I am finalizing what I may sell (wholesale) to a new gourmet shop/coffee shop in my town.

I will be doing muffins, perhaps shortbread and scones. I have my costs down pat and everything. I won't make lots of money, but it will be profitable, mostly because I can sell the scones prebaked and cut down on my time.

Here is the thing. She really wants savory scones. I took the sugar out of AnnT's recipe, and it works perfectly. I just don't think there is a great market for it. I made both gruyere/caramelized onion and cheddar/ caramelized onion scones. They were what I expected, but I wonder if people would buy savory scones (rosemary/ calamata olive is another I would try).

They don't sell soup, either.

Would you buy savory, or just stick to sweet varieties like choc chip, raisin, raspberry, etc?
