Buttered apples and rotten cabbage...

I took yesterday off because I had hours far in excess of what I needed for the 2-week period.

I got a wild creative hare on and made apple butter and started this year's sauerkraut.

Yum...

I made the apple butter by quartering the apples, boiling them until they were mushy, and then forcing the pulp through a moderately fine sieve with the back of a ladle.

Where I differed at that point was that I put the apple sauce, spices, and sugar, in my crock pot on high and just left it reduce all day.

It never stuck on the bottom. It got a little crusty on the sides, but once I realized that I scraped down the sides frequently.

It did take about 12 hours to reduce properly, but I know have about 3 quarts of very yummy apple butter.

Then, last night around midnight, I decided to shred my cabbage for kraut.

Last year I did it by hand, but this year I used the Boerner V-slicer that I bought. I quartered the cabbage and cut out the hearts and then sliced away. Talk about making easy work of it. I did about 10 pounds of cabbage in under an hour. That includes cleaning the heads and salting time.

This year I used a strong bottle to really tamp the kraut into the bucket, but this morning I was still a little shy on juice so I ended up making some brine and pouring it in.

Hopefully it will ferment and not rot!
