Apple cake for birthday cake

Hello folks, we are celebrating my son's birthday on Saturday, and he was thinking of having some type of apple cake for his birthday cake.

LindaC, would your apple cake recipe be good to serve as a birthday cake with the cake gravy? And if I want it to serve at least 16 people, should I double it?

(Annie's was more of a breakfast coffee cake when I made it, so I'm looking for something a bit different for this.)

My son recently made a caramel apple bundt cake for our church coffee hour - folks liked it, but I thought it was really oily, so I don't want that one.

He found a recipe for Sourdough Applesauce Cake on the Taste of Home website (he likes to make taste of home stuff) but it calls for sourdough starter, and we don't have time to get into that.

(He also found a recipe for pumpkin ice cream we're about to make, so I hope that is good!)

Thanks for any apple birthday cake suggestions that will serve at least 16 people.

My apple cake with the gravy, because it is very heavy with apples is not good as a layer cake, doesn't cut well and with 4 cups of apples, it's heavy!. But it is spectacular as a 9 by 12 cake....with gravy on each square....passed warm in a pitcher....with maybe a small scoop of vanilla ice cream....and the "gravy" over the top.
You can probably cut 16 pieces out of one cake....but....it's also very good for breakfast!!

I have used this one for a layered birthday cake....with a caramel frosting...or maybe a burnt sugar....I forget. I cut back a little on the nutmeg....I think 1 tsp is a bit much and for a layer cake, that recipe makes 2 8 inch layers. And I always use my own applesauce. When I am making applesauce, I reserve a cup and make this cake.

Cake, Applesauce, mine
1 egg beaten
1/2 cup shorteningÃ¯Â¿Â½I use butter
1 cup of sugar
1 cup cold unsweetened applesauce
1 3/4 cups AP flour
1 tsp soda
3/4 tsps salt
1 tsp nutmeg
1 1/2 tsps cinnamon
1/4 tsp powdered cloves
1 tsp vanilla
1 cup raisins and nuts cut upÃ¯Â¿Â½optional

Sift together, flour soda, salt and spices
Cream shortening, beat in sugar, beat in the egg
and the applesauce and vanillaÃ¯Â¿Â½.add the flour etc
and pour into a greased 8 Ã¯Â¿Â½ by 11 pan and bake at 350 for 45 to 60 minutesÃ¯Â¿Â½.until a pick inserted in the center comes out clean.

Thanks. I think I'll try the applesauce cake, but maybe double it for 2 9x12 layers. I'll have to make the applesauce first; I'll keep it on the chunky side. Why does the applesauce have to be cold - so it doesn't cook the egg or so it's thicker? He can't have nuts & he's not a big fan of raisins, so hopefully it's still good without either of those additions. I actually asked about a recipe for caramel frosting here a year or 2 ago - it was my 1st post - hopefully I can find it!

Is this the one you mean: Apple Stack Cake 6 cups all-purpose flour 1/2 teaspoon baking soda 2 teaspoons baking powder 1 teaspoon salt 2 teaspoons ground ginger 1/2 teaspoon ground cinnamon 3/4 cup shortening 1 cup sugar 1 cup molasses 3 eggs 1 teaspoon vanilla 1/2 cup buttermilk Sift together flour, soda, baking powder, salt, ginger and cinnamon. Cream shortening and sugar; add molasses and mix well. Beat in eggs, one at a time. Stir in vanilla. Add buttermilk alternately with flour, mixing well. Place dough on floured surface. Work in enough flour to make it easy to handle, but not stiff. Divide dough into 9 portions; shape into balls. Place 1 ball in greased 9-inch round pan. Press dough with hand evenly over bottom of pan. Bake at 350 degrees 15 to 18 minutes or until lightly browned. Cool slightly before removing from the pan. Continue the same process for each ball of dough. Same pans may be used again but grease each time. Stack layers with apple filling (below). Store cake in airtight container or wrap at least over night to for best flavor and moisture. Cake freezes well. Filling 1 pound dried apples 1 cup brown sugar 1/2 cup granulated sugar 2 teaspoons cinnamon Wash and cook apples in water until tender. Drain then mash well; mix with sugars and cinnamon. Fruit cobbler is another one that can be very low in calories and fat. Mixed berries or other fruits (or her favorite one) sweetened, only if necessary, with a bit of Splenda or real sugar (or a combination). Make a topping from oatmeal, canola oil, cinnamon and just a little sweetener. I like to use real brown sugar for the "caramel" taste, but just a little. Drain the berries really well, especially if you use Splenda as it won't thicken as much as regular sugar. Yummy and only a tiny bit of "guilt". I love the Angel Food idea too. Even a store bought or homemade full sugar version of Angel Food isn't all that bad compared to other cakes. Top with the fresh fruit and light whipped topping. I keep a "can" of whipped cream in the fridge for quick indulgences now and then (I've been on Weight Watchers for 18 months now). I think it's wonderful that you respect HER goals. Thanks! I actually just found something like this in The Passionate Vegetarian. I do have a similar recipe that I have tried , but it used boiling water poured over the top of the other mixed ingredients and not stirred. That comes out like a pudding with cake on top so I was unsure of this recipe. Is it like a basic cake so I can frost and decorate it? Duh! I just read back over barnmom's post and she said she used it as a layer cake. The recipe in "TPV" uses 2/3 cup cocoa and 1/2 cup oil, but maybe I'll use the 3/4 cup cocoa. The recipe also suggests apple cider vinegar or lemon juice, do you always use white vinegar? I may have to do this early tomorrow instead of today. They already have severe thunderstorm warnings out and are talking about isolated tornadoes, not the best baking weather. It is hard to check your cake if your hiding in the basement!

Jude, the Hot Milk Cake was what I used for my wedding cake, I love the stuff. Here's the recipe I used, both for cake and frosting. The frosting does not contain powdered sugar. Hot Milk Cake - Pixistix Old fashioned, simple, melts in your mouth! 4 eggs 2 cups sugar 2 1/4 cups flour 2 1/4 tsp. baking powder 1 tsp. vanilla 1 1/4 cups milk 1/2 cup (1 stick) butter Beat eggs and sugar well. Combine flour with bk. powder and add to egg mixture along with vanilla. Heat milk and butter together until butter melts; gradually add to batter, beating until well blended. Pour batter into a greased 9x13 pan. Bake at 350 for 30 to 35 minutes. Topping fom the daughter of Cindy NY Brown Sugar Topping 1 cup packed light brown sugar 1/4 cup whipping cream 1 T unsalted butter 3/4 tsp vanilla 1/2 cup chopped pecans Combine the brown sugar, whipping cream & butter in a saucepan. Bring to a boil, whisking constantly until smooth. Remove from heat. Stir in the vanilla. Let stand 10 minutes. Whisk until of spreading consistency. Stir in the pecans. Spread over the brownies or cake. Let stand 1 hour or until set. Serve cold or at room temperature. Makes enough for an 8x8 pan.
