Adapting Bread Machine Recipes for non-Machine Baking

Hello,

I want to try this Rosemary Bread recipe, but it's for a bread machine. How do I make this by hand? I've made bread many times and am familiar with the basic method, but have never tried it with a "bread machine" recipe. There's probably a simple method of adapting bread machine recipes, right?

robin, I adapt non-bread machine recipes to use in the bread machine all the time, I've never found one that didn't turn out, so I don't see why it wouldn't work the other way around.

I'd mix all the wet ingredients, beat in the dry ones, then knead until it feels right, probably the obligatory 7-10 minutes. Let rise, knock down, shape, rise and bake. Although 350 is my "universal" temp I'd do bread at 375F for 25 or 30 minutes, depending on the shape of the loaf.

make sure your liquid ingredients are warm, but not too hot, so you don't kill the yeast. And no, I never proof today's yeast and I haven't experienced any problem, as long as the yeast isn't outdated.

Heck, you know my theory on bread. People have been baking it in one form or another for centuries in everything from fireplaces to the most expensive ovens, or on hoes over a fire. Toss everything in a bowl, mix, knead, rise, bake. It'll be good.

That recipe, BTW, looks really good, I think I might try that myself as soon as my loaf of high protein honey wheat is gone.

Hot Cross Buns and Greek Easter Bread come to mind, and Greek Easter Bread is a basic enriched Danish dough with anise flavoring or aniseed, and formed in a braid in a circle. #1. Find out how much the flour capacity is for your bread machine before using a non-bread machine recipe. For instance, my Zojirushi bread machines (V-20 and X-20) have a 5-cup capacity if I'm going to bake in it. The old Zojirushi S-15 had a 4-cup capacity. If I'm only use it to mix/knead the dough, I can use a larger amount of flour for a recipe - BUT - I take the dough out of the bread machine as soon as kneading is complete and proof it in a dough-rising bucket - NOT the bread machine. 2. As chas045 pointed out, check your dough. Check the condition of the dough during the first 5 minutes of kneading and adjust it for hydration at that time by adding more flour or adding more liquid - whatever is necessary - if the dough doesn't form a soft tacky ball. The amount of flour necessary for any bread recipe is just a good (or bad) guess. If the recipe called for high-gluten bread flour, and you used all-purpose flour, it would take more all-purpose flour (or less liquid) because of the lower gluten (protein) content in all-purpose flour. Gluten soaks hydration like a sponge, so you have to adjust to those differences if you switch from one flour type to another. 3. Do a search on-line for a bread machine recipe for "Easter bread" and try to locate one that is similar to what you are wanting to make and one that will work in your bread machine. The yogurt shouldn't be a problem reacting with yeast. Yeast actually works best in a mildly acidic environment, which is why ascorbic acid is often mixed with dry yeast products. To improve the rise of breads containing wheat germ and whole wheat flour (which contains wheat germ), I always add an acid ingredient to counteract the gluten-damaging effects of glutathione in the wheat germ. Bacteria (in yogurt and also present in bread dough made without yogurt) produces those tasty acids in bread dough that improve the flavors of bread when we refrigerate it. The acidity already present in sourdough starters help sourdough breads keep longer, inhibit mold growth and also slows staling, and you'll see the same qualities in breads made with yogurt. -Grainlady

What the heck - while I'm sharing, I'll give you a couple more: PATÂS ORANGE PECAN ROLLS FOR ABM Dough: 1 cup milk 1/2 cup butter, melted 1/4 cup sugar 2 eggs 3/4 tsp. salt 4 cups all-purpose flour 2-1/2 tsp. active dry yeast Filling: 1 cup cream cheese (two 8 oz. pkgs.), softened 1/2 cup orange marmalade 1 Tblsp. finely grated orange zest 1-1/2 Tblsp. sugar 1 cup chopped pecans Glaze: ConfectionersÂ sugar Half-and-half Vanilla Place all ingredients in your bread machine in the order recommended and use the dough cycle. (Made in 1-1/2 lb. Machine). Remove the dough from the machine when cycle is complete. Roll dough out on a well-floured board. Spread filling over dough. Roll dough up and slice. Place slices on a greased cookie sheet (or use Silpat). Allow to rise 30 minutes in a warm place. Bake in a preheated 350Â° F. oven for about 18 to 20 minutes. Make a glaze of confectionersÂ sugar, half-and-half, and vanilla. Ice rolls while still warm. Enjoy! PATÂS PECAN STICKY BUNS FOR ABM Dough: 1 cup milk 1/2 cup butter, melted 1/4 cup sugar 2 eggs 3/4 tsp. salt 4 cups all-purpose flour 2-1/2 tsp. active dry yeast Filling: 1/2 cup butter, softened 1-1/2 tsp. ground cinnamon 1/2 cup light brown sugar, packed Topping: 1/4 cup butter, melted 1/2 cup brown sugar 1/4 cup light corn syrup Chopped pecans Heat butter, brown sugar and corn syrup, stirring until sugar is dissolved. Pour into greased pan. Sprinkle pan with pecans. Place all ingredients in bread machine in the order recommended and use the dough cycle. (Made in 1-1/2 lb. Machine). Remove the dough from the machine when cycle is complete. Roll dough out on a well-floured board. Spread softened butter evenly over rolled dough. Combine brown sugar and cinnamon. Sprinkle evenly over butter. Roll dough up. Prepare Topping and place in greased pan. Sliced rolls and place over topping in pan. Allow to rise 30 minutes in a warm place. Bake in a preheated 350Â° F. oven for about 18 Â 20 minutes. After removing from oven, allow to sit for approximately five minutes in pan. Invert pan over large cookie sheet that is lined with either Silpat or parchment paper. Leave pan on top of rolls for a few minutes to allow all pecans to drip onto rolls. Remove pan and enjoy!

OK, so if I wanted to make it without using a bread machine (I don't have one). Tell me if this sounds right. Mix dry ingredients. Pour in yeast and water. Knead for 5 minutes in stand mixer. Put in greased bowl. Let it rise until doubled in size. Punch it down and shape it into a loaf pan. Let it rise until it's crowing over the top of the pan? I have some rye sitting in the freezer that I used for a sourdough starter so I guess I could grind a 1/2 cup of that for rye flour.

One more question - for bread, should I use standard bake or convection?

robin, I always use standard bake, only because I don't have convection and have never used it. Sorry, I'm not much help on that but I do all my bread in my "standard" gas oven, LOL.

Just yesterday I adapted a recipe that instructed to put all the ingredients into a bread machine for the mixing and kneading, but then forming the buns and baking outside of the machine. I wanted to make the buns, but don't have a bread machine. I used my Kitchenaid to mix and knead the dough instead, (I ran it for 5 minutes) and htey turned out just fine. It was for the Honey Wheat Sandwich Rolls, that's so popular on this forum.

And I used a bread machine mix for that rye bread a couple of weeks ago....delicious and certainly easy.

The bread is out of the oven and looks mighty tasty. It smells great - all the fresh basked rosemary, yum!

We'll see how it tastes - it's been a while since I've done this. I let it rise, punched it down, let it rise again then baked.

Looks perfect! I will have to try it sometime. A lot of times I will dump all the ingredients in my bread machine, but do the final shaping and baking in my normal oven.
