Comments (7)At Thanksgiving I've had groups ranging from 15 to 30. I used to always cook the turkey breasts in my portable convection oven and the big bird in the standard oven because that is where they fit. I've been using my convection for over 20 years. I find that the convection has more even heating because the air circulates. I like it. Recently bought a new oven that has the convection option and that is all I use now. If I time one of the ovens wrong I just take out the bird, tent it with foil and cover with towels. Comments (1)Follow the Miele instruction. Use the Miele rack and tray rather than a Roasting pan. The juices will drip into the pan and elevation of the turkey on the rack will get the browning all around the bird. No need to turn the Turkey either. Comments (14)Turkey necks are my standard for making homemade stock. I just simmer, no pre-roasting. Sadly, last year the major commercial poultry processor stopped offering retail packages of turkey necks. Apparently the pet food mfgs pay more so it all goes to them now. I was stumped until I realized an artisanal turkey producer probably offered them. It's two counties over, but we visit that area every few months anyway. So I stop in and pick up 5 or 6 bags of frozen necks to bring home. Lots of natural gelatin so the stock gels. Makes a killer demi-glace, too....See Moreginny20
