We make steel cut Irish oats all the time.

I add vanilla and cinnamon in the mix while it's cooking.
You could add nuts(walnuts, pecans etc.); brown sugar, agave sweetener or honey.

Savory;
Top them with olive oil, flaky sea salt, cracked pepper and aged sharp cheddar, other suggestions as well, such as using Parmigiano Reggiano, an egg, or sauteed vegetables as toppings.
Aged Gouda, extra virgin olive oil and freshly ground black pepper is delicious!
I also tried a version with a pinch of truffle salt and butter; that gave me the idea to try sauteed chanterelle mushrooms as a topping. It was amazing, a bit like creamy mushroom risotto.
I've also tried using diced oil-packed sun-dried tomatoes and bacon bits, yummy.

My father puts those flavored creamers in his oatmeal:) Personally I think that kind of kills the simply goodness of oatmeal but to each his own. I always add dried fruit. Sounds good right now, a big bowl of oatmeal. Yum.

Maybe make some polenta, too, as a substrate for the savory toppings. i love both oatmeal and polenta.

I just like mine drizzled with some good grade b maple syrup, but Elery tops his with crumbled bacon and a shaving of parmesan. Mother add's yogurt to hers, Dad liked brown sugar and raisins. Oddly enough, none of us add milk except my brother who uses a LOT of sugar and milk and stirs it in until it's thin and then dunks toast. When the toast is gone he gives the rest of the oatmeal to his cat, who loves the stuff!

I like brown sugar mixed with mine. Sometimes, I'll just add a splash of milk with diced peaches and a little sugar and cinnamon. Although, next time we have oatmeal (we have steel cut oats which tastes crunchy to me) I'm going to try it with vanilla and maybe a little nutmeg.

I added chunky applesauce to steel cut oats with raisins. It was a great combination. I would add chopped apple to my oatmeal but it's too much for just one and I don't know how to keep it from oxidizing. I always add cinnamon whatever fresh or dried fruit I have on hand.

Flavored applesauce, usually the kind that comes with no added sugar in small individual serving cups, get added to oatmeal at work. I bring a little plastic container with the oatmeal and some cinnamon, add water and heat in the microwave. Then I add the applesauce after the oatmeal is done.

Everyone always comments on how home-y our staff room becomes, with the scent of oatmeal and cinnamon in the air.

I like dried fruit cooked with my oatmeal: craisins, blueberries, apples, dates, currants, and apricots. Fresh apple is diced and cooked with the oatmeal along with some cinnamon. I put butter and sugar on my oatmeal as a kid, but find I don't like butter on it as an adult. I would put out some half n' half or heavy cream as a special treat. You could also fix some toasted pecans or walnuts as a topping.

Savory polenta sounds better to me than savory oatmeal.
