Anyone Bake eggs for make ahead sandwiches?

I make my husbands breakfast sandwiches that he takes to work. Usually I make 2-3 at a time, and refrigerate them, sometimes I'll toss them in the freezer. But I make the eggs one or two at a time, or a small pan of scrambled eggs and then "seperate" them into "portions".

Anyway, I was on a blog a few months back and she was doing the same, but she figured out a way to "bake" the eggs and then cut into squares for her assembly line. I don't recall which blog I saw it at, and didn't save it. I tried baking them once and got HARD eggs.

These are in "scrambled" form.

Anyone have any ideas? I have home made toasted english muffins waiting to become sandwiches. I was trying to avoid making the eggs on the stove top, because I have a pan that is either two small or to big for the amount of eggs I need.
