It happened Again! ***Sourdough Starter

For the last 8 months or so I think I have started 5-6 SD Starters. All start out very well, with lots of bubbles and a nice increase. I take some out, feed it with more rye flour and spring water.

The starter is very active and follows the directions to a tee! Then something happens and it just dies usually when I begin to add white flour. So I bought some King Arthur flour, followed the directions and as soon as I started adding the KA flour my started died.

About a month ago I began another Starter and decided to just keep it rye flour as I thought maybe it was the white flour that was causing the problem The rye starter was going gangbusters and I've even used it in 2 bread doughs and it worked wonderfully. It was ready to be fed on Wednesday, so I took out about a quarter c. of starter, added rye flour and some spring water and put it all into a clean jar. Since then nothing, nada, zip.

I thought maybe there was no activity because we were finally getting some cooler temps. So I put the jar of starter in the microwave on Friday as this is the warmest spot in my kitchen. But today still nothing and there are no drafts or cold air any where near it.

It's dead again.

Why does it keep doing this?
