leftover smoked chicken breast suggestions

Kevin likes to make smoked chicken breasts, and he generally makes too many at one time. The last batch came out very good, but we also had smoked turkey breast (which I use for sandwiches at lunch) and smoked Italian sausages, and so there was enough meat smoked to last more than a week.

Last night I decided to make Ann T's chicken pot pie using the smoked chicken, and that was not a good idea. I can tell it would have been very good if I had used plain chicken breasts, but the smoked chicken had a flavor similar to smoked ham in the final dish. I had even bought special little oval corningware baking dishes to make individual pot pies (something I've only made once or twice before) because I could not find round ramekins at Kohls, where Kevin had $20 of free Kohls cash that expired yesterday. So the dishes were essentially free and worked well, although we could not eat half of what I put inside. Because the pans were so deep I made top and bottom crusts, but I think top crust would have been enough, which is what I will do next time. I used fresh thyme in the pie dough according to Ann's recipe because I have new thyme growing in my yard.

Anyway, I still have smoked chicken breast left over and wonder what are some interesting or different ways to use it. I've made chicken salad with it with hard boiled eggs, celery, onion, Giardiniera, olives, pickles, etc, and that is okay, but I thought there might be a better use. I wonder if it would be good for eggs rolls or empanadas.

I use smoked chicken in any recipe that calls for ham.

I've posted this recipe before, but it's worth reposting. I buy smoked chickens at my farmer's mkt and use those. I've never put in the grapes, but the rest I make as written. It's served room temp, which really brings out the flavors instead of right out of the refer.

Wild Rice With Smoked Turkey (or Chicken) Salad

Yield : Makes 4 servings
Ingredients

1 cup uncooked wild rice, rinsed in warm water and drained
ÃÂ½ cup canola or other flavorless vegetable oil (i use a bit less)
3 tablespoons fresh lemon juice
1 small garlic clove, minced
ÃÂ½ teaspoon kosher salt
Freshly ground black pepper
6 ounces sliced smoked turkey or chicken, cut into 1 ÃÂ 1/8-inch slivers
1 cup small seedless green grapes
ÃÂ½ cup dried cranberries
ÃÂ½ cup toasted and peeled hazelnuts
ÃÂ¼ cup finely chopped Italian parsley
ÃÂ¼ cup thinly sliced scallions (white and green parts)

Directions

1. Heat 3 cups water to a boil in a large saucepan; stir in the rice. Cook, covered, over medium-low heat until tender, 35 to 55 minutes, depending on the rice. Uncover and cook to evaporate any excess liquid; or let stand, covered, until any remaining water is absorbed. Let cool to room temperature.

2. Whisk the oil, lemon juice, garlic, salt, and a grinding of black pepper in a large bowl. Add the rice, turkey, grapes, cranberries, hazelnuts, parsley, and scallions; toss blend. Taste and add more salt and pepper, if needed. Serve at room temperature.

We had left over smoked chicken breast and used to put on homemade pizza.
Used one of the herb flavored cream cheese on top of the crust followed by the chicken, caramelized onion and top with saved parm. or cheese of your choice.
Could put other toppings of your choice also. Enjoy

Chicken is not a favorite of mine; although it used to be. My "mother" cooked it too much growing up and for the last 10 years before we stopped talking; would only eat baked chicken. Parents both came here in the 50's from Hungary; there's one dish she used to cook that I ended up finding a recipe for & making it my own. Chicken Paprikash 2 - 2 1/2 pounds meaty chicken pieces (breast, thighs, drumsticks) 1 tablespoon cooking oil. 1 cup chopped onion 3 -4 teaspoons paprika 3/4 cup chicken broth (think it's 1/2 a can) 1/4 cup dry white wine (I omit this step) 1 8-ounce sour cream (I omit this) 2 tablespoons all purpose flour 2 cups noodles or rice *I go one further and add Hungarian banana peppers - or there is a mix at my food store that has small red/yellow/orange peppers *I also double the sauce - use a full can chicken broth & double the Paprika. I use 2 different brands Paprika Cook chicken in hot oil about 15 minutes or till lightly browned. Sprinkle with salt & pepper. Remove chicken & set aside. Add onion & paprika (peppers if using them) to skillet; cook till onion is tender. Add chicken, turning pieces to coat with paprika mixture. Add broth (& wine). Bring to boiling - I don't really boil, I let mine simmer for a while. Cover, simmer 40 minutes or till chicken is tender & no longer pink. This is where I stop & serve mine, using the pan juices on the noodles or rice Take chicken out of pan. Measure 1 1/2 cups pan juices; adding water if necessary. We like them grilled too, and depending on my mood I flavor them in different ways. If you can get it Yoshida's Gourmet Sauce is a teriyaki-like sauce that's really good with either chicken or beef and gives an Oriental flavor to the chicken. Another favorite is to marinate the chicken in a mixture of mayo, pesto, lemon juice and garlic. For chicken Caesar salad I marinate them in a combo of Caesar dressing, lemon juice, garlic and milk (which really tenderizes them). And there's always fajitas or jerk chicken burgers - I'm posting a couple of recipes below for you for those. And I agree with Linda - they key to keeping them moist is to not overcook them. If you don't have one, get an instant-read thermometer. I cook them over hot coals for about a total of 15 minutes, turning every 5 minutes so they don't get too brown. Here's one way that I have used up a chicken breast. If the breast is already cooked, then cook onion in step 2 and add chicken pieces to onion in pan to warm them. Chicken & Chunky Pesto on Whole Wheat Spaghetti I made the pesto (the yellow one at left) rather than the food processor as it was such a small amount and it turned out lovely and chunky. Here's the recipe as I made it for the two of us, using half of my usual pesto recipe: 1 chicken breast cut into bite sized strips 1 small onion - sliced 2 portions of whole wheat spaghetti 1/4 teasp sweet smoked Spanish paprika (optional) olive oil for cooking Pesto - this is the halved version: 2 cloves of garlic - minced 1 cup of loosely packed basil leaves - chopped 1/4 cup olive oil 1/4 teasp salt 1/4 teasp fresh ground black pepper 1/4 cup grated parmesan 1/4 cup pine nuts 1/2 teasp water 1. Put a large lidded pot of salted water on to boil for the spaghetti. 2. Prepare chicken and put into a small frying pan with onion and a bit of oil. Saute until cooked, turning and shaking pan.....about 12 minutes or until chicken pieces are cooked and all is lightly browned. Sprinkle with paprika and stir. Put on lid and keep warm while preparing the rest. 3. Meanwhile put in a ceramic mortar the salt, pepper, minced garlic and a few drops of the measured oil. Pound to a medium paste and add pine nuts, pounding some more, then add the chopped basil leaves, grated parmesan and some more of the oil. Thank you all for your suggestions. I ended up making chicken with wine and mushrooms. I did cut my chicken breast in half then I rolled the chicken with Parmesan cheese, dipped in egg and then breadcrumbs. I browned them and put them in a casserole dish, then I made my mushroom sauce with white wine and a bit of chicken broth. Poured sauce over chicken and baked for an hour. It was very, very tender and had a wonderful flavor. I served it over rice cooked in chicken broth. I forgot to take a picture of the dished plate but it was a beautiful presentation. DH loved it and he doesn't really care for mushrooms all that much.

Well, since I don't like turkey - have always used smoked chicken for sandwiches. Very good with a dab of tart cranberry sauce.

We tried smoked chicken for enchiladas and did not like them at all. Considering that experience, oddly we do enjoy smoked chicken in quesadillas with pepper jack cheese and green salsa. I think it's the difference between corn and flour tortillas. (I always use corn for enchiladas.)

Oly, oddly enough, I did make wild rice with the first chicken breast, but I made it with dried and fresh mushrooms, garlic, and onion. It was very good and cooked quickly in my pressure cooker. Instead of stock, I used the water that I rehydrated the mushrooms in. I don't remember what kind of dried mushrooms they were (label is in Chinese), but I had misplaced them in my pantry in a half-gallon jar (not easy to misplace!). They were not Shitake and were very tender with a mild flavor, somewhat similar to Porcini. I'm glad I found them because the nearest Chinese market is 20 minutes away in South Bay (99 Ranch). The dried mushroom medley that I bought at TJ's was much more expensive and not as good. I used to buy dried mushrooms in bulk at Surfas Restaurant Supply, but I didn't see them the last time I was there. I like having them on hand and use them often, even if I have fresh mushrooms.

Pizza sounds good - I also have leftover pizza I could add it too and put a slice of cheese over it. In the past I have made open faced sandwiches with the smoked chicken and then covered it with a mushroom veloute sauce. That was good also. I used the same sauce with the chicken to have with pasta, and I did not like that as much - rice was better.

Maybe I will just cook some potatoes and frozen vegetables and have that with the mushroom sauce over reheated chicken. I bought extra frozen vegetables to make the pot pies. I also have leftover filling for the pies, but it already has potato in it.

For my wedding, we had a chicken BBQ in the backyard, and ended up with quite a bit of leftover smoked chicken, which we froze before heading off on our honeymoon.

I really like smoked chicken in Mexican dishes like enchiladas or burritos. On pizza I have used cheddar with jalapenos or other similar combos. Another fave is smoked chicken corn chowder with cheddar biscuits or corn bread. Similarly, white chicken chili with the smoked chicken was a hit, too. And we made a couple of quiches that were tasty.

Thanks! I could make tacos with cheddar and salsa, since I have corn tortillas on hand. I keep masa on hand in case I run out of tortillas. I would have to make flour tortillas to make burritos, but that sounds good also. Maybe I will cook some beans tonight to have with them. Fortunately, I can cook them quickly in my pressure cooker, which I use a lot more than I expected to.

I could also make corn bread.
