I actually was so intrigued with "Asian meatloaf", I looked up a recipe. I know you asked stinky, but here's another (while not tried and true, it's rated highly): Asian Pork Meatloaf with Red Wine-Mushroom Gravy Copyright, 2000, Ming Tsai, All Rights Reserved Prep Time: 15 min Cook Time: 1 hr 0 min Serves: 6 servings Ingredients ï¬ Canola oil, to cook ï¬ 1 tablespoon minced garlic ï¬ 1 tablespoon minced ginger ï¬ 1 tablespoon fermented black beans, rinsed and chopped ï¬ 3 carrots, peeled and 1/4-inch dice ï¬ 4 stalks celery, 1/4-inch dice ï¬ 2 onions, 1/4-inch dice ï¬ 1 zucchini, 1/4-inch dice ï¬ 1 tablespoon sambal ï¬ 1/2 cup hoisin sauce ï¬ 2 cups cooked long grain rice ï¬ 2 pounds ground pork ï¬ 4 eggs, lightly beaten ï¬ Salt and black pepper, to taste Red Wine-Mushroom Gravy: ï¬ 1 tablespoon minced garlic ï¬ 1 large onion, roughly chopped ï¬ 1 pound button mushrooms, sliced ï¬ 1 bottle dry red wine ï¬ 2 cups chicken stock ï¬ 2 tablespoons soy sauce ï¬ 2 tablespoons butter ï¬ Salt and black pepper, to taste Directions In a large saute pan coated with oil, add the garlic, ginger and black beans. Stir and season. Add carrots, celery, onions, zucchini and stir. Add sambal and hoisin and continue to stir. When the mixture is cooled, mix in the rice, pork and eggs. Season with salt and black pepper. (Test for seasoning by cooking a small piece in boiling water, a frying pan or even nuking it.) Spray a nonstick meatloaf pan and fill with mix. Bake in a preheated 350 degree oven for 45 to 60 minutes or until a knife/poker comes out clean. For the Red Wine Mushroom Gravy: In a saucepan coated with oil, caramelize the garlic, onions and mushrooms. Deglaze with red wine and reduce by 75 percent. Add the stock and soy sauce and reduce by 50 percent. Check for seasoning. Using a hand blender, puree the sauce and add the butter. Check again for seasoning. Keep warm. Yeah, clueless. Looks familiar. My sister and I carpool so this morning when the forecast came on the radio we paused to listen. After it was over there was a 3 second pause and I said, "You know what just passed through my mind? 3 below doesn't sound all that bad." And she said, "I was thinking exactly the same thing!" So we've lived in Iowa too long apparently, when 3 below sounds like something positive. And since it was "only snowing" and not blowing we stopped at the grocery store where I bought panko crumbs, golden raisins, farmer's cheese, 18# of cat chow, bananas & grapes for the parrots, day old bread for the chickens, sure jel (in case I finally get around to the elderberry jelly) and a bunch of other stuff I probably didn't need . Think I'm set until the feed semi comes on Monday. Yes. I get most of my critter stuff on a semi. Sigh. And I wonder where all my money goes.

Here is the recipe I normally use: Eggplant Parmigiana 2 medium eggplants (select ones that are long and somewhat narrow) Kosher salt Flour, for coating 2 eggs 2 tbsp water 1-1/2 cups Panko or dry breadcrumbs 1/4 tsp cayenne Avocado or grape seed oil, for deep frying 1 pound Mozzarella 1/4 pound sharp Provolone 1/4 pound Parmesan cheese Sauce: 1-1/2 cups (12 oz.) Marinara (tomato) sauce 1/4 cup fresh basil, chopped 1 tbsp olive oil 3-4 cloves garlic, minced (optional) Directions: Slice the eggplant into 1/2â thick rounds and place in a large bowl with a large amount of salt, enough to coat all cut sides. You can toss the slices in the bowl if it has a cover to get the salt more evenly distributed. Then place the slices in a colander or other large pan (such as a steaming basket) with the slices vertical, and allow it to drain for one hour. Remove the slices from the colander and wipe off the excess salt with a brush or towel, and dry the pieces with a clean towel if they are very damp. Note: Do not leave overnight! While the eggplant is draining, add the basil, olive oil, and garlic to the tomato sauce for extra flavor. It is not necessary to cook the sauce at this point. Prepare the mozzarella by cutting it into fairly thin slices, and grate the Provolone and Parmesan. Heat the oil in a deep frying pan to 375ð and have a platter ready with paper towels for draining. Place about a cup of flour in a bowl for dipping, and mix the breadcrumbs with the cayenne in another bowl. Blend the eggs with the 2 tbsp water in a third bowl, and place the bowls in a row for coating. Prepare each slice by first lightly coating it with flour (shake off excess flour), dipping in egg, and finally in the breadcrumb mixture. Deep-fry each slice in the oil until lightly golden on both sides (approx. 3 minutes per side) and then drain on paper towels. When all the slices have been fried, get an 8âÂÂx13â (or equivalent) glass or ceramic baking dish and brush olive oil on the bottom and sides to prevent sticking. Spread a very thin layer of marinara sauce in the bottom of the baking dish, and then place a layer of eggplant over that. Put a small amount of tomato sauce over each slice and then a slice of mozzarella over each piece, and sprinkle a bit of Provolone and Parmesan over that layer. Repeat this process until the baking dish is full, but do not overfill. The final layer will be tomato sauce with no cheese. I prefer to have all the cheese between the layers of eggplant, but you can put some on top as well. Cover the pan with a lid or aluminum foil and bake at 375ð for 20-25 minutes. Allow to cool for 10 minutes before serving. Pinot Noir or Chiati is good with this dish. I serve it with a side dish of pasta plus bread. Angel: I've tried Panko and went back to Old Faithful. Lou's - Bread Crumbs for Chicken, Meatballs, etc. 1. I make up a mixture of Italian Bread cubes dried hard in the Oven. Then made into crumbs. 4 cups 2. Add Corn Flakes made almost to crumbs. 1 cup 3. Add Rice Krispies made into crumbs. 1 cup 4. Add 4 tablespoons of flour. All the spices are add to this for whatever I'm making. For Breaded Chicken or Fingers, or meatballs. I add the following, to one cup of the Bread Crumb mix. 1 level teaspoon of Onion Powder 1 level teaspoon of Garlic Powder 3 level tablespoons of Parmesan Cheese. 1/4 teaspoon of Old Bay 1/4 teaspoon of Black Pepper 1 tablespoon of Parsley Flakes 1/2 teaspoon of salt, or to taste For meatballs I add some Chicken Stock with a beaten egg. Dampen the crumb mix and blend into the meat. Probably about 8 heaping Tablespoons of Chicken Stock ??? I mix about 1/3 Crunb Mix to the amount of meat used, This is by volume This is used for Chicken Stuffing also, along with nuked Celery and Onions,with Bread cubes added. LOU
