How to choose -- whipped sweet potatoes

I have never done them before but like the taste of baked sweet potatoes with butter. For a big crowd, I want to make whipped sweet potatoes. Some recipes call for eggs and I wonder what that does? Also, sour cream? What is a simple but delish dish that I can make and warm in the oven for Thanksgiving dinner. (Please no marshmallows or brown sugar)

I roast sweet potatoes til tender and then scoop out the flesh and whip (or mash) with butter, s&p and candied ginger - pretty plain but lovely, IMHO. I got the idea from a mention on a Sara Moulton show once that her mom does them like that.

Alton Brown did some last night. Peal & cube, steam at 2" above simmering water for 20 min. Drain. Mash with butter, salt & pepper.

The only way I will eat sweet potatoes is either baked or mashed.

When choosing a sweet potato, pick one that is nice and firm. You can use either the yellow or red variety and if at all possible choose one that already has buds or "eyes" to produce a faster plant to enjoy. You can use a jar that has a wide mouth or any type of container that isnÃ¯Â¿Â½t really large at the top. Insert toothpicks into the potato on all four sides at the center of the potato. The toothpicks are to support the potato on the jar or vase. Sweet Potato Vine Fill a jar or vase with water and place the end of the potato that is more tapered into the water. Now all you have to do is set the potato where it will get lots of sun and wait for it to grow. Normally within just days youÃ¯Â¿Â½ll begin to notice shoots starting to grow from the potato. Within a week or so there should be roots growing down into the water and you should have more shoots growing up out of the potato. ItÃ¯Â¿Â½s a good idea to change the water about once per week, stale water might start attracting gnats or other insects. You can actually just keep the vine growing in water, but if you want you can transplant it into soil after about three weeks. Just carefully remove the potato, remove the toothpicks and plant it in a pot that is large enough to completely bury the potato. YouÃ¯Â¿Â½ll be really surprised at what a beautiful house plant a sweet potato can become. With itÃ¯Â¿Â½s purple colored stems and leaves mixed with green itÃ¯Â¿Â½s a really pretty vine.

Dariana -- the following recipe that a GW poster named jadite posted years ago would work well in your situation, since it reheats well. Fiery Sweet Potatoes Time: About 2 hours 5 pounds sweet potatoes 1 cup coconut milk 1 tablespoon Thai red curry paste 1/2 cup dark brown sugar 4 tablespoons unsalted butter 1 teaspoon salt. 1. Heat oven to 375 degrees. Bake potatoes on a baking sheet until very soft, about 1 hour. When cool enough to handle, peel and mash. 2. In a small saucepan, heat coconut milk with curry paste over low heat. Mix coconut milk mixture, half the sugar, half the butter, and salt into potatoes. Keep warm until ready to serve, or cover and refrigerate up to two days. 3. At least 30 minutes before serving, heat oven to 425 degrees. Put potatoes in a baking dish, cover with foil and bake for 20 minutes. Uncover potatoes, dot with remaining butter and sugar and broil until brown and crusty on top, checking often to prevent scorching. Yield: 10 to 12 servings. Notes: I've made this, the full 5lbs, following the recipe up through step 2. I've frozen it in portions at this stage. If I'm serving it to guests, I'll finish it with the butter and brown sugar because it makes a prettier presentation. If it's just for DH and me, I skip this. I also had a fair number of various colored carrots so I sliced them crosswise, caramelized them in olive oil, while the sweet potatoes cooked and then added the curry paste to the carrots and later the coconut milk. Then when then sweet potatoes were cooked, put them in a baking pan, pour on the carrot-coconut-curry sauce, and mix the sauce in and lightly mash the potatoes. Then top with butter and brown sugar as the above recipe states and bake for about twenty minutes.

Thank You everyone for responding and the recipes. Well the boys did enjoy the sweet potatoes but have decided they prefer them plain with nothing on them which is how they usually eat them. I have baked SP at least once a week. Cheap, easy, filling, and loaded in good stuff. My husband won't touch them so I generally bake a regular potato for him. I have save one for Little Lil to mix in with her night time dinner tonight, only a spoon or so. I know sweet potatoes are commonly in some dog foods so I think it will be ok. Happy eating folks.

I use 1/2 lb butter 4 oz cream cheese to 5lb roasted sweet potato salt & pepper to taste and a splash of heavy cream.

I've never figured out what the eggs are supposed to do and stopped adding them years ago. No one noticed. LOL!
I use butter and whipping cream (not whipped) and just a bit of cardamom and ginger. I can't really give you tha amounts because it depends on the flavor and moisture content of the potatoes batch to batch.

I always have Vanilla Ice Cream handy, so I'm going to give it a test run with some Cinnamon.

I do them just like Woodie! So much easier to bake them whole and scoop out and I think they are sweeter, too. They don't need much! I have to try the candied ginger - yum:)

I tried a yam. It may be a pale Sweet Potato ?

Nuked it 3 minutes. Peeled it and cut it into cubes.
Put it in a bowl, with the other ingredients and beat until smooth.
Ingredients:
1 cup of Sweet Potato
1/2 cup of Vanilla Ice Cream
2 tablespoons of melted butter
3 tablespoons of Sugar
3/4 teaspoon of Baking Powder
1/2 teaspoon of Cinnamon
3 tablespoons of sugar

I used a SS gravy Bowl to bake it, at 350 Degrees for 1/2 hour.
When it cooled I sampled a little.

It was good and very fluffy. Almost like a dessert.
It would look better if it was an orange color.

Think I'll sample some more, to be sure it is good enough for TD dinner. Have to make sacrifices.

The vanilla ice cream sounds fun but I don't want a real sweet dish this year. (BTW, I have always put ice cream in my oatmeal and cocowheats! ymmmm.) Thanks all for your advice.

It's not an overpowering Sweetness. You can adjust the sweetness with the sugar.
I think it's worth a test run with a couple of Potatoes.
Would I tell you to try something that's not good ??? LOL !
