Lars mentioned Panko on the eggplant thread, and that reminded me that I've got a bag of it in the pantry. I had seen it mentioned, from time to time, on the CF but didn't have any particular recipe in mind when I bought it (just saw it on sale, so snapped it up). Then I promptly forgot I had it on the shelf.

So ... what can Panko be used for? Can it be used instead of (or mixed with) breadcrumbs for breading eggplant, turkey cutlets, etc? Other foods it's especially good or bad for? What's your favorite way to use it?
