Microwaved eggs work well.....For English muffine sizes I would use those larger Pyrex custard cups....butter the cup....beat up some eggs and put some in each cup....micro on high for 30 seconds....stir and givethem another 30 seconds.
I guess you could also bake them in the oven....
To keep your eggs from getting hard....don't bake them so long.

I'm trying this..Everything that I could sort of find on the net that was close was adding milk and/or cream.

So I started with 8 xl eggs added a pinch of salt and a couple cracks of black pepper and then 1 c whole milk.
Put that in a buttered 8" glass square pan. And have it in the oven on 350..watching very closely.

I NEVER make scrambled eggs with milk addition, so I wasn't thinking along those lines. I'm guessing the milk will help with the moisture issue???

I make these all the time (12 at a time).
I microwave mine in my Corel cereal bowl. I love the fact that they come out round!!
I use olive oil, but butter actually works better (I'm just trying to eat healthier oils).
Mine takes exactly 41 seconds on high!

Assembly line, cheese, meat (I've sued ham, sausage, turkey, summer sausage, etc.), egg, tops.
Wrap in saran wrap and freeze in big ziploc (or original Eng. muffin bag). Voila! Breakfast for 2 weeks! More in my case because I don't eat them every day.

So...Here's what I want to know. When you make these ahead of time (I'm trying to wrap my head around eating a refrigerated cooked egg in a breakfast sandwich), do you heat them before eating? In the microwave? Or do you eat them at room temperature?

I just bought a couple of extra egg rings this afternoon, which is how I would make my Egg Muffin...However, I'm always up for trying a new way to do something!

Today's experiment went okay..I baked them perfectly this time, but it was to thick. LOL oh well..and the milk addition certainly made them "fluffier". It would likely work with only 6 eggs, since they were XL and the addition of milk..I could also probably cut that in half. But I'm going to read closer on Deborahs link.

I got the idea of making them because I was spending over $2 on Jimmy Dean Breakfast Sandwiches, and the stores didn't always have the "flavor" he wanted. He prefers the same thing all the time. English Muffin, sausage patty, american cheese and egg.
I've tried biscuit, and he says those don't nuke real well. I think he seperates the meat and egg and cooks that first for 30-45 seconds, then adds the rest and does another 30-45 seconds. Atleast that's how he used to the Jimmys.

And the second reason is..Over the past 16 months or so I've been removing packaged foods from our lives. I know each and every ingredient that is in these. I can even spell it. LOL

I don't know if this will help you or not, but I often make what I call a baked omelet. I whir up 6 eggs or so in a blender with just a touch of water (the French say milk makes them tough, lol). For my omelet I add whatever I want. Sometimes I saute onions, ham, jalapano peppers, whatever, in a skillet then add the eggs on top of that and bake in a 350 oven until set. I usually add cheese on top, but I am thinking of your breakfast sandwiches...

My quiches freeze really well, so I would think that egg squares/rounds would freeze well too.

Seems like you could just whir up some eggs in a blender or food processor and bake until they are the desired doneness. Then cut into appropriate sizes and go from there.

So let me get this straight, you toast the english muffins for assembly?
Freeze?
Then when you eat them, you....heat in a microwave?
I love toasted things. I'm wondering how these toasted things now with food that has moisture in them fare when defrosted (which seems to change the texture etc) and microwaved (which I think might change the whole toasted aspect).

Mary, yes, I toast the muffins, when cool, I place on a cooked cool sausage pattie, and cooked cool scrambed egg and a slice of american cheese. Usually put it in a ziploc container, and Hubby NUKES it at work.

But yes, they do loose their "toasted" texture upon reheating the nuker..But hubby doesn't mind.

Jimmy Dean has been making $$ for years on this concept. So I guess enough people will eat microwaved sandwiches..you can heat them in the oven though too for home consumption.

I tried this yesterday morning. I have a six hole muffin pan from Pampered Chef and used that. I mixed up six eggs with milk as for scrambled eggs. I baked them just a bit longer as I can not stand wet eggs. I also baked some Pilsbury frozen buttermilk biscuits, fried up a bit of bacon while the eggs and buscuits baked. Yum! Yes the egg was pretty thick, so maybe next time I will use less egg in each cup. DH took one to work with him this morning and when I talked to him a bit ago, he said it was pretty good! He must have enjoyed it, or he wouldn't have said anything.

Mary, if you want the toasted texture, just do the eggs and bacon ahead and freeze/refrigerate that. It only takes a minute in the toaster for the muffins, so while the eggs and bacon or sausage is heating in the microwave, the muffins can be in the toaster, and two seconds to assemble.

I will be doing a lot of these for fast breakfasts in the motor home when we are on the road.

Thank you, Terri, for asking about this! It will be very handy for me. And not just for the motor home. I do not usually cook breakfast just for me. I'll eat a couple of peices of toast instead, then cook a breakfast on the weekends when my husband is home from work. I'll be eating a better breakfast from now on, thanks to you!
