1 yeast bread - oatmeal and maple syrup

I tried making bread, my first yeast bread in my Bosch mixer, also new.

My issues seemed to be, after adding the last couple cups of flour prior to the 10 minutes of kneading it still seemed pretty sticky. I added a few tbls more but not much effect. Most of it had separated from the bowl.....it was hard to tell, was still pretty stuck to the middle thing but I didn't want to add too much flour.

I was letting it rise in the mixer bowl the second time when I realized halfway through I was supposed to let it rise in the loaf pans - so then it took another whole twice as long to rise to almost the top of the pan (was supposed to rise to the top per instructions). Generally it didn't seem to want to rise much either resting/rise time but what do I know?

The book said light brown which it is on the bottom but the top is pretty brown.

The inside texture now that I've tried it seems a little gummy? Slightly rubbery? Could it be a little underdone? I tried the thumpy hollow thing but I would think that works better with heavier crust/holier breads? but yes it does sound sort of hollow.

Seems ok but I don't know if its what its supposed to be or as good as its supposed to be.

This is out of Bernard Clayton's New Complete Book of bread.

Just FYI its a bit sweet which I imagine its supposed to be with the maple syrup. It says its good for toast and freezing. I though the oatmeal would be good for heart health since I don't like regular oatmeal.
