Aw, h*ll. I can't afford any of that stuff now anyway. Might as well wish for a 48" Capital gas range with rotisserie.

The only thing I told hubby about was a NEW 8" chef knife.
I've been looking at Messermeister.

I bought myself an early Christmas present at Linen's N Things closing: a Cuisinart Griddler.
I've used it three times and am really happy with it. Wanted one last year!
LeCrueset or Allclad would be a nice splurge.
I'd love a Thermapen!!

Our family, all sides of it, all widespread all over the country, have all agreed that due to the economy (some of us have lost jobs, some of us are worried about losing jobs, and some of us have jobs based on sales commission, with very little sales happening), only the children will be receiving gifts this year. No adults will be exchanging gifts. So my wishlist will have to wait until next year when it will be better times.

A friend recently decided to try Chinese cooking. She bought an obscenely expensive Shun knife and a relatively inexpensive Joyce Chen Peking Pan. I recently tried them both. The knife was nice, but I'll stick with my cheap ones. The pan, however, was a revelation. It won't replace a carbon steel wok for extremely high heat wokking but for day to day sautéing it is very very nice. So if you are reading this Santa, I want a 12" Joyce Chen Peking Pan.

I want this double burner grill/griddle from NapaStyle.

Ooo Seagrass! I've been looking for one of those, but couldn't ever seem to find one with an enamel coating! Even the Le Creuset one looks hard to clean. I may need to put that on my list!

Other than that, I already got my Breville citrus press and Zojirushi rice cooker last year, so I think my kitchen is pretty set. I may need to stop collecting so much clutter! There are a few cookbooks on the list though...

I'm interested to learn about tools that experienced cooks would like to own. The replies to this post thusfar have introduced me to some products I hadn't heard of - I just looked up Thermapens and Rosle ladles.

Arley & shannonplus2 referenced the tough economy we're facing this holiday season. It will impact actual gift giving/receiving for many of us, but it's still fun and informative for me to read the "wishes."

BTW, I'm adding a Thermapen to my list!

In your first post you mentioned the Zo.... it's not on my wish list because I have one. But if it broke tomorrow, it would be No. 1 on my list.... Heck, I couldn't even wait and put it on my list, I'd be ordering another one myself asap!
In my kitchen and life, it's an essential kitchen item!

Amck, you'd need to scratch out on your list the Boos butcherblock cutting board, and replace it with this much better one below, Ironwood Chopping Block. It is a one piece whole made of ironwood (a hardwood) and it's heavy duty. It's also very sanitized to use it.

Please don't let "made in China" scaring you. There are always exceptionals. In Chinese, Vietnamese and other Asian cuisines, appliances for cutting and chopping are not normally used. We mostly do these tasks manually and one of the tool we depend on heavily is the chopping block. The Chinese chopping blocks are among the best in the world.

I have one and can't say enough about it. I just love it.
