...extra bacon and toast?

Flan....biscotti....challah...
Biscotti Di Prato

3 3/4 C all purpose flour (stirred till fluffy before measuring)
2 C sugar
1 tsp double acting baking powder
1/4 tsp salt
4 eggs
2 egg yolks
1 tsp vanilla ( or 1/2 tsp vanilla and 1/2 tsp almond extract if using
almonds)
1 2/3 c almonds or hazle nuts coarsley chopped and litely toasted.

Mix flour, sugar, salt and baking powder.
whisk together eggs, yolks and extracts, add eggs, etc to flour mixture and
stir until a dough forms (looks like it can never happen... but keep
working it...it will. I sometimes add a VERY little sprinkling of water)
add nuts, turn out on a non-stick surface ( I use a marble board or my
formica rolling board) and knead 3 or 4 times. Divide into fourths and
shape each piece into a 11 x 2 in. log ( make it "tall" as they flatten
while baking) Place on buttered and floured baking sheets, brush with egg
wash (egg yolk whisked with 1 T water). Bake at 350 for 35 min and cool 20
min. Slice 1/2 to 3/4 inch thick. Place on clean baking sheets ( cut side
down) and bake 10 or 12 minutes at 275. turn pieces over and bake another
10 minutes. If you want to make them extra fancy, dip half a slice in
melted chocolate and sprinkle with finly chopped nuts. You can make bigger
'scottis by making two thicker logs, but be sure to leave room for spread.

Best dipped in tea or coffee....or best yet in a sweet dessert wine!

Biscotti! Yes! I even have hazelnuts! I love custard but no one eats it but me. Biscotti everyone would eat. I only made it once, I didn't realize it was such a rich dough. Can you do this in the mixer/food processor or are you actually whisking/stirring by hand? I have carpal tunnel syndrome so make scones, etc., in the food processor.

hgtvme, I appreciate your joke, but everyone has already had all the eggs they wanted for breakfast and then some!

Eggnogs....yum!

When I was a kid, an eggnog flavoured with vanilla essence was a heavenly homemade drink....something really special!
As I grew up it became a Christmas family tradition for my Uncle Ralph to make his special eggnog with rum or brandy in a large punch bowl. But it can be a good drink any time with or without the alcohol.

Other than that, how about making some crêpes which can be filled imediately with savoury fillings such as smoked salmon & cream cheese, creamed chicken or tuna etc or made into sweet desserts with apricot jam filling, topped with icing sugar, Grand Marnier and ice cream. Or else make a stack of them and freeze, putting a bit of parchment or foil between each one, ready for another day.

1/2 cup plus 1/8 cup milk
1/2 cup plus 1/8 cup water
4 oz flour (just slightly under 1 cup)
2 eggs
salt & pepper

Mix well with beater and put in fridge for one hour.

Use cotton ball soaked in oil to moisten pan before each crêpe. (Use metal tongs to hold cotton.)

Use ladle to scoop up the right amount of batter for each crêpe, pour into hot pan and swirl at the same time to cover pan evenly.

Use metal spatula or thin knife to loosen around edge after a minute when bottom side is done.

Use metal spatula to lift and flip crêpe to brown a few seconds on reverse side.

Extra eggs? Impossible, LOL. I have chickens and hence, a lot of eggs.

Let's see, the easy stuff first. Frittata, quiche, omelettes, Woodie's Creme Brulee french toast. After that? Pound cake recipes just posted here use 6 or 7 eggs, and I love pumpkin pie or cheesecake. Devilled eggs, of course, and my potato salad always contains boiled eggs. Egg salad sandwiches are good, sometimes but I'm more likely to just grab a boiled egg and eat it.

Then again, you could make a batch of breakfast burritos or those ham/cheese/egg on an English muffin breakfast sandwiches and freeze them for quick mornings.

Extra eggs? nah, it can't happen. (grin)

Great suggestions. DD loves pound cake. Any particular recipe? Cheesecake is always lovely but the fat overload from the cream cheese I'd like to avoid right now. The eggs are enough (at least with eggs there's the protein compensation).

I do love eggnog. Used to have it for breakfast often (without alcohol, I should say).

I used to like egg salad but recently no longer like mayonnaise (ditto Miracle Whip, what Mom always used). Is there a way to make it without mayo?

I'm interested in those "breakfast burritos or those ham/cheese/egg on an English muffin breakfast sandwiches". Something family could grab for a better breakfast would be good. A recipe?

I hadn't thought of freezing something with egg in it. Do they freeze well? I know I've seen commercial versions but I always run screaming away from that part of the store freezer case, assuming lots of chemical stuff to make them freeze well.

Thanks for the tips! This comes up all the time, when DH and I both go the the store and each buy eggs, not knowing the other has done so.

Here's a recipe from Saveur Cooks Authentic French. I usually make it for Sunday brunch instead of dessert as it's not overly sweet. You can also experiment with different fruits (plums are nice). Also, if you don't want to put in the Kirsch, I've tried it with a touch of almond extract instead.

Clafoutis
Serves 8

1 T. butter
1 T. vanilla extract
6 eggs
6 T. sugar
1 1/4 cups milk
2 T. kirsch
A pinch of salt
3/4 cup flour
3 cups black cherries, pitted or unpitted
Confectioners' sugar (optional)

Preheat oven to 425 degrees. Generously butter a 9" cast-iron skillet or baking dish. Combine vanilla extract, eggs, sugar, milk, kirsch, and salt in a blender. Blend for a few seconds to mix ingredients, then add flour and blend until smooth, about 1 minute.
Pour batter into buttered skillet, then distribute cherries evenly over top. Bake until a skewer inserted into batter comes out clean and a golden brown crust has formed on top and bottom of clafoutis, about 30 minutes. Dust with confectioners' sugar if you like.

My first thought is custard or bread pudding. But here's one that everyone seems to like, not too complicated and short list of ingredients:

CHILI CASSEROLE
1 ½ lb. cheese
1 large can Ortega green chiles
8 eggs
¼ cup butter or margarine

Slice cheese and place a layer in a buttered dish (8x8). Flatten chiles and remove seeds and place on top of cheese. Sprinkle with flour, salt and pepper, dot with butter. Put another layer of cheese, chiles, and end with a layer of cheese on top. Beat 8 eggs and pour over the top and bake at 250 degrees for 1 hour.

It may take a little more cheese but it is usually between 1 ½ to 2 lbs that are used.

Linnea, Ann T has a current thread with a pound cake picture that's to die for, and a couple other members posted recipes there too. I like pound cake a lot, so I've been trying to avoid those recipes, LOL.

The "breakfast sandwiches" are easy. I toast the English Muffins, add a slice of cooked canadian bacon, a slice of cheese and either a whole egg fried hard or a "chunk" of scrambled egg. They wrap well and I just freeze them. When Ashley wants one she puts it in the microwave and she's set, but it works better if I get one out to thaw the night before and just keep it in the refrigerator.

Same with the breakfast burritos, Ashley likes hers filled with scrambled eggs, cheese, mushrooms and either sausage or bits of bacon. I brown the meat, add the rest of the ingredients, cheese last. Roll up in the tortillas and freeze, individually wrapped. A zap in the microwave and they are ready to go.

Sorry to say the biscotti really can't be made in the food processor or the mixer. I too have carpal tunnel and thing biscotti is a major contributor.
I just swallow some Advil and stir away!!....And ease the pain by eating biscotti butts!
