Halloween party tonight and I am making....Caramel Cheetos!

I remember these from last fall when LindaC posted the recipe, Both the kids and grownups just loved them so they will be the prominent snack tonight at our friends halloween party! Here's the recipe for anyone who missed it last year....

Caramel CheetosÂ®

2 cups light brown sugar

1 cup margarine - yes, for this one you must use margarine

1/2 cup light corn syrup

1/2 tsp. baking soda

1 - 21 oz. pkg. CheetosÂ® - crunchy kind

Mix sugar, margarine and corn syrup in pan. Bring to a boil. Boil 5 minutes, stirring often. Remove from heat and add soda. Stir until light in color and foamy. Spray a roasting pan (deep 10 x 14) with Pam. Put CheetosÂ® in pan. Pour the mixture over CheetosÂ® and stir, coating each piece. Place in oven at 250 degrees. Bake for 1 hour stirring every 15 minutes. Immediately, pour onto wax paper, or cookie sheets, sprayed with Pam. (This is the hard part.) VERY QUICKLY spread out as thin as possible. If not quick and spread out as thin as possible, you will get a big hard glob. After about 5 minutes, pull/break these apart even more and loosen them from the wax paper. If you don't, you'll have wax paper stuck to them when you go to eat them.

You will regret it if you don't double the batch as guests are going to demand MORE! You can bake batches together and add an extra 20 minutes to bake time. I do them separately because of having to work so quickly to keep them apart at the end. The one batch can almost get too hard while working with the other batch.

Well, I've been watching a lot of Food Network this morning and they seem to be making lots of dishes with garlic. Since it's so close to Halloween I wondered how the whole garlic and vampire thing came into being. Some people believe that the association of garlic warding off vampires has to do with bug or animal bites. One is rabies. You can get rabies from any animal bite from an animal that has rabies. Remember Cujo (Stephen King) getting rabies from the bat? Anyway, I guess if you have rabies you become fixated on certain scents. One of them being garlic. Another theory is that of mosquito bites. Since mosquitos suck blood, they fly and can be warded off be garlic, it's not a difficult jump to vampires (if you have a vivid imagination.) Anyway, here's a little more info! No clue, but I don't care for them either. Maybe because I don't really like cheetos? Yeah, I know, my kids tell me I'm subversive, perhaps communist, EVERYONE likes cheetos. And pizza. And chocolate chip cookies. Except me. I'm odd.... FOAS, I also like nuts, but not in things. I'll eat walnuts, but not in chocolate fudge and I pick the almonds off the top of Almond Joy and eat those first, then the candy bar. Weird. Subversive. Perhaps communist..... Annie

I just made a batch - they are addictive little things aren't they. And don't chew on the side with the loose filing!! I got three tubs of them - one goes next door tonight for dinner, the other for Christmas Eve with the kids, and one for me. I used margarine - only because I tend to actually follow a recipe the first time. I imagine butter would work as well, since that's what I usually (once before) make carmel with. I mixed it in a big pot and used two cookie sheets with thay non-stick aluminum foil. I took them out every 15 minutes and turned the Cheetos over with two spatulas. When they were done, I took one pan out and put half on one of my many "spare" cookie sheets and spread them out. I put the rest back in the oven. That way they didn't cool off too fast. Once one cookie sheet was done - I took the two sheets cooling out onto the porch - it's cold out today and broke apart any that were still sticking together. I did the same for the second sheet in the oven, it worked well. Now, every cookie sheet I own is dirty - but not to worry, my 36" single bowl farm sink holds them all lying flat. They'll be clean and dry in a jiffy. I knew I got that sink for some reason! Have a wonderful Christmas.

UPDATE: I was at very large youth sports complex Saturday and Sunday. When I check in Saturday AM I offered the tournament director some CC's. Sunday he came looking for me, when he approached me I thought perhaps he didn't receive the entry fee I sent he. He finally found me, asked if I had any more CC's. I said I did in my car; he said he would walk me to my car (far away in a big parking lot). I made a bag full, he was happy and he said he was going to dangle the bag in front of the UIC (umpire in chief) because he loved them too. I asked if going forward I could pay our tournament fee ($400) in CC's? He said "Ms Cathy that's doable!".

Alexa what is your costume? Our party is next weekend and I am going to be Amy Winehouse. Scott - Joe Paterno, and Will - David the vampire (keifer sutherland's character in the original Lost Boys)...

What exactly are Cheetos? Don't laugh but I really have no clue when it comes to prepackaged snacks and I'm wondering what I can sub for them or if I should succumb and purchase them.

Cheetos were invented to torture health food nuts past the brink of insanity. Try as they might to block the craving for useless cheezy temptations Cheetos invades their pleasure cells causing a serotonin/dopamine cascade resulting in total addiction from just one orange dusted nibble. Even causual addicts can be spotted by the tell-tale orange coloring of their thumb and forefinger. Hopeless hardcore addicts may even sport an orange ring around their lips.

And the beauty of those which you coat with a hard caramel coating...it that you can eat them undetected....as the caramel seals in the orange coating.
They really are naughty....as if Cheetoes alone weren't bad enough....and caramel corn....but to marry the tow together? Oh! My!!
