Cooking turkey - new to convection

Hi everyone,

OK. I admit to feeling a wee bit nervous about cooking for our upcoming Thanksgiving dinner.

I love our new range - Capital Precision - and it has a convection oven. Apparently convection is the preferred method for roasting meats.

So...I have an 18 lb. bird that will be placed in our fridge tonight to begin thawing.

Then....Sunday morning...I'll place it - stuffed but not brined - on the lower rack...at 325 degrees F for 3 hours, 15 minutes

Does this sound good? I've heard that convection cuts down on cooking time by 25% but I'm a little worried becuase it is a big bird! (Of course I'll use a thermometer to ensure it reaches optimum temp).
