anything you can do with a potato can be done with sweet potatoes

if you cut the top 1/4 or so off and plant it or put in a glass of water to root you have a very nice plant, I have had one in the atrium that I found like you did and it has been going strong for 3 years now.

I love to cut them like french fries and bake them in the oven, spray with olive oil spray and sprinkle with seasonings, bake. YUMMY You can freeze any left overs and just reheat in the microwave.

Sweet potato bread and muffins come to mind plus candied, just baked and sweet potato casserole. We raise sweet potatoes each year and I still have a nice bushel of them in my cool and dark garage. You can also just peel them by bringing them to a boil and boil for 12 to 15 minutes, depending on the size. After peeling them cut into the size pieces you want and put them in a freezer bag and coat them with brown sugar or you can mash and freeze them. Then thaw and use them in your recipe.

I would just peel them and boil them till firm tender. Take out what you want to use right away and freeze the rest in portions for 2 people....no seasoning and then you can use them anyway you want to use them...sweet or savory.

This is a carrot souffle, but I bet you can make it with sweet potatoes. It's a favorite at Dale's resturant near me. I get it all the time. I'm thinking you can freeze it, maybe?

You could halve this recipe for two.

Dale's Famous Carrot Souffle
(a Most Requested Recipe and Menu Item!)
Ingredients
3 lbs. Carrots, peeled
1 cup Sugar
1/2 cup Brown Sugar
1 TBLS Baking Powder
1 tsp Vanilla
4 TBLS All Purpose Flour
6 Fresh Eggs
1 tsp Cinnamon
1 cup Liquid Margarine
1 TBLS Confectioners Sugar
Cut carrots into 1" chunks, place in sauce pan, cover with water, add a dash of salt and cook over medium heat for 45 min. or until they are very soft. Test with a fork. While carrots are hot, whip in a food processor or blender; add sugars, baking powder, and vanilla. Add flour and mix until smooth. Add eggs and cinnamon then margarine. Be careful not to over mix, you dont want a lot of foam.
Place in oven dish, filling the dish about 3/4 full to allow room for it to rise.
Bake for 60 minutes at 350 degrees, or until center springs back to touch.
Dust with confectioner's sugar before serving. Yield: 8-10 servings.

Raven, I've been wanting to do that for years (plant a sweet potato) I've seen pics and the vines are lovely.

I've heard and read that the ones in the stores are treated so that they don't sprout, so I wouldn't be able to get one to grow for me.

Yes, I too have grown a sweet potato vine. Not true all sweet potatoes are treated to keep them from sprouting. I have had them to sprout before. The brown sugar on the sweet potatoes that are to be frozen helps keep them from darkening. Very easy to slip the peelings off if you boil them first for a little bit.

When choosing a sweet potato, pick one that is nice and firm. You can use either the yellow or red variety and if at all possible choose one that already has buds or "eyes" to produce a faster plant to enjoy.
You can use a jar that has a wide mouth or any type of container that isn�t really large at the top. Insert toothpicks into the potato on all four sides at the center of the potato. The toothpicks are to support the potato on the jar or vase.

Sweet Potato Vine
Fill a jar or vase with water and place the end of the potato that is more tapered into the water. Now all you have to do is set the potato where it will get lots of sun and wait for it to grow. Normally within just days you�ll begin to notice shoots starting to grow from the potato.
Within a week or so there should be roots growing down into the water and you should have more shoots growing up out of the potato. It�s a good idea to change the water about once per week, stale water might start attracting gnats or other insects.
You can actually just keep the vine growing in water, but if you want you can transplant it into soil after about three weeks. Just carefully remove the potato, remove the toothpicks and plant it in a pot that is large enough to completely bury the potato.
You�ll be really surprised at what a beautiful house plant a sweet potato can become. With it�s purple colored stems and leaves mixed with green it�s a really pretty vine.

I have a lot of the garden store variety of sweet potato vine I have the bright lime green and the dark purple, those are different from what you grow from the top of an edible type.
However I can tell you that the lime green garden ones do make a potato not sure if they are edible or not. But when we were clearing the front beds we found a lot of them down in the dirt. I always thought they wouldn't make anything.

The one real sweet potato vine from one that was sprouted I stuck tooth picks around the sides so that it wouldn't fall down into the glass of water, it started rooting soon, then I planted it with the very top of the potato sticking out of the soil.
My mom always had a glass jar with a sweet potato vine growing on the Window sill in the kitchen windows.

I had one I found sprouting so I took it outside and planted in the dirt......growing nicely.
I look forward to seeing what happens to it eventually.
