LindaC How slow is SLOW for pot roast?

I am making a 5 lb chuck pot roast in the oven. Its all browned and onions, wine, stock (I prefer chicken stock with beef) and some garlic and came to a boil before I put it into the oven. Ive got it in a very large LeCrueset dutch oven at 325 but wasn't sure if that was slow enough.
