I would think more in terms of complete meals....like stews and things like chicken Tetrazinni.
I find that outside of mashed potatoes with lots of sour cream and cream cheese, potato dishes don't freeze well.
Can you make things like quiche in a mini pie tin? Various creamed soups, like shrimp bisque and home made cream of mushroom or cream of spinach?
Perhaps a container of creamed chicken and mushrooms to put atop some rice, found in another container, or creamed dried beef with peas and another container of mashed potatoes.

Many vegetables freeze well and make the perfect side dish.
Peas, broccoli, carrots, cauliflower, green beans, corn, etc.

You can make your own "brown and serve" potato sides.
Just cut them into fries or jojo type shapes and roast until they just begin to turn brown. Freeze on a cookie sheet, then package so she can take out a few at a time and finish the baking (15-20 minutes usually).

I agree with the complete (or nearly) meals.

Things like spaghetti, lasagne can be paired with a simple vegetable or a salad.

All sorts of veggie/meat/grain soups are one dish dinners.
Casseroles, scalloped potatoes and rice dishes freeze well.

Twice baked potatoes freeze well:

~ bake several baking potatoes, cool slightly, scoop out the potato flesh with a spoon into a bowl

~ mash potatoes well and mix in some butter, sour cream, cream cheese or all three with salt and pepper - you can also add in some finely chopped chives or green onion tops

~ fill the potato shells with the potato mixture and top with some grated Cheddar cheese

~ freeze individually on a baking sheet until frozen solid, then wrap in plastic wrap and put them all in a heavy freezer zip bag to store in the freezer.

Cook in the microwave on high for about 10 minutes, rotating the potato during cooking. Or bake in oven or toaster oven at 350 degrees for about 30-45 minutes.

a lot of vegetable casseroles freeze well. I would put in individual servings and freeze. that way she can just take out one or two servings and either thaw and heat or heat from frozen with the entree. Sweet potatoes do really well too. Just prepare them plain or in a casserole type thing, again in individual servings.
I do the same thing for my mom only I just cook and deliver, bypassing the freezer most of the time. She likes the individual servings. She also likes those bags of frozen steamer veggies that cook up in the microwave in a couple of minutes.

I neglected to say that you cut the potatoes in half lengthwise after they have baked and cooled. Then proceed to scoop out the potato flesh, mash it, etc.

I'm slow to get back but still wanted to thank you for the suggestions. Trying to think of things that I think my folks would like, maybe broccoli and rice, or zucchini casserole.
I didn't realize there was a forum for freezer recipes and I've been looking through past threads in that forum for some ideas as well. I'll link it in case someone else comes upon this thread with a similar question.
