Ann T says "perfect every time."

Lou was disappointed.

Cooks Illustrated found that the breast skin crisped nicely, the rest of the skin not so much, and the breast meat overcooked by the time the dark meat was done. They ended up butterflying the turkey and setting it on top of dressing to roast. Supposedly this solved three problems: It cooked and browned evenly, the dressing got the turkey drippings which people miss when the bird isn't stuffed, and this absorption of the drippings reduced the smoke in the kitchen.

I'm interested in what Ann has to say about the uneven cooking, and if Lou could expand on exactly what was disappointing about this method. (Taste? Texture? Similar complaints to CI?)

And of course I'm interested in whatever anyone esle has to add. I'm seeing a turkey my the near future!
