Old door issues (long and pic heavy)

I recently hired a team of two painters to paint our stairwell and a couple of doors off the landing at the top of the stairs. The doors are original to our 1926 house. The two doors that were painted have bubbled in a way I've not seen before. My instinct tells me that it is a moisture issue.

We were out of town when the work was done, and by the time we got home the day after they finished, the doors were already bubbling. I can tell you that we have painted other original doors in the house and had no problem whatsoever (using the same latex paint). The doors were originally stained but have been painted over many times before we bought the house. The painters have offered to fix the doors for us since it happened "on their watch" and one of the painters (who is also a carpenter) says he has lots of experience with this type of repair and has seen it many times. He says the veneer on the inset panel has separated and that it needs to routed out, sanded, and repainted. He offered that pehaps it was caused by humidity (though no other doors inthe house did this). We're inclined to let them do the repair because we don't have the tools to do it but I'm wondering if they did something to cause the damage in the first place. It makes me a little sad to think that we could never refinish these doors back to the original after the repair is done, but in all reality that might never happen, anyway. I guess my main questions are: Have any of you seen this happen to a door before? What causes it? Should the doors be repaired or replaced? If repaired, does his description of the repair sound kosher?
