I would not put an off-white vanity with white and light gray granite. The vanity does not have to be flush with the wall if the top is straight and extends past the moldings on the side of the vanity. I believe Home Depot sells a number of them- links below. I think any combination of white or gray floor tile would look great with that granite and blue-gray walls. Yes, it will be difficult to replace the tub later without damaging the floor, but it may be possible. Here is a link that might be useful: HD vanities

Well, there is no way I would post a picture of my kids' bathroom on the internet, LOL!, but we went with monkeys (it seemed appropriate). I found very cute monkey bath mat, hand towels, soap dispenser, and waste basket at Linens N Things. They also had a cute shower curtain, but we didn't need it. Each kid has their own stepstool in front of their sinks -- you can get them with storage inside or without, and can either paint their names on or have their names painted. They each have their own towels and toothbrush holders to their liking. For non-guest bathrooms, I like to keep the color white/creamy white because it provides better light for getting ready. This keeps the room pretty neutral. We haven't remodeled the bathroom yet, but the POs used a pretty neutral creamy faux marble countertop and off-white tiles on the floor and in the tub, so there's nothing that screams GIRL or BOY. Eventually, we'll put in some nicer fixtures and surfaces, but I'm still going to keep the colors very much white, cream or tan. In our last house, we went with a fairly adult looking hall bathroom and hid the kids' bath toys behind the curtain.

Just one point about installing a pocket door where the spaces between the thin little studs are backed up with a sheet of plywood behind the drywall. You can also skip the drywall entirely and cover directly with plywood right from the get-go. Nobody would have a problem finishing that surface, neither with stain and lacquer, or with a skim coat of mud. Solves any base trim problems too, especially for amateurs with no special equipment like nailers and such. Good plywood, maybe even veneered, but not OSB or MDF.

flyleft - thank you for the compliment. Yes, I designed it....well if you count copying things from magazines and internet pictures designing! The floor tiles are the basic hexagon dot tile....purchased from Lowe's. They were all white. The black border was done by buying solid sheets of black 'dots' and manually punching out the white ones from the Lowe's tile and replacing with the black. All the grout was grey, which I think helped break up all the white. Not to mention WAY easier to keep clean....or at least appear clean. Towels are from Pottery Barn. Not really any more design pictures. Lots of pictures of our house now...major remodel so we've taken lots of pics along the way. Definitely not design worthy at the moment as the walls are still bare and I'm currently agonizing over what area rug to purchase and what tile to use for our kitchen backsplash!
