Oh, Sue....I've been watching the videos this afternoon and have really enjoyed them. I always thought baklava was something better left to professionals, you make it seem actually doable. Those Greek Toast cookies are something I have to try as my mom and I love biscotti type cookies.

Woo-Hoo, I got mine too! Thanks Sue. They are very nice and I am sure I will cook more Greek food from them. We spent two years and four months in Greece and I only had one dish I didn't like.....no, you don't want to know. Thank you so much for the DVDs.

Teresa, don't tell anyone but baklava is one of the easiest things in the world to prepare. It looks impressive but really isn't. I think I could make a 15 x 10 inch pan in my sleep. Once you've got the nuts mixture put together and prepared the syrup, it's easy going. For me, the hardest part is cutting perfect diamond shapes. My grandmother & mother could do it, but I'm not as gifted.

I remember when I first started out making baklava or pan pitas (like spanakopita). I called my mother asking for advice on how to deal with torn fillo sheets. She told me what my grandmother told her. Just use them. If necessary, fit them together like a puzzle. With a good brushing of olive oil or butter and several layers, no one would ever know the difference. Just save a couple of good sheets for the very top.

Once I heard that, I never worried again.

Sue, you see? That is the sort of thing that I would have worried about - those torn fillo sheets. And I appreciated when you said in another lesson that sometimes you just get a "bad" package of fillo dough that is hard to work with. I know that happened to me, but I thought it was my ineptitude.

Max came home tonight bringing my DVD's in with the mail. Our mailbox is at the end of our street and delivery is late in the day so he always stops on his way home from his office.
