Tofu

My dd has become a vegetarian. I am not a vegetarian and will countinue cooking as I have been, eating protien using our own beef, chicken and turkey. Some fish. Of course we eat other protien and include milk and greens in our diet but every meal will not cover her dietary needs.

In the mean time if my dd plans to eat in a healthy way I'm encouraging her to find protien in other ways and learn to cook the foods that will better balance her meals. I'm looking into her tasting tofu. I hope to take her to Trader Joes and one other Organic store this Friday and I need some advice about kinds of Tofu there are and how to prepare them. Is the extra firm best for frying or sauteing? How do I make it taste better or make it more palatable? We'll be starting out together but hopefully she will catch on and cook for herself. I am almost totally in the dark about tofu except that I occasionally eat it in chinese take out. HELP!
