I realize I'm resurrecting an old thread - apologies for that. :-)) I cooked my first convection turkey yesterday, having read the old thread. I partially cooked my Xmas turkey on convection but that was largely cause I was late putting it in so I wanted to hurry it along. LOL!! This time was Convect from beginning to end. Largely it turned out fine. I do have some questions/issues: It seems Buehl makes basically the same stuffing I do. Mine was not wet at all before I stuffed. It would have been fine in a normally roasted turkey. However with this method it was really quite mushy -- more like porridge than stuffing and, as I LUV stuffing, I need to *fix this*. I was thinking I'd leave out the egg/water I usually put in the stuffing but it appears you use it. OR do you use egg only with no water or just a drop or two to thin the egg? Buehl, in the thread you didn't mention at what temp(s) you convect your turkeys. I used 375 for 20 mins then down to 325 for the remainder. A 13# turkey took 2 hours and 20 minutes to reach an internal of 175 degrees (probe). Is this similar to what you use? You mentioned wrapping the legs or anything subject to overbrowing. Does this mean you don't tent it at all but simply cover/wrap whatever appears to be getting too brown? I read on the noted thread that there was very little juice/fat from these convected turkeys thus gravy was hard come by. I used 2 Tbsps of Becel (marg) plus a little turkey fat in the bottom of the pan (as I do with any turkey) and had more than enough for gravy so don't know what that's about?? I was prepared for that event with turkey gravy mixes but didn't need to use them. What do you do about gravy? I apologize for asking so many questions of you but it seems you have a very similar taste in 'turkey dinner results'. :-)) Moreover you have vastly greater experience! I cooked a 16 lb. turkey last week using the probe and oven on convection roast. Put the probe inside of thigh where it joins the body and set temp. for 170 and oven at 325.It turned out perfect,bird was evenly browned with no having to rotate it. Removed from oven and tented with foil for 15 minutes before carving. A 25 lb. turkey will probably take approximately 3 1/2 hours if un-stuffed but don't hold me to this estimate.

I usually do my turkey in my CSO using convection steam with probe in thigh to 160 degrees. BUT this does not produce enough drippings for gravy. I solve this by having frozen chicken stock in the freezer. Since I was only cooking for 5 adults/2 kids yesterday I did a 13 lb turkey on convection (no steam) to 160 in thigh. I thought I might get more drippings on this setting. Nope. Good thing I didn’t need much gravy because I still had very little drippings and no frozen stock on hand. Done in 90 minutes. definitely tastier/juicier on Convection Steam imo. Back to convection steam for next turkey....chicken stock in freezer.

It was not my intention to highjack the OP’s thread, but am learning so much – I hope others are as well. wekick, thank you for the links and additional explanations, you’ve been so helpful. plllog, thank you for offering up so much information on the use of convection ovens, as well as… The trick is to mark out some time that you can use learning your new oven, rather than freezing up because it's different and foregoing some of the features. Thank you for that statement. I’d downloaded the instruction manual and read about the induction and convection uses/features and have been quite excited, but this thread caused some trepidation for me. I want to try and use these features, not be fearful of them. I hope with time I can make use of the convection in areas it will be beneficial, and now understand time, experimentation, and patience will be my friends. I used a dial thermometer in my current ‘regular bake’ oven, so will use it in the convection to help adjust for time (although I admit, my eyesight isn’t what it used to be, and will now have to open the darned thing to see the thermometer, loosing heat!) – I feel sure I’d not have thought of that as it’s not been used in some time and sits in a cupboard! plllog, I am embarrassed about the pâte à choux – I think it rude to correct people’s pronunciation or spelling and that was not my intention! I sincerely apologize. Trust me, words escape me all the time! For the past year I had forgotten the word ‘joconde’ (which I always spell jaconde) and in attempting to describe it have had to be creative. For the life of me I still can’t remember the name for ‘that thing’ I spread the batter with, making the indentations… not that anyone asks. I rarely say mise en place except to myself and where it’s written in my recipes, and never say maillard reaction now… I am met with the dreaded “oh, so you’re a snob’ look, and quite frankly, can’t blame my friends! “Get things ready” and “gonna brown that” just works better around these parts! Still, I like using correct terminology to myself, at least when I can remember it!
