddle, I ran it too hot and got some pretty good burned butter stains. I was able to remove those stains by applying undiluted Dawn dish detergent and scrubbing with a dampened blue ScotchBrite ((non-stick suitable scrubbie) Took a bit of elbow grease but that cleaned off all the stains. There seems to be a Demeyere Non-Abrasive Cleaner and Stainless Steel Polish. User reviews seem very positive about it doing a good job with burned-on oily stains. A google search showed it to be available from the likes of Amazon, BB&B, etc. Also did some checking on using my old stand-by, Bar Keeper's Friend (BKF). The Demeyere instruction booklet does advise against using "abrasive cleansers" but that seems to be about harsh scrubbing with the likes of Comet and Ajax. A google search on BKF + Silvinox turned up recommendations for making a wet paste of BKF and water. Daub it over the stains rather than scrubbing. Let the wet paste sit for an hour or so letting the Oxalic acid do its thing. Then, wash it off or scrub with non-stick-suitable cloth, sponge, etc. OTOH, if the plancha came with the stains out of the box, it can be returned or swapped for a replacement. My shipment even came with a return label in the box in case I wanted to return it. Also, replacement of marred units was discussed in the Chowhound thread. They recommended calling "Susan" at the Zwilling warehouse at 800-777-4308 about returns and replacements.
