Convection or Not for turkey... need help please

I got my first convection oven last spring, and still do not really know how to use it. Basically right now I just use the oven without turning on the fan.

I have read that convection works great to roast meat, as it gives it a nice crispy crust. My thoughts were I could try to use it for the turkey next week. Upon consulting my friend Mr Google, I have found conflicting opinions regarding using convection for turkey, but have not really gotten any details.

For folks who have a convection oven, do you use it to roast your turkey? How are the results as compared to not using convection? Are there any special techniques required? or do I just roast it the same as I normally would and turn the fan on?

on another note, what do you use the convection fan for??

I use convection to speed the cooking time of of almost anything that has a lot of surface exposure to the heat....cookies and baked goods, casseroles, etc. My manual has instructions for roasting a turkey with convection, but I usually do mine in cooking bags so I'm not much help there.

DH and I love turkey breast and I cook it year around. If it's cooked inside, I use convection. If outside, it's grilled. I've linked to convection instruction from Butterball. These are the instructions I used when I started cooking in a new convection oven years ago. Convection roasts the turkey in very little time, and the turkey comes out moist and golden. There is no downside. However, since our weather is lovely, I'll be grilling this Thanksgiving.

Funny I had some of the same constraints. I have a 30" Wolf cooktop and like it very much. I am now used to it, but 2 years ago when I did my kitchen, I went from a 30" range to the 30" cooktop, it did at the time feel a bit compacted to me because the range had the controls in the front vs. the top as on the cooktop. I am now used to it and while your "big" my not be my big, I don't have any problems using wide pans simultaneously on my cooktop. To make risotto for instance, I use two wide (9 -10") pans on two burners back to front and don't have any problems with the space. 10" is my widest pan however. Surface wise it hasn't felt tight to me. However, there are 2 cooks in the family and it felt a bit close to me in the beginning going from the 30" range to the 30" cooktop but now it is not an issue. I do love the cooktop, though. Performance-wise it is very good. If the latter consideration is relevant to you, however, you may also want to take a look at the Viking designer series - the cooking surface spans the 30" width, controls in front. Do study its outputs though - for me, the high at 14KBTU may have been fine although I preferred the 15KBTU, but 2 years ago, the low was 1.2KBTU and that was too high for the things I do want to be able to make some times. At 675-700btu simmer settings for the viking now, that is a LOT better. The Wolf has 300 or 400btu lows and I find that I use them quite a bit so I would not have been happy with 1100btu for a low. I have a Bosch oven and like it very much indeed. I have a 30" 700 series but since Bosch came out with new models this year, I don't claim to know anything about them. The 700series is a relatively basic oven even though it was their top offering 2 years ago - bake, convection bake, convect. roast, broil, convect. broil and warm, thaw, dehydrate or some modes like that. It is self-cleaning although I've only ever used it once. Goes down to 100degrees in "warm", 120degrees in "dehydrate", 170degs in the cooking modes. The direction of the heat source distinguishes the modes. It does an excellent job with temperature control (+/- 7 or 9degrees per my experience except for when you open the door in which case the temp can drop sizeably depending on mode; Miele Wolf and Gaggenau are even more precise & hold temperatures to within 5-7degrees), very even whether in bake, broil or roast; I liked its size as it was a smaller oven. I LOVE its interface. I noticed Consumer Reports doesn't like it either but haven't been able to figure the reviews out. I will say that you do have to experiment a bit to get used to how to cook in it - either it is the convection or the Bosch itself but there are things I have had to consciously start to do to ensure good performance; I did have some corkers in the beginning before I cottoned on to that. Placing the rack too close to the front of the oven instead of in the center or towards the back will interrupt its' air circulation (in convection) and the net result can be a asymmetric cooking. Likewise sorting out how to load the racks for multi-rack cooking so that they are evenly spaced out else same story. That sort of stuff. Anyhow, I like my Bosch oven very much but claim no knowledge of even any of their new models. I absolutely love the cooktop, but I think that the oven maybe what I play with even more than the cooktop.

A standard 120 volt outlet (either a 15 Amp or 20 Amp) is what this range requires. That means just a standard USA electrical outlet. Gas-only ranges usually require only a standard outlet. You run into 240V power issues when you get into dual-fuel or all-electric appliances. These have large resistance heaters that require higher current circuits. Your range should not fall into this category. To confirm this for yourself, go to the Durocorp website and look up your specific model. Click on the "Specifications" tab and look on page 2 of the pdf. You will see the voltage requirements printed at the top of the right column.

I've only done parts in my Gaggenau combi-steam. They came out fantastic, but I can't remember doing anything special. I think I just used the same temperature as for chicken (360° F., 20 min. per pound, 60% steam). Whether I'm doing a butterflied whole chicken or a quarter of a turkey, my theory is suntan lotion, seasoning, steam. That is, some kind of sauce, dressing or oil with a little sugar in it for the crisp skin, S&P and/or herbs and spices, and if not the steam oven, then some wine or broth in the pan to steam with. With the combi-steam, just put it in the solid pan and put it in. It's helps if it comes to room temperature first, however, so there isn't as much condensation. While I was offhand about the flavors, above, I do match them together!

I usually do my turkey in my CSO using convection steam with probe in thigh to 160 degrees. BUT this does not produce enough drippings for gravy. I solve this by having frozen chicken stock in the freezer. Since I was only cooking for 5 adults/2 kids yesterday I did a 13 lb turkey on convection (no steam) to 160 in thigh. I thought I might get more drippings on this setting. Nope. Good thing I didn’t need much gravy because I still had very little drippings and no frozen stock on hand. Done in 90 minutes. definitely tastier/juicier on Convection Steam imo. Back to convection steam for next turkey....chicken stock in freezer.

I always use convection for meats, especially turkey and chicken. Keep an eye on it as it will cook faster.

I cook everything with convection except baked goods, only because I am a terrible baker and I don't want to blame my failures on the convection.

I roast turkeys using the high heat method (500ÃÂ°F) so I never use the convection setting.

30 years ago my oven broke right before Thanksgiving. I had guests coming and needed an oven quickly. I bought a counter top convection oven and have used it nearly every year since to accommodate large numbers of quests. I put the whole turkey in the "regular" oven and 2 turkey breasts in the convection oven. It does cook faster but I'd say the quality is the same. 5 years ago we remodeled and put in a convection oven. I do everything with the dial set to convection and with the fan blowing. I used to rotate various things in the oven to get even browning but that is not an issue with convection.

My Miele oven has a Master Chef program for roasting turkeys. You place the temp probe in the same place as you would place a thermometer to check the temp (you know, between the thigh and the body but not touching bone).

You place the turkey in a cold oven, plug in the weight and the oven does all the work so I am not at all sure what it's doing or whether or not it uses convection but I do have to say I now "make" the best turkeys I've ever tasted!

I have an Electrolux that does the same as loves2cook. I think it starts out regular oven and then switches to convection, or other way around.

I have to agree, it does make the best turkey.

I love my convection for roasting all types of beasts & especially poultry. We don't like turkey but roast many whole chickens. They are picture perfect, evenly golden & crispy skin, & moist on the inside. I do not like convection for cakes, cookies, muffins, tarts, or pies. Some yeast breads, yes. Other yeast breads, no. It depends on what type of crust I'm trying to obtain. I have a 7 year old Kenmore Elite Gas-on-Glass range with an electric oven. The oven has a function similar to loves2cook's. Roast Beast is a one button setting. There is also a button for convection Cakes & one for convection Breads. So, I've never had to figure out the difference in cooking times or temperatures. Because the oven has a icon that lights up when the convection in operating I do know that the fans cycle on/off during the roasting/baking process.

I have not used a convection oven. But, my best advice would be, as it always is when considering the use of some new gadget or method for a special occasion dinner is to try it first!!!

You may not want a turkey before Thanksgiving, but you could roast a good sized chicken and at least the result would give you an idea.

I use Ann's high heat method with the convection setting in my oven for turkeys and chicken. Be prepared to use the cleaning cycle that night.

I agree, try a chicken first - high heat roasted chicken is fast and good.

I've tried the high heat and chickened out when smoke billowed out of the oven. Not a good experience!

Beachlily, next time use a shallow roasting pan that is just big enough for your turkey/chicken/etc.. I never have a problem with smoke because I use the right size pan.

Ann, there's not going to be a next time. I love grilled turkey. If the weather is rotten, then regular convection is easy and fast. Glad you like your high heat stuff, but it's not for me.

I use the high heat roasting method, too. I never have a problem with smoke. Ann's right. The wrong size pan will have you calling the Fire Dept! :D

Well the only large piece of meat I do is turkey. We don't eat beef and we don't do whole chickens. Just breast (or half breast) of turkey. I'm not dissing what you do. Enjoy your cooking and have a wonderful meal!

It's the only way to go!
