Since light cream can be up to 30% fat, I would use 2/3 cream and 1/3 milk. Actually, if I were making it myself, I would decrease the milk even more, since milk upsets me more than cream. I made strawberry ice cream Tuesday using a recipe that called for light cream, and I substituted all heavy cream. I took some to work because I can't eat all of it, and I thought DB didn't want it, but then after he had some yesterday, he decided it was very good. For myself, the most milk I would put it would be about 1/8 portion. I haven't noticed a problem with using all heavy cream, except that it did get very fluffy and I was afraid it would going to climb out of my ice cream machine, and so I ate little bits of it as it was going along. The worst thing that will happen is you will have excess volume, and you might want to make sure your ice cream maker will handle it. Everyone at work loved it. Lars

I have never heard of Blue Bell until now, but its not available in California, darn :-( Sure sounds good ! My hubby loves Ice Cream, but I never buy it for myself, I do enjoy a cone from McDonalds once in awhile though and if we had a speciality Ice Cream Place I would probably like it, like 31 flavors. A few months ago they started putting in a Cold Stone shop, got it half built and we got excited about it, and then they just stopped , left and put in a small subway :-(

I haven't seen a Good Humor truck in ages. I'd guess there are several reasons. One being that we now live in the era of "Be Afraid. Be Very Afraid" that keeps kids indoors lest the boogie man get 'em. (There are no more pedophiles now than ever, IMO.) Gas prices are probably another reason. And...all the mothers are at work during daylight hours when the truck would circulate through a neighborhood. The last Good Humor truck I recall seeing regularly was parked at an intersection between two forest preserves west of Winnetka (Illinois). HIkers and bikers would stop for an ice cream. marita -- Oh, ick, the wooden paddle! Kids who brought their lunches could buy a carton of milk and one of those cups at my grammar school. (Back when mothers were home all day, and most kids went home for lunch.)

I'm inclined to wonder what use one would have for more than two - one for each hand? I think that I may have one ... somewhere ... ... but usually just use a (table)spoon ... and, since I live alone, dig it straight from the container. Many manufacturers have been shrinking the size of ice cream containers ... as have those who make yogurt ... cookies ... and other stuff. The other day, when the price of one of the 1.66 litre ... or 1.5 litre ... kinds were an even better price per litre than the Chapman's, that have continued with the 2 litre containers ... I wouldn't buy it, cause I don't like their shrinkage game. Made a mistake, though: didn't call my choice to the store manager's attention.
