What's For Supper?

I haven't been back from grocery shopping long. I bought an original rotisserie chicken and that is going to be part of our supper. I am having green beans and biscuits and gravy to go with it. I am too tired to fix much else. The chicken really smells good. Meijer's chickens are bigger than Walmart's and they had them this week for $4.99. We had lunch from Wendy's. We both wanted some chili but it wasn't ready yet and it was noon. Anyway I ended up getting a baked potato with chives and sour cream and Amber got chicken "wings". The wings were not wings but more like chicken nuggets. My potato didn't come with enough butter or sour cream so it seemed dry. I ate it anyway. What is everyone else fixing for their supper?

I am not wild about eggplant, hubby likes it.
I did a lighter version - less cheese and no frying.

We're getting ready for our 21 year-old granddaughter's visit. She flies in Saturday morning and we'll pick her up in Orlando. She's just a sweetheart and I haven't had her all by herself since they moved from Florida when she was 3 or 4. Guest room is ready and just need to do some last minute clean-up. I'm so excited!! She's a great photographer and takes all the pictures for her college yearbook. She made me a Mother's Day card which was a collage of nature photos she'd taken. She's going to give me lessons while she's here so I can post pictures. Paid bills, made out a grocery list and a list for Wal-Mart. Did the ususal daily stuff--pick up, make the bed, etc. Dinner tonight is a chicken breast that's in the crockpot right now with a tarragon mustard sauce. We'll have that with rice and DH's favorite--peas. Still have picnic cake. I should have brought it to the KT!!

DH found a new recipe he wanted to try and it was yummy! Sort of an Asian stir fry with chicken, lots of veggies and a sauce of peanut butter, curry paste, chicken broth and other wonderful flavors. We had it over rice, and a couple of cookies for dessert.

Yum, everything sounds so good! I love that fundraiser idea, Bob. Was everything delicious? Nicole, your supper sounds great; absolutely like something that I would fix. I've found a couple of recipes and may try one this weekend. Party, I've tried to like Buffalo chicken wings but I don't care for the sauce. I love grilled chicken wings, though, sprinkled with some cayenne! The bleu cheese dressing is a perfect foil for something spicy. I like celery sticks with it, too. Jasdip....there's no way that your supper wasn't delicious! I can almost taste it, now.

Each day of the week has a theme that I follow, and Monday is "Big Meal". That means a large cut of meat so there are leftovers for lunches/sandwiches/stir-fry, and possibly enough for the freezer, and possibly the base for soup. Last night was ham, fresh pole beans from the garden in "Spicy Asian Green Beans". Also from the garden - Potatoes O'Brian (with onions & peppers), a gluten-free banana muffin (from the freezer), and for dessert - I made a 3-minute Microwave Apple Crisp with a Jonathan apple, some raisins, palm sugar, apple pie spice, and a dab of butter. Served with a little whipping cream and homemade granola on the top - which is a Q&E substitute for Apple Pie and Ice Cream at our house (I hate to make pies so I fake them when possible ;-).

I got some cubed steak at the store. Browned it, and have it on cooking now. Also, boiling some potatoes...will save what I don't eat to make a little potato salad tomorrow. Will have some green beans. I already ate my 'dessert'... a clementine!!

Pan fried Tilapia, alfredo noodles, and green beans. Gonna try panko for the first time.

Beef stroganoff made from what's left of Sunday's prime rib. Serving it over noodles with Brussels sprouts and cinnamon apples on the side.

Not sure, either the Marlboro Man Sandwich or spicy Italian cold deli sandwiches. Both of which entail a trip to the store ... ugh

I made cheesy potato & ham soup, I just had a taste test...and it passed! =)

Just finished making spaghetti sauce and meatballs(Cheated on the meatballs,frozen from wallyworld) and heated up garlic bread.Had to sit down and cool off a few minutes before I eat.

I'm making bean soup in the crockpot. I'll have lots of leftovers and I'll share some with a neighbor.

I had leftover macaroni and cheese and left over ham along with grilled tomatoes. It was pretty boring and not all that healthy. The tomatoes were the best part.

Tonight is chicken with yellow rice and crusty rolls. Harry will be so happy! Since the chicken has peas in it, no need for anything else, but we'll have pears. We like fruit with dinner.
