I enjoy having my neighbors to dinner. They are good company and really thoughtful neighbors. However, the husband has tummy troubles. First, he is gluten intolerant. Plus, he does not eat anything spicy...not even mustard. And, he hasn't eaten red meat in years. In the 5 years they have been our neighbors, I've never heard of his eating pork. He limits himself to fish and chicken.
I've been trying to come up with something new for dinner for them, taking into account all of his restrictions. What do y'all think of veal? Do you think it would be mild enough and easily enough digested that he could take a chance on it?
