Sweet potato casserole

My mom brought me this recipe for sweet potatoes. It tasted great, BUT it was so soupy. I think there was a lot of instructions left out of this recipe (maybe someone can figure out what was left out):

1 large can yams

3/4 cup sugar

2 eggs (whipped)

1 TBSP vanilla

1 small can evaporated milk (I used 1/2 of a 12 oz can)

1/3 pound soft margarine

TOPPING

1 cup brown sugar

1-1/2 cups chopped pecans

1/3 cup flour

1/3 cup melted butter

Bake at 350 degrees for about 35 minutes.

Questions:

Do you think the topping ingredients should be mixed together FIRST?

What constitutes a "small can" of evap milk?

Yes, mix the topping ingredients first, or maybe all but the nuts. As for the rest, I'd cut the margarine by half, the sugar by half, and just about 1/4 cup of the milk.

Still too sweet for my taste, but sugar is a liquid in such a recipe, and as such, you can cut it a lot.

did you drain the yams? And what is a "large can"?
I suspect it meant a food service size can....that's a lot of sugar!

Brenda, the "Knucklehead" wine is a white zinfandel. How is it? I wouldn't know, I still haven't learned to like wine, LOL, but his son said it was pretty good. I haven't yet tasted it. Elery says I have my own "wine grading scale" with 1 being worst and 5 being best: 1. Gag, gasp, choke. 2. I wish I hadn't swallowed that but it was too icky to spit out. 3. That sucks. 4. That doesn't COMPLETELY suck. 5. Um.....it's OK. And so, you see, you'll have to take someone else's word for it. I'm still trying to get the taste of the Christmas merlot out of my mouth. I would cook and refrigerate the potatoes but leave the topping off. Then re warm the casserole to about room temperature...perhaps in the micro...put the topping on and bake 15 minutes at 350. Linda C

Just do it.... Peel the sweet potatoes....then simmer in water until they can easily be pierced with a fork. Then butter a casserole, slice the potatoes and put a layer in the dish, sprinkle with a little salt, sprinkle a little ( or a lot) of brown sugar...add another layer and salt and brown sugar....drizzle it all with melted butter...put into the oven at 350 and bake for 25 to 30 minutes... Remove from the oven and turn the temperature of the oven to 425 and line up marshmallows on top. Bake until browned about 15 minutes....maybe less. I also think a sprinkle of cinnamon would be good before you add the marshmallows....or perhaps ginger. Linda C

Yes, I drained the yams. Mom brought me a 1 lb can as well as the recipe, the pecans, evap milk and some brown sugar (which I really didn't need).

The small can of evaporated milk is 5 0z. (Used to be 6 oz.)

Here is a recipe with more thorough instructions. It uses less milk and fresh potatoes so you can compare how you made it and see if you did something "wrong"? But the recipe is pretty much the same thing and gets good reviews.
