Look up recipes, there are so many. I do not know how to cook with it, but my DD uses it anywhere others would use meat, also she will add it to smoothies. I met a lady at Sprouts that bought so much I had to ask her what she uses it for, she uses it to make tofu scrabble.

My DH and I used to have a tofu business. He made over 1,000 lbs. a week, and sold it to health food stores. I used to conduct cooking demonstrations, and contributed 30 tofu recipes to a Rodale cookbook in the 1980s.

As YogaLady said, so many recipes on the internet. One thing beginners enjoy is to use tofu in Italian dishes. Replace ricotta cheese with tofu blended with fresh garlic, a little minced parsley, and maybe a small amount of parmesan cheese (optional) in stuffed shells or manicotti.

Cut it into cubes and stir-fry it with onions, garlic, and vegetables. Sprinkle with soy sauce or other Asian stir-fry sauce.

Slice it, spread it with barbeque sauce, and bake it.

My recommendation is always to look for tofu made with magnesium chloride (nigari) instead of calcium sulfate. Sometimes the ingredients will list both. That's better than only calcium, but the magnesium is best. Calcium tends to be bitter. By all means use what you have now, but if you decide you don't like it, try another brand. Don't give up on it just yet. ;-)

I like Wegman's own brand of Extra Firm tofu, and Nasoya Extra Firm is good too.

Stir fry and use it as the protein.

I have a recipe for raspberry mousse using sugar free Jello, tofu and honey. Very good.

Here it is.....
Tofu Raspberry Mousse makes 4 servings

1 pkg. raspberry flavored gelatin- sugar free if desired
3/4 cup boiling water
2/3 cup non fat dry milk
6 oz. tofu, sliced, drained well between paper towels
1 tsp honey
1/2 teaspoon lemon extract
1 1/2 cups ice cubes

Dissolve gelatin in boiling water, stirring until completely dissolved. Pour into a blender container.
Add remaining ingredients and blend until ice cubes are completely dissolved. Pour mixture into one large bowl or 4 individual serving bowls.
Chill

8 grams protein
2 grams fat
8 grams carbohydrate
126 mg. sodium
2 mg cholesterol

This is really tasty and even the men went back for seconds.
It can also be made with orange Jello with mandarin oranges folded in before chilling.

I love all kinds of Asian food, but we never have tofu at home. I find tofu pretty hard to warm up to (other than at an Asian restaurant where there's plenty of flavor in everything else in any dish containing tofu).

It's pretty bland. A little piece in miso soup is hard to get upset about. It's a pretty poor source of protein.

If you're trying to keep to a vegetarian diet, you'll deal with it. Otherwise, it's hard to eat enough tofu at one meal to replace animal protein. Put another way, the quantity of just tofu needed in one meal to contribute to the days protein target pro rata is likely more than you'd want to eat. Drink a glass of milk or eat an egg some other time of the day and you'll easily exceed how much protein you got from the tofu.

Snidely, I don't know where you got the idea that tofu is a poor source of protein.

One serving of tofu (4 oz., or a little less than 1/3 of a typical package) contains about 10 grams of protein. Four ounces of milk contains 4 grams of protein, and an egg contains 6 grams. It is well known that tofu is an excellent source of vegetarian protein.

4 oz is one quarter of a pound. Tofu in one portion of a stir fry dish is more likely to be an ounce or two. If more, most people wouldn't like it (unless, as I said, they're making an effort to eat tofu despite the taste and consistency).

I don't drink milk at all, but I was responding to your misinformed statement:

It's unfortunate you're unable to enjoy tofu. My children grew up with a lot of enthusiasm for it, and my grandchildren (at least those who are old enough to eat solid food) feel the same.

Kids grow up with enthusiasm for most any food they and their parents eat regularly. You were in the tofu business, so your family ate tofu.

I'd said before that it's hard to eat enough tofu to replace animal protein in a meal. So using your numbers, and mine, 4 ounces of chicken (an adequate but petite portion) has 36 grams of protein. To get that from tofu, you'd need to eat 3.6 x 4 oz = 14.4 ounces of tofu, nearly a pound. No one does that, unless they're determined to, as I said before.

Those who try to substitute tofu for animal protein ounce for ounce (this includes many people I know) don't realize that with respect to the tofu alone, they're not consuming enough protein. Sorry if you misunderstood what I was saying, I stick by it. Compared to animal sources, tofu is a poor source of protein.

I have carnivore friends who use crumbeled tofu in place of hamburger when they make lasagne. Tofu is an excellent source of protein and doesn't have the artery cloggers that meat does. I once served my elderly mother, aunt and uncle tofu hots dogs and they thought they were eating beef hot dogs.
Snidely, you sometimes make the strangest statements based on what you like or don't like.

I have been using tofu more in place of beef in certain meals (trying to cut down cholesterol)
tacos, chili, sloppy joes, stir fry.

tofu will very nicely take on any seasonings you introduce.

Experiment a little... starting with something like tacos or chili....just brown and crumble with peppers and onions and whatever seasoning. I'm betting you won't notice it's not beef.

Thanks for the suggestions. I think I will start tonight with a stir fry. I do not eat very much meat anymore but am not actually a vegetarian I just wanted to try something different at mealtime.

If you tell yourself it is going to taste like meat, you will never like tofu...it's not meat and it will never taste like meat...I make chili using meat thinking my husband wouldn't know the difference, so many told me he wouldn't well he did and he didn't like it...and I didn't either...I don't object to a little tofu but the way to enjoy it is to accept it as tofu. It's not something that I have to gag down but not something I love to eat....or am dying for my next meal..

The only way I really like tofu is in Miso soup and the soft variety. I grew up on it. I can eat the firm stuff but don't really care for it.

I think you got more opinions than recipes, Lois. I hope your stir-fry was good.

I forgot to mention one of my favorites: Gently press excess moisture out of a block of tofu, and cut it into cubes. Cook them in a little olive oil in a heavy frying pan until lightly browned, and sprinkle with soy sauce. Use the cubes as your protein source in a main-dish salad.

The stir fry was wonderful in my opinion. I stir fried with onions and lots of veggies and actually served over brown rice with a dash of soy sauce.
Alisande, your lettuce salad looks so yummy I will try that as soon as I get some good romaine lettuce.
I have been putting fresh water on tofu daily according to directions on package.
