Kitchen Renovation & out of level floors

We are planning on renovating the kitchen of our 1928 craftsman. But (isnÂt there always a "but" in renovating older homes?) the main beam of the house has settled causing the floor to be out of level about ¾" over 12 feet. It is interesting that the only place this is really noticeable is in the kitchen. We are planning on installing new wood flooring over the pine subfloors,which cannot be salvaged/repaired.

Please share with me- how did you compensate for your out of level floors?

PS- I did pose this question on the flooring board, but that board seems to be very slow.
