Yum. One of my favorite ginger recipes came from my mother. She won the chicken portion of a BBQ contest with this recipe. My kids and DH enjoy it, too. GINGERED BARBEQUED CHICKEN BREASTS from Mom 1/2 C. ketchup 3 T. worcestershire sauce 2 T. peanut oil 1 T. honey 1-1/2 t. grated fresh ginger 1/2 t. dry mustard 1/2 t. chili powder 3 chicken breasts, approximately 1 pound She used the recipe as a BBQ sauce for chicken cooked on the grill. If baking in an oven: Preheat oven to 350 degrees. Wisk all the ingredients together. Season chicken with salt and pepper. Brush half the sauce on top of the chicken. Bake for 20 minutes. Brush remaining ingredients, bake for 20 more minutes. I'm looking forward to trying some of the other recipes here, too. The first one I cut and pasted was the Japanese Chicken Noodle Bowl. Sounds like something I would love but only have had in a restaurant. I mixed the gingerale with a bottled marinade and it was easy peasy and didn't taste overwhelmingly spicey, (or believe me, my dad would NOT have eaten it when I fixed it). I am another person who prefers gingerale to all other soft drinks. People know when I'm around they need to get gingerale--it's what I mostly drink. Nowdays I have to do diet gingerale. Here are two appetizer recipes I found while rummaging around my recipe box for something to serve. I am having so much trouble coming up with a dinner menu. Fish or any type of seafood is the logical choice to go with ginger carrot soup, but BF doesn't do fish. I may try Kari's mom's marinade on chicken drumsticks. Gingered Crostini and Pepper Spread (I got this out of some healthy living flyer from my health insurance company ages ago) 1/2 TBLSP olive oil (1.5 tsps.) 1 small jalepeno pepper, minced 1 tsp. mustard seeds 1 oz. package dried tomatoes or 12 dried tomatoes halves chopped 1/2 cup water 2 roasted red bell peppers, chopped 3 TBLSP chopped fresh basil or 1.5 tsp. dried basil 2 TBLSP fresh parsley (I think cilantro would be fab with this) Minced fresh ginger salt and pepper to taste Toast mustard seeds in oil until they pop. Add jalepeno, dried tomatoes and water. Cover and cook until tomatoes are plump. Remove from heat. In a food processor, process roasted pepper to rough puree. Add tomato mixture, process until smooth. Add seasonings. Crostini: preheat oven to 375. Cut 24 slices rustic style bread or baguette. Sprinkle with minced ginger root and parsley. Drizzle with olive oil Bake 8-10 min. Orange Hummus (I think this comes from the cookbook "Enchanted Broccoli Forest" by Mollie Katzen) 3 cups cooked chickpeas 1/2 cup orange juice 1/4 cup tahini 1 1/2 - 1 3/4 tsp. salt (optional) 1-2 TBLSP cider vinegar 3 med. cloves garlic, crushed 1-2 tsp. tamari sauce 1/4 tsp. each: cumin, corriander, ginger, dry mustard, tumeric, paprika Combine all ingredients together in a food processor and process until smooth. -------------------------------------------------------------------------------- RE: Cookalong #1 --- GINGER clip this post email this post what is this? see most clipped and recent clippings Posted by ruthanna (My Page) on Fri, Jan 23, 09 at 14:35 There's a brunch dish that I've wanted to try for years - "Indian Scrambled Eggs with Fragrant Rice and Minted Tomato Sauce" and I think this thread has inspired me to make it next weekend. There's onions and fresh ginger in the sauce, lentils and curry powder in the rice, and ginger and scallions in the eggs, plus many other spices. It will either be fantastic or disastrous so I'll wait to post the recipe in case it's the latter. A ginger recipe I use often is one posted in 2001 by Linda in Tennessee for a Japanese steakhouse - type ginger salad dressing. I like ginger dressing and it's the best I've tried. BENIHANA GINGER SALAD DRESSING 1/2 cup minced onion 1/2 cup peanut oil 1/3 cup rice vinegar 2 Tbs. water 2 Tbs. minced fresh ginger 2 Tbs. minced celery 2 Tbs. ketchup 4 tsp. soy sauce 2 tsp. sugar 2 tsp. lemon juice 1/2 tsp. minced garlic 1/2 tsp. salt 1/4 tsp. pepper Combine all ingredients in a blender. Blend on high speed for about 1 minute or until all of the ingredients are well pureed. These beans from Mollie Katzen's "Vegetable Heaven" have the flavor of Jamaican spice mixtures and can be made with either dried or canned beans. We eat this as a main dish rather than a side dish. FIRECRACKER RED BEANS (6-8 servings) 2 Tbs. olive oil 3 cups finely minced onions 2 Tbs. minced fresh ginger 2 tsp. fennel seeds 2 Tbs. minced garlic 1/2 tsp. allspice 1 tsp. dried thyme 1 1/2 to 2 tsp. salt 1 cup dry sherry 2 Tbs. prepared mustard 1/4 cup ketchup 1 tsp. minced chipotle chiles 1 cup water 1/4 cup almond butter 2 Tbs. brown sugar 1/2 cup boiling water About 6 cups cooked small red beans or kidney beans (3 or 4 15-ounce cans, rinsed and drained) Wedges of lime Heat the oil in a large, deep skillet or Dutch oven over med-high heat. Add the onion, ginger, and fennel seeds, and saute for about 5-10 minutes. Turn the heat down to medium, add the garlic, allspice, thyme and 1 1/2 tsp. salt. Cover and cook over medium-low heat for about 3 minutes. Stir in sherry, mustard, ketchup, chipotles and 1 cup water. Cover and cook for another 10 minutes. Place the almond butter and brown sugar in a small bowl. Add the boiling water and mash with a spoon until it becomes a uniform mixture. Stir this into the sauce and cook uncovered over low heat for about 5 minutes. Preheat the oven to 325 degrees. Place the beans in a 9 X 13 inch baking dish or equivalent casseerole, and pour in all the sauce. Cover with tight-fitting lid or foil and bake for 1 hour. Remove the pan from the oven and let it sit for about 15 to 20 minutes, still tightly covered, so the beans can continue to absorb the liquid. I marinated it about 8 hours on one side and about 8 on the other. (I put it in before I went to bed and then turned it in the morning). As for a cooked marinade, yeah, I know that is controversial, but I boiled it for a good half hour to reduce it, so I didn't have a problem with it. To me, it was yummy. And me being mostly vegetarian, if I felt any hesitation about a meat product I would not serve it. I used a double sided fryer breast instead of the whole chicken. The only other change I made was to use 1/2 a star anise instead of a whole one. Even with a half, the anise flavor predominated so I would only use one pod next time. The ginger and garlic permeated the meat and the broth was not overpowering, despite having so many strong flavors. Sides were plain white rice with toasted pecans and fresh spinach sauteed in sesame oil and dressed with rice wine, lemon juice, and light soy sauce (recipe from the same book). It was a nice light ginger-accented meal and the taste was definitely better than my photography. LOL CHINATOWN SOY SAUCE CHICKEN 1 star anise 3/4 cup soy sauce 1/3 cup packed dark brown sugar 1/4 cup dry sherry 1 Tbs. honey 3 cloves garlic, minced 3 slices fresh ginger, smashed 1 chicken (3 1/2 to 4 lbs.), well rinsed and patted dry In a nonreactive pot large enough to hold the chicken snugly, gently boil 1 cup water and the star anise, covered, for 20 minutes. Remove and discard the star anise. In a small bowl, mix the rest of the ingredients except the chicken, and add the mixture to the pot. Cover and bring to a boil; then reduce heat, cover and simmer for 5 minutes. Add the chicken, laying it on its side, and bring the liquid back to a boil. Cover and turn the heat to low. Simmer, basting frequently, for 15 minutes. Turn the chicken to the other side and simmer, basting frequently, for another 15 minutes. Turn once more, this time breast side up, and cook until golden brown, 15 minutes more. Remove the chicken and let cool to room temperature. Strain and reheat the cooking liquid and serve a drizzle over the carved chicken. Most people here know to always check, and not go by the time in recipes, but not everyone is equally experienced. Tone of voice is missing in posts, so what sounded good-natured in my mind may have struck others differently. HERB CRUSTED CHICKEN PAILLARD WITH HONEY- LEMON GRASS GLAZE Ming Tsai 6 (6-ounce) chicken breasts skin-on (2 for leftovers) 1/2 cup chopped flat parsley 1/4 cup chopped cilantro 6 scallions, sliced 1/8-inch Salt and black pepper to taste Canola oil to cook Wrap the chicken in plastic and pound very thin. Season with salt and pepper. Mix the herbs together on a plate and dredge the chicken with the herbs. In a hot skillet coated with oil, pan sear the chicken golden brown on both sides, about 3 minutes a side. HONEY-LEMON GRASS GLAZE: Canola oil to cook 6 lemon grass stalks, finely minced, white part only 1 tablespoon minced ginger 1 large shallot, minced 1/2 cup Riesling or Gewurztraminer wine Juice and zest of 1 lemon 2 cups chicken stock 2 tablespoons lychee honey 1 tablespoon butter Salt and black pepper to taste In a medium-hot, non-reactive sauce pan, lightly coat the pan and sautee the lemongrass, ginger and shallots until soft, about 5 minutes. Season with salt and pepper. Deglaze with wine and reduce by 80 percent. Add the juice, stock and honey and reduce by 50 percent. Whisk in the butter and check for seasoning. Puree with a hand blender to a smooth consistency. CARROT AND POTATO SPAGHETTI: 2 large carrots, peeled, cut into spirals with a turning slicer 1 large potato, peeled, cut into spirals with a turning slicer 1/2 teaspoon ground cumin 2 tablespoons butter Salt to taste In a large non-stick skillet, add butter and melt on medium-low heat. Add carrots and potato and sautee. Season with cumin and salt. Cook until soft, about 10 minutes. Keep heat on medium-low or the potatoes could burn. PLATING Place a small pile of the 'spaghetti'. Hide with chicken paillard and glaze the top with the sauce. Garnish with lemon zest. I think I'll make my version of Teriyaki Chicken and stir fried vegetables, using Marilyn's Gourmet Sauce with fresh ginger for the teriyaki. It's a really delicious dish. I had it once in Canada at a restaurant and had to make a copycat recipe so this is it: Teriyaki Chicken & Stir Fried Vegetables over Rice For 3 servings..... Ingredients:....quantities are variable 1 lb chicken breast cut into bite-sized strips 3/4 cup green bell pepper - finely chopped 3/4 cup red bell pepper - finely chopped 1/2 cup white part of spring onion bulb - sliced finely 1/2 cup grated carrot (optional) 1/2 cup frozen peas 1 cup fresh or frozen heads of broccoli sliced & chopped 1/4 cup teriyaki sauce for marinade plus more for drizzle over when serving basmati rice - 3 cups cooked (200 grams raw) or 1 cup cooked rice per person 3/4 cup sliced green stalk rings of spring onion - for garnish only olive oil for cooking salt & pepper 1. Put 1/2 cup Teriyaki sauce in a small glass bowl and put in chicken pieces to marinate for 30 to 60 minutes. Turn pieces and spoon over sauce from time to time. 2. Chop and prepare vegetables, putting all except green onion rings into a bowl. Put 2 TBS olive oil into a large non-stick frying pan or wok over medium heat and when hot, add the vegetables from the bowl. Stir constantly with wooden spoon until they are cooked enough but not overdone....10 to 12 minutes. Add more oil as needed. Turn off heat and put lid on pan to keep warm. 3. Put water on for cooking the rice. 4. When chicken has marinated, drain and reserve half the marinade, putting the other half of it together with the chicken into a second non-stick frying pan and cook, reducing the liquid and browning chicken pieces, about 10 minutes. Then add the reserved marinade, cooking for a couple minutes more until it has formed a reduced syrup around the chicken. Drain cooked rice, add butter or oil, season to taste with salt & pepper. 5. Spoon chicken and sauce over vegetables, stir and season with S & P. Serve over rice, drizzle with more Teriyaki sauce and garnish with green spring onion rings. David -------------------------------------------------------------------------------- RE: Cookalong #1 --- GINGER clip this post email this post what is this? see most clipped and recent clippings Posted by lpinkmountain (My Page) on Wed, Jan 28, 09 at 8:32 Here's the tagine recipe (which I will probably make either in my crockpot of roast in the oven) Pearl Couscous Tagine (from Mark Bittman's "How To Cook Everything Vegetarian" cookbook) 2 TBLSP extra virgin olive oil 1 onion chopped (I'll probably use red for color) 2 cloves garlic minced One 1 inch piece of ginger, peeled and minced 1 1/2 tsp. ground cumin 2 tsp. ground tumeric Two three inch cinnamon sticks 1/3 cup chopped dried apricots, dates or raisins 1 1/2 cups chopped ripe tomato (about 1 pound whole, preferably peeled and seeded, or drained canned ones) 2 cups vegetable stock 1 cup cooked canned chickpeas 2 med. carrots, peeled and cut into bit sized chunks 1/2 head cauliflower, cut into bite sized chunks 2 zuchinni, cut into bite sized chunks (I'll probably use yellow summer squash, for the color) Salt and freshly ground black pepper to taste 1 cup pearl couscous Note: I'm also probably going to add peeled and diced butternut squash. Put oil in a deep skillet with a lid over med. high heat. Add the onion and cook until it softens, about 5 min. Add the garlic, ginger, and other spices; cook, stirring often until fragrant, about 2 min. Add the dried fruit, tomato, stock, chickpeas, carrots, cauliflower, zucchini, etc., and a large pinch of salt and a good amount of pepper. Bring to a boil. Reduce the heat to a gentle simmer, cover and cook until the vegetables are just tender. (The dish can be made ahead to this point, cooled, covered and refrigerated for up to 2 days. Bring it to a simmer before proceeding.) Add the couscous and cook until al dente about 10 min. It should have a stewy consistency. Taste and adjust the seasoning. Serve hot or store, covered in the fridge for up to 3 days and then reheat. Notes: sounds like this is like most pasta dishes--tastes best the next day. Since I'm serving this with pasta, I am not going to add the couscous and all that broth--I'll do mine in the crockpot or roast in the oven. Ginger Vinagrette (from the same cookbook) 1/2 cup extra virgin olive oil 1 inch piece of ginger, peeled and roughly chopped in a blender 1 TBLSP sherry vinegar (I will use rice wine vinegar) 1 TBLSP freshly squeezed lime juice 1 TBLSP water (I might use more sherry vinegar, as it is mild) Salt and freshly ground black pepper (Optional) 1 large shallot, minced (I might use some scallions I have languishing in the fridge) Note: with this vinagrette, I might add just a drop of honey for my taste. -------------------------------------------------------------------------------- RE: Cookalong #1 --- GINGER clip this post email this post what is this? see most clipped and recent clippings Posted by sally2 (My Page) on Wed, Jan 28, 09 at 10:37 I haven't had much time for the forum, lately, but the time I've spent here I've missed this thread until today. So does the couscous recipe. They all sound good, actually. I'll have to research and see, but I don't really have a T&T recipe featuring ginger that hasn't already been mentioned, like the carrot ginger soup and the gingerbread recipes. I might try to do something with tofu. Do y'all think one of the marinades posted above would work with tofu and grilled? I'm thinking of trying something like that. Gingered Spaghetti Squash Cut a spaghetti squash in half lengthwise and place face down in baking dish with a few tablespoons of water. Bake in 375 oven till strands are "al dente" (~45 minutes). Spoon strands out carefully and toss the hot squash with 2 TB butter, 1 TB honey and 1/2 TB minced ginger. I found this recipe in one of my cookbooks I just might try tonight, as I won't have time to do it on Saturday. It's from Vegetariana, by Nava Atlas. I'll let y'all know if it's a winner or not. Gingered Rice and Apple Stuffed Squash 2 medium acorn or butternut squashes 3/4 cup raw brown rice 2 tablespoons soy sauce or tamari 2 tablespoons butter 1 small onion, chopped 2 medium apples, peeled, cored, and slicd 1/3 cup chopped walnuts, almonds, or pecans 1/2 cup light cream or milk 1/4 cup dry red wine 2 tablespoons honey 2 teaspoons honey 2 teaspoons freshly grated ginger, more or less to taste 1 teaspoon good curry powder 1/2 teaspoon nutmeg 1 cup grated mild white cheese, optional Preheat the oven to 350 degrees F (180 C) Cut the squashes in half, place them cut side up on flat baking sheets, and cover them with aluminum foil. Bake for about 35 to 45 minutes, or until tender. In the meantime, cook the rice with the soy sauce added to the cooking water. (The cookbook doesn't indicate how much water, but it's usually 2 1/2 times the amount of rice, so this would be somewhere around 1 2/3 cups water for 3/4 cup rice???? I'd just follow the directions on the rice package.) When the squash is cool enough to handle, scoop out the pulp, leaving about a 1/2 inch (1 1/2 cm) shell of pulp all around. Chop the pulp and set aside. Heat the butter in a large skillet until it foams. Add the onion and saute over moderately low heat until it is translucent. Add the apple and saute until it softens, then add the squash pulp, cooked rice, and the remaining ingredients. Stir together and remove from the heat. Stuff teh squash halves with the rice mixture, arrange in lightly oiled baking dishes, and bake for 20 minutes. Makes 4 servings. Much easier than I expected! Traditional Hummus Cover 1 cup dried chickpeas with water and soak overnight. Drain and place in a sauce pan with 1/2 teaspoon salt and water to cover. Bring to a boil, lower the heat, and simmer until tender, about 1 hour. Drain and reserve the water. Place the chickpeas in a food processor with the juice of 2 lemons, 3 minced garlic cloves, and 2 or 3 tablespoons of the cooking liquid. Process until smooth. Add 1 tablespoon olive oil, 1/2 cup tahini, 1/2 teaspoon ground cumin, and salt & pepper. Process. Transfer to a bowl and sprinkle with 2 tablespoons chopped parsley. (I first drizzled some good olive oil over the top before sprinkling with the parsley.) Serve with toasted pita. You can substitute one 16-ounce can of chickpeas for the dried. Yield: about 1-1/2 cups. Cover and simmer about 2-1/2 hours or until the beans are tender, adding more water if necessary, and stirring occasionally. Remove ham bone; cut meat from bone and add to beans. Add sausage. While the Beans are cooking, cut up the bacon and chop the onion. Place both in a heavy skillet and over low heat sautee until the bacon is just starting to brown and the onion is cooked. Red Beans & Rice for Two 1/3 medium onion 1 stalk celery 1/2 bell pepper 1 tsp bacon fat, butter or oil 1 bay leaf salt & pepper 1 or 2 cups homemade stock (pork, chicken or beef) 1 can red beans 1 link andouille sausage, cooked and sliced 2/3 cup dry rice, prepared with 1-1/3 cups water Mince vegetables & saute in hot fat for a few minutes. Add stock & bay leaf. Boil until liquid is reduced to about 1/4 cup. Add sausage and undrained can of beans. Simmer together for 10 minutes or so. Meanwhile, prepare rice. Serve beans over rice. Stir in parsley, basil, pepper, tomatoes, spinach and chili sauce, simmer until spinach is wilted and soup is heated through. 8 servings ~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Navy Bean Soup From Food Network Kitchens 1 lb navy beans, picked over, rinsed and drained 10 sprigs parsley 2 sprigs fresh thyme 1 bay leaf 2 large smoked ham hocks, about 1-1/2 lb 1 medium onion, coarsely chopped 1 clove garlic, coarsely chopped 8 c cold water 1 medium carrot, coarsely chopped Kosher salt and fresh ground pepper Butter for garnish Place beans in a large saucepan and cover with cold water by about 2 inches. Bring to a boil and lower the heat to simmer. Cook for 5 minutes, remove from heat, cover and let sit for one hour. Drain and reserve. Tie parsley, thyme and bay leaf together with kitchen twine. In large soup pot or dutch oven, combine the beans, herb bundle, hocks, onions and garlic with the water. Bring to a boil, cover and adjust the heat so that the soup cooks at a gentle simmer. Cook until the beans and hocks are completely tender, about 1-1/2 hours. Turn off heat and remove hocks. Cool slightly. Remove meat from hocks, discarding the bones, fat and skin. Cut meat into small cubes. Remove herb bundle from soup and discard. Puree about 3 cups of the beans with some of the liquid in a blender. (For a smooth soup, you may puree all the beans). Stir the puree and diced meat into the soup. Heat the soup and adjust seasoning as needed with salt & pepper. Spray two 12 cup muffin tins with cooking spray. Cut each tortilla into 6 wedges, and push each wedge into muffin pan to form a cup. Layer approx. 1 tsp each of cheese, tomato, pepper, onions, beans, salsa and cheese in each cup. Cover loosely with foil and bake 5 minutes. I've been using this recipe for years: Red Beans & Rice 1 ham bone 1/2# ham, cubed 1# dried red beans 1 large onion, chopped 1 c. chopped green onions, tops & bottoms 1/4 c. chopped bell pepper 1/4 c. chopped parsley 1/2 t. basil 2 bay leaves 1/4 c. butter Salt & cayenne pepper to taste *I aways add lots of garlic to this recipe Put beans in a heavy pot w/ enough water to cover; bring to a rolling boil for a couple of minutes, then soak overnight in that same water. In the morning, bring to a boil again & add all the other ingredients. Reduce heat & simmer for at least 3 hours. The ham bone is important for flavor. Be sure beans are not old. They should become very creamy, but most will remain whole. Add cold water as needed. Goes well with smoked sausage & sliced raw onions. ***[Rice cooking instructions that I've never followed but including it because it's part of the orig recipe.] Serve over fluffy long grain rice cooked as follows. Bring 3 quarts of water to a rapid boil. Add salt, one tablespoon of oil and one of vinegar, and one cup of rice. Oil will keep water from boiling over and vinegar will let each grain of rice falls to itself. Reduce heat and simmer exactly 18 minutes. Drain in a colander, rinse off excess starch with cold water and steam in colander until well warmed again. This is a very good recipe, very much like the red beans & rice that I ate in NOLA. Pistou Soup makes 3 1/2 quarts 2 Tbsp butter 1 c chopped onion White part of 1 leek OR green onion, chopped 1 c 2-inch cut green beans 1 c shelled butter beans OR small lima beans 1 c peeled potatoes in 2-inch cubes 1 1/2 c peeled chopped tomatoes OR 1 c canned tomatoes, broken up 8 c chicken stock 1/2 c vermicelli, spaghetti or small pasta, broken into 1-inch pieces salt & pepper 2 Tbsp tomato puree 1/4 c olive OR salad oil 2 cloves garlic, minced 2 Tbsp chopped fresh basil 2 tsp chopped fresh thyme OR 1/2 tsp dried 1 c grated Parmesan chees Melt butter in large pot or skillet over medium heat. Saute onion & leek until tender. Add green beans, butter beans, potatoes, tomatoes with liquid, & chicken stock. Cover & bring to boil. Reduce heat & simmer 15 minutes. Add pasta & cook 15 minutes longer or until vegetables are tender. Season to taste with salt & pepper. Place tomato puree in bowl & whisk in oil, drop by drop. Add garlic, basil & thyme. Stir mixture into soup. (Soup may be made to this point several days in advance, frozen & reheated.) I eat beans almost every day, so every day is bean cookalong for me! What I'd like to make is hummus starting from scratch with dried garbanzo beans. I've only ever made it with canned before. I saved the hummus thread so that's where I'll get my recipe. Right now I've got two bowls of butterbean soup to finish, and then I'll probably make this soup out of my "Cucina Ebraica" cookbook by Joan Nathan. It is very, very similar to the other bean soups listed, and pretty typical of the kind I usually make, with the exception of adding the fake meat crumbles. Pasta e Fagioli alla Veneta - Venetian White Bean Soup with Pasta and Beef Sausage Serves 6 1 3/4 cups (~14 oz.) dried white or borlotti beans, picked over and rinsed. (I'll use canned canelinni beans this time) 4 TBLSP EVOO 2 onions, finely chopped 2 celery stalks, finely chopped 2 carrots, peeled and finely chopped 3/4 lb. freshly made or purchased fresh fettuccine, cut into maltagliati (irregular 1 1/2 inch pieces) (I bought tiny penne for this instead, dried. I can't afford fresh pasta and I don't make it.) About 2 cups meat broth (I'll use veggie broth) 1/2 lb. meat mixture for beef sausage, rolled into tiny meatballs. (You're on your own with this, I'll use 1/2 lb. fake meat crumbles or fake italian sausage cut up.) The mix Joan mentions included boneless beef shoulder, finely ground, 1/2 lb. beef kidney fat (whatever THAT IS), and lots of spices. Maybe chuck that and just buy some italian sausage and cut it up. Buy all beef if you want to stick to the original Jewish origins of this dish. Salt and freshly ground pepper to taste. Cook beans as you usually do for dried beans (in my case that means soaking in 2 times their volume of water overnight and then draining). Add fresh water to cover and bring to a boil. Meanwhile, sautee the onions, celery, and carrots in 4 TBLSP of olive oil until softened, about 10 min. Add to the beans and return to a boil. Cover and reduce heat and simmer until beans are tender, about 1 1/2 hours. If you're making this with canned beans, you can skip the cover with water and bring to a boil part, and just add the beans after you've sauteed the vegetables. Then add the vegetable broth to cover all the soup ingredients. Also, I would suggest adding 1 tsp. of italian seasoning unless you are using a spicy italian sausage in the soup. While the soup is simmering, bring a pot of water to a boil and cook the pasta. Also, scoop out half the bean mixture and puree when the beans are sofrt(I just run the hand blender for a couple of seconds until half the soup is pureed, or mash with a potato masher a bit). The recipe says bring the meat broth to a boil and cook the meatballs. If you're doing meatballs you're on your own as to how you make them, but they need to be the small ones. Add the meat broth and meatballs to the soup and simmer 10 more minutes for flavors to meld. (In my case it will be add the fake meat and some additional broth to cover.) At the very end, add the pasta and 2 cups chopped cooked swiss chard or curly endive to the soup. (Yeah right. I just toss in some frozen chopped spinach and cook until it is defrosted and heated through). Before serving, season with salt and pepper to taste. You can also use tubetti pasta in this soup. I couldn't find tubetti which is why I bought the tiny penne. The last recipe I'll share is from my friend Carolyn. I've been craving it, but I have a ton of other food to use up in the fridge so probably won't get to it this cookalong. But it is definately worth trying if you're up for something adventurous and want to expand your bean repertoire. Carolyns' kids are quite picky yet they like this, although they have been raised vegetarian so they love pasta. Definately for cilantro lovers though, that's what makes the dish. Carolyn's Yummy Sauce 1 can of white beans 6 garlic cloves pressed (I use 3) 2 TBLSP fresh ginger, grated 2 cups fresh cilantro (basically one bunch) 1 TBLSP chinese sesame oil 1 TBLSP hot chili oil (1/4 tsp. cayenne pepper dissolved in 1 TBLSP sesame oil). (I use commercial Thai chili sauce) 1/2 cup peanut butter (or maybe tahini, but I use peanut butter) 1/2 cup soy sauce 2 TBLSP sugar (I use brown) 3 TBLSP rice wine vinegar or rice wine Combine all ingredients in a food processor and puree until the mixture is of uniform creamy consistency. Pour over hot pasta and heat additionally in a pan if necessary to heat through. Garnish with chopped scallions, sesame seeds, chopped peanuts or diced cucumber if desired. This is great with fusilli, shell shaped pasta, or cavatelli, or orichiette or those snail shaped ones, lumache or whatever they are called. I add a small amount of finely chopped steamed broccoli to this or spinach, or sauteed red pepper, if I am in the mood but it is not necessary. It's very informal. I just saute a sliced onion till softened, add the garlic and saute for a minute more, then add either fresh, which is best of course, or canned green beans and small or quartered large new potatoes. Add enough water or veggie broth, or broth of your choice, to cover, and let cook slowly till tender and the liquid has reduced a bit. Salt and pepper and butter to taste. Some chopped parsley is good added at the last minute, too. Simple but very tasty. I also like to just quick cook fresh green beans till al dente, either by steaming or sauteing, and top with a Lemon-Shallot Vinaigrette. The vinaigrette is actually from a recipe for asparagus, but it's great on green beans, too. I just substitute green bean for asparagus. For the green beans, either bring a pot of water to boil and boil the green beans just until tender but not mushy, (In the original recipe using asparagus, he says to boil till tender but not limp, about 4 minutes. I think green beans would take about the same amount of time, maybe a little longer, though) or steam them till the same texture. Drain the green beans and place in a single layer on a large platter. Whisk the dressing again and drizzle it over the green beans. Let cool for 10 minutes. Serve warm or at room temperature. I have to confess...one of my favorite things to do when I don't feel like cooking is to toss a can of black beans or pinto beans and a can of Chile Fixins Rotel together, with some chopped onion and sometimes a diced clove of garlic, and some chopped cilantro if I have some on hand. Add the onion and saute until it begins to color around the edges., 5 to 7 minutes. Meanwhile, mince or pound the garlic in a mortar with 1 teaspoon salt. Work the tomato paste into the onion, then add the garlic, celery, arrot, bay leaves, and parsley and cook for 3 minutes. Add the lentils, 2 quarts water, and 1/2 teaspoon salt and bring to a boil. Lower the heat and simmer, partially covered, until the lentils are tender, 25 to 35 minutes. Stir in the mustard and vinegar. Taste and add more of either as needed. This recipe posted here by AdrienneLIQ is one of our favorites. When I make a casserole of beans, it's usually served as the main course rather than a side dish. TUSCAN BAKED BEANS Ingredients: 1 lb dried cannellini beans 4 T EVOO 2 cloves garlic, crushed 4 oz. Pancetta, roughly chopped 3 leaves fresh sage (if fresh not available, use 4t chopped fresh parsley). 1 Leek, finely sliced 1 14 oz. can plum tomatoes, chopped with their juice salt and freshly ground black pepper. 1. Carefully pick over the beans, discarding any stones or other particles. Place the eans in a large bowl and cover with water. Soak for at least 6 hours or overnight. Drain. 2. Preheat the oven to 350. In a small saucepan, cook pancetta until crisp. Remove pancetta from pan and set aside. Heat the oil and sautee the garlice cloves and sage leaves for 3-4 minutes until garlic is tender but not brown. Remove from the heat. 3. In a large deep baking dish combine the beans with the leek and tomatoes. Stir in the oil with the garlic and sage. Add pancetta. Add enough fresh water to cover the beans by 1 inch. Mix well. Cover the dish with a lid or foil, and place in the center of the oven. Bake for 1 3/4 hours. 4. Remove the dish from the oven, stir the beans, and season with salt and pepper. Return the beans to the oven, uncovered, and cook for another 15 minutes, or until the beans are tender. Remove from the oven and allow to stand for 7-8 minutes before serving. Serve hot or at room temperature. **For vegetarian version, simply omit the pancetta. For 'everyday' baked beans, I use this recipe. They're better when made ahead and reheated with some additional water to thin out the sauce. BAKED BEANS 1 lb. Great Northern or navy beans, soaked overnight in cold water 1 cup chopped onions 4 slices bacon, diced 2 Tbs. white sugar 1 Tbs. dry mustard 1/2 tsp. cayenne pepper 2/3 cup molasses 2 Tbs. cider vinegar 1 1/2 cups tomato juice 1 cup water Salt to taste Drain beans and add fresh water. Simmer until beans are almost tender. Drain. Combine remaining ingredients and add to beans. Bake uncovered in bean pot or deep casserole at 250 degrees for 4 hours or until very tender. Check them every once in a while and add more water to keep them from drying out. I have made nearly every bean recipe in Molli Katzen's Vegetable Heaven cookbook because that woman know what to do with them. Here are two recipes from her book that I have made many times. FIRECRACKER RED BEANS (6-8 servings) 2 Tbs. olive oil 3 cups finely minced onions 2 Tbs. minced fresh ginger 2 tsp. fennel seeds 2 Tbs. minced garlic 1/2 tsp. allspice 1 tsp. dried thyme 1 1/2 to 2 tsp. salt 1 cup dry sherry 2 Tbs. prepared mustard 1/4 cup ketchup 1 tsp. minced chipotle chiles 1 cup water 1/4 cup almond butter 2 Tbs. brown sugar 1/2 cup boiling water About 6 cups cooked small red beans or kidney beans (3 or 4 15-ounce cans, rinsed and drained) Wedges of lime Heat the oil in a large, deep skillet or Dutch oven over med-high heat. Add the onion, ginger, and fennel seeds, and saute for about 5-10 minutes. Turn the heat down to medium, add the garlic, allspice, thyme and 1 1/2 tsp. salt. Cover and cook over medium-low heat for about 3 minutes. Stir in sherry, mustard, ketchup, chipotles and 1 cup water. Cover and cook for another 10 minutes. Place the almond butter and brown sugar in a small bowl. Add the boiling water and mash with a spoon until it becomes a uniform mixture. Stir this into the sauce and cook uncovered over low heat for about 5 minutes. Preheat the oven to 325 degrees. Place the beans in a 9 X 13 inch baking dish or equivalent casseerole, and pour in all the sauce. Cover with tight-fitting lid or foil and bake for 1 hour. Remove the pan from the oven and let it sit for about 15 to 20 minutes, still tightly covered, so the beans can continue to absorb the liquid. Serve hot or warm, with squeezable wedges of lime on the side. Notes: You can make the sauce a day or two before serving and keep in the refrigerator; then combine with the beans before baking. Add 15 minutes baking time. The sauce can also be pureed in the blender before pouring onto the beans but I like it chunky. TUNISIAN TOMATO SOUP 1 to 2 (15 oz.) cans chickpeas, drained and rinsed 1 cup uncooked lentils (any kind), rinsed and picked over 7 cups water 1 cinnamon stick 2 Tbs. olive oil 4 cups finely minced onion 2 Tbs. minced garlic 2 tsp. salt 1 tsp. tumeric 1 1/2 tsp. whole cumin seeds 1 1/2 tsp. ground cumin 1/4 tsp. ground coriander 2 large or 3 small bay leaves Approx. 6 cups water, chicken broth, or vegetable broth 1 20-oz. can crushed tomatoes Black pepper and cayenne to taste 3 Tbs. fresh lemon juice (or to taste) Cook the lentils with 7 cups of water or broth and the cinnamon stick until tender, about 30 minutes for gray lentils or about half that time for red lentils, which I prefer for this soup. Remove and discard the cinnamon stick; drain lentils, saving the cooking water. Meanwhile, heat the oil in a soup pot or Dutch oven. Add the onion, garlic, salt, tumeric, ground and whole cumin and coriander, and saute over medium heat for 6 to 10 minutes, or until the onions are slightly softened. Add 6 cups of water or broth (including the reserved cooking water from the lentils, if any is left) and the tomatoes, and bring to a boil. Lower the heat to a simmer, partially cover, and cook for another 15 minutes of so. Fish out and discard the bay leaves. Stir in chickpeas and lentils, and cook for only about 5 minutes longer, so the legumes don�t get mushy. Season to taste with black and cayenne pepper and lemon juice. Serve hot, topped with some yogurt and fresh chopped mint, if desired. My mom copycatted a green bean recipe from a local restaurant many, many years ago. Quickly became a family favorite. She dubbed it 'Spanish Green Beans' because it is much like her Spanish Rice recipe. No specific am'ts. It's one of those wing-it type recipes. Anyway, it goes like this: Jerry's Spanish Green Beans Saute some chopped bacon (3-4 strips) to desired degree of doneness. Remove the bacon & discard most of the fat, leaving 1-2 T. Add chopped onions to the bacon fat & saute til soft. In a casserole dish, empty a couple of cans of green beans. Stir in reserved bacon & sauteed onions. To this, add some tomatoes. Doesn't really matter--she used home canned tomatoes. OR, a couple of small cans of tomato sauce is very good. I kinda' prefer using the tomato sauce. Alternatively, a combination of tomatoes & tomato sauce makes for a prettier dish & is very good. [Garlic is a nice addition.] Cover the dish & bake in oven. I often cheat & use the microwave, but the results are better if you cook it in the oven. I've always used canned products for this, probably because it's a hearty winter-type dish. Being single and working I don't have time for anything these days. With beans I like to work with smoke, heat, and sweet for flavoring. For smoke I use ham, smoked poultry, or liquid smoke. For heat I use red cayenne and habenera with green jalapeno and serreno peppers used pretty much chili only. The red peppers seem to tickle my taste with bean dishes. For sweets I work with brown sugar, onions, garlic, molasses, and maple syrup. To me onions and garlic are fairly potent sweeteners when cooked with beans. I've had lots of fun with variations on bean soup. My current favorite is a mixture of black beans and kidney beans in a ham broth with cayenne... chopped cabbage optional. Hot and smokey. Lentils I've fallen in love with adding spinach to the soup. Gives the soup a green tint and flavor. White beans (navy/great northern) I've been enjoying as a side dish. I was making bean soup when I got hungry and scooped out a bowl of just done beans. I had flavored the cooking water with a couple drops of liquid hickory smoke but added nothing else. They were delicious and I drained the cooking water so the rest of the beans could be eaten as just beans. Dry beans are one of the best bargins on my grocery bill! My pantry has a few pounds most all of the time. At the moment I have black, navy, and kidney beans, as well as green peas and lentils. Peas soup is wicked with a single slice of habenera pepper added to the pot. Amazing how many people I meet that have never had pea soup! And I added a bay leaf and 1.25 tsp. of Penzey's "Tuscan Sunset" to the soup. Oh, and I used a red onion because I had half of one I had to use up, and I threw in one wilting roma tomato. And I used canelinni beans because I have never seen borlotti beans. For someone who is of N. Fill a bowl with cold water and ice cubes. Bring a large pot of water to a boil and add the lemon juice. Drop in the beans and cook for 4 to 5 minutes, or until beans are bright green. Drain the beans in a colander and then plunge them into the iced water. Drain again and set aside. In a skillet, cook the bacon until very crispy, crumble and set aside. Saute the bell pepper and onion in the hot bacon fat for 2 minutes. Add the beans, cashews, and bacon to the skillet. In an oven-proof Dutch oven, bring the kielbasa and onions to a boil with water to cover and boil for 2 minutes. Drain. Put the remaining ingredients in the Dutch oven with the kielbasa and onions. Mix well. Cover and bake for 1 1/2 hours until the mixture reaches the desired thickness. Serves 8-10. NOTE: Can also be prepared in a Crock Pot. Prepare up to baking and place in Crock Pot on LOW and heat for 6-8 hours. Nothing fancy, just good old fashioned pinto beans with onions, carrots, celery, garlic, poblano peppers, bay leaves and other herbs I've forgotten, salt and pepper - oh, and a splash of liquid smoke. The original recipe comes from Mayo Clinic, but Elery added the jalapenos and he adds cumin to everything, I swear. The bean cakes are easy, drain and rinse two cans of black beans, mash them roughly with a fork or potato masher. Add a couple of cloves of mashed/minced garlic, some chopped green onion, maybe 1/2 cup of cilantro and a tsp. of cumin. Elery adds jalapenos to his but he made mine before he put jalapeno in the rest of them. Shape the mixture into patties and put them in the refrigerator for an hour or so to firm up. Heat a couple of tablespoons of olive oil in a pan and fry the bean cakes until they are browned and crunchy on both sides. We had ours topped with soft eggs, he had salsa. Not me, mine were just bean cakes, no jalapenos and eggs. I don't know how he can eat that stuff first thing in the morning, he always covers his eggs with Sriracha if we're having omelettes! I did two small tweaks, used 1/2 WWH pastry flour for some of the flour, and used 3/4 cup sugar instead of 1 cup. They were great with my morning coffee! I decided I'm going to make a desert type mac and cheese, using the chocolate pasta and marscapone or cream cheese. I figured I could make a ganache, or some sort of bechemel, add the marscaone and some sugar, and mix it with the cooked pasta. I'll fold in some raspberries and put it in a baking dish. Then I'll top it off with some kind of crumbly walnut type topping, and bake it a little, or at least run it under the broiler to brown the topping, maybe. That part I'm a little shaky on. Maybe I won't bake it. But I picture it all topped with some shaved chocolate. I've never used the pasta because it just seems like it would be so heavy of a desert. But this cookalong gives me a good excuse to use them. I'll report back on how it turns out. Here are three of my favorite chocolate recipes: Dessert Cheeseball Soften: 8 oz. of cream cheese 1/2 cup butter (1 stick). Mix together well with: 2 tablespoons of brown sugar 1/2 cup of powdered sugar Stir in: 1/2 cup mini chocolate chips After that is all mixed together, press firmly into a round bowl and chill completely - I recommend overnight. Remove from bowl, retaining shape as well as possible (maybe you should line the bowl with plastic wrap before pressing cheese mixture into it....). Ultimately, you want to shape this into a nice cheese ball and roll it into more mini chocolate chips. Place on center of serving dish and re-chill. Serve surrounded by graham crackers, vanilla wafers, chocolate wafers, apple wedges, or whatever sounds good to you. Enjoy! ~~~~~~~~~~~ One-pan Chocolate Pudding Cake from Land O' Lakes Cake: 1 cup flour 3/4 cup granulated sugar 3 tablespoons cocoa 2 teaspoons baking powder 1/4 teaspoon salt 1/2 cup milk 2 tablespoons vegetable oil 1 teaspoon vanilla Topping: 3/4 cup brown sugar 1/4 cup cocoa 1 3/4 cups boiling water or coffee Heat oven to 350 degrees F. In a mixing bowl, stir together flour, sugar, 3 tablespoons cocoa, baking powder and salt. With a fork, mix in milk, oil and vanilla. Spread the batter evenly in a lightly buttered 9-inch square baking pan. Combine brown sugar and 1/4 cup cocoa; sprinkle over the batter. Slowly pour boiling hot water over the batter and brown sugar-cocoa mixture. Bake chocolate pudding cake for 40 minutes. Let chocolate pudding cake stand for 5 minutes. Spoon into dessert dishes or cut into squares. Top chocolate pudding cake with ice cream or whipped topping. ~~~~~~~~~~~~ This is a recipe I have served since the mid-70's, so I more than likely found it in a woman's magazine at that time. Brownie Mint Dessert 3 egg whites, room temperature 3/4 cup sugar 3/4 cup chocolate wafer cookie crumbs 1/2 cup walnuts or pecans, chopped 1/2 tsp vanilla extract 1 cup whipping cream 2 Tbsp confectioner's sugar 1/4 cup soft peppermint stick candy, crushed chocolate curls grated chocolate Beat egg whites until foamy. Gradually add sugar, 1 tablespoon at a time, beating until mixture is glossy. Fold in crumbs, chopped nuts, and vanilla. Spread mixture into a buttered 8-inch square baking pan. Bake at 325 degrees F for 30 minutes. Cool completely. Beat whipping cream until foamy; gradually add powdered sugar, beating until soft peaks form. Fold in peppermint; spread over chocolate layer. Garnish with chocolate curls and grated chocolate. Cover and chill at least 3 hours. Cut into squares to serve. Store in refrigerator. This recipe is rich, but light and cool, so we enjoy it in the summer. I have successfully made substitutions in this recipe, such as scraping the cream out of Oreo cookies to use when I couldn't find the plain dark chocolate cookie wafers. I have used commercial whipped topping when I didn't have cream handy. I have also used regular peppermint candy, but now when I find the softer, puffed, peppermint I stock up and store it in the freezer just for this dessert. Enjoy! CREAMY BANANA SAUCE 1 c. mashed bananas (about 2 med.) 1/4 c. whipping cream 2 tbsp. powdered sugar 1/8 tsp. ground cinnamon Pecan halves, toasted Directions: Heat oven to 375 degrees. To prepare cake, grease and flour 8 x 2 1/2 inch springform pan. Heat chocolate and margarine in 1-1/2 quart saucepan until melted. Cool 5 minutes. Beat egg whites and salt in medium bowl on high speed until stiff but not dry. Beat egg yolks and sugar on medium speed until lemon colored. Stir into chocolate. Stir in ground pecans and banana. Gradually fold chocolate mixture into egg whites. Pour into pan. Bake until top is dry and knife inserted in center comes out slightly wet, 40 to 45 minutes. (Do not overbake). Cool completely. Yet on a recent trip to Lancaster, Pa, I came home with Horseradish mustard and Raspberry Honey mustard that have yet to be opened. I do keep Dijon and Colman's on hand but hardly use them. (8 oz.) cream cheese room temperature 5-1/2 cups confectioners' sugar from 2 (1 lb.) bags 1 tsp. vanilla extract 36 Oreo cookies Directions: 1. Preheat oven to 350 degrees. Grease and flour 2 (9-in.) round cake pans. Prepare cake mix according to package directions, adding 1 pkg, pudding filling to batter. Divide batter between pans. Bake 35 minutes or until a toothpick inserted in center comes out clean. Cool 10-minutes. Remove from pans to racks; cool completely. 2. Don't stop the chocolate yet!! Mustard.... How about mustard coated saddle of lamb? One saddle cut lamb roast. Dijon mustard to coat 5 or 6 cloves of garlic, either crushed or finely chopped 2 cups home made toasted unseasoned bread crumbs 2 T dry chopped parsley ( dry mixes better with the crumbs than fresh) 2 teaspoons of dry oregano Mix seasonings with the crumbs Salt and pepper. Bring the meat to room temp...pat dry with paper towels and sprinkle with salt and pepper. Smear it with the garlic and with prepared Grey Poupon mustard ( or any other good Dijon mustard) and press the seasoned crumbs into the mustard to coat well. Place on a shallow baking oan and roast in a preheated 375 oven until done to your liking. Sorry, I can't give a time because it depends on the size of the roast and how done you like it. For a 4 or 5 pound roast cooked medium rare 40 minutes is about right. Remember a saddle roast has a lot of bone and cooks more rapdcly than a boneless leg. Stir in flour, add broth and wine, stirring frequently. Stir in mustard and seasonings. Cook until mixture thickens and is bubbly. Reduce heat and stir in cream and shrimp. Cover and cook 2 minutes more or until heated through. Serve over rice. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Wild Rice Potato Rosti 1/2c wild rice, cooked 2lb potatoes, cooked and peeled 3T walnut oil 1tsp yellow mustard seeds 1 onion coarsely grated and drained 2T fresh thyme Salt & pepper Coarsely grate cooked potatoes into large bowl. Add cooked rice. Heat 2T oil in large non-stick frying pan. Add mustard seeds, when seeds begin to "pop" add onion, cook gently for 5 minutes or until soft. Pork Tenderloin with Dijon Cream (Weed) Serves: 2 1# pork tenderloin, cut into 2" slices Seasoned flour 2 Tbl. butter, divided 2 tsp. canola or olive oil 2 green onions, thinly sliced (coin shape), white and green parts separated 1/3 cup white wine or dry vermouth 1/2 cup heavy cream 1 tsp. Dijon mustard (or more to taste) salt and pepper to taste Preheat oven to low, about 170 degrees F Lightly pound pork medallions to 1" thick. Melt 1 tablespoon of butter and 2 tsp. oil over medium high heat. Dredge pork in seasoned flour. Add pork slices all at once to pan and saute 2 minutes per side. Remove to a plate and hold in the oven while finishing the sauce. (pork will be a bit underdone but will finish in the oven.) Add the remaining 1 tablespoon butter to pan. Add white part of onion, saute for 1 minute. Add wine or vermouth, simmer until syrupy and reduced to about 3 tablespoons. I wrote it down on a 4x6 recipe card and the card has bent corners but I still pull it out of my recipe box when I want to make this dish. Chicken with Mustard and Cream 2 chicken breasts-whole, skinned and boned 1/4 teaspoon salt 1/8 teaspoon freshly ground pepper 1 Tablespoon olive oil 2 Tablespoons butter 2 Tablespoons chopped green onions 1 cup mushrooms, thickly sliced 1/3 cup dry white wine 1/2 cup heavy cream 2 to 3 teaspoons Dijon mustard 2 Tablespoons chopped parsley Cut chicken breasts into 4 halves. Sprinkle with salt and pepper. Saute chicken in butter and oil in a large skillet, shaking pan to prevent sticking until lightly golden, about 6 minutes. Turn, lower heat and saute until chicken is just tender, about 4 minutes longer. Chicken should feel springy with no pink remaining. Cover and cook 2 minutes longer to steam. Spicy Guinness Mustard Our favorite mustard recipe uses brown mustard seeds and Guinness beer (which lends a malty character and hints of sweetness). 1 12-oz. bottle Guinness Extra Stout 1 1â„2 cups brown mustard seeds (10 oz.) 1 cup red wine vinegar 1 tbsp. kosher salt 1 tsp. freshly ground black pepper 1â„4 tsp. ground cinnamon 1â„4 tsp. ground cloves 1â„4 tsp. ground nutmeg 1â„4 tsp. ground allspice 1. Combine ingredients in a nonreactive mixing bowl. Cover with plastic wrap and let sit at room temperature for 1�2 days so that the mustard seeds soften and the flavors meld. 2. Can add garlic or chopped parsley and chives if you are so inclined, and a drop of honey if you are sensitive to the tang of mustard. Mom's famous potato salad is made with grainy dijon mixed with mayo and dill for the dressing. I do ham roll ups with thin shaved ham and swiss cheese, romaine lettuce leaves, mayo and dijon mustard mixed with some fresh herbs--dill, parsley, oregano, marjoram, savory, tarragon, chervil, whatever you like but don't overdo it. Roll up and slice into pinweels and get raves at a party--mmm, what's in these? Put mustard on a grilled cheese made with lowfat cheese, to make up for their generally bland taste. I forgot! I spread dijion mustard on raw salmon. Then I wrap it up in parchment paper and nuke it. One of my favorite quick meals as a frozen portion of salmon is ready to eat after about 3 minutes of nuking. The mustard flavor blends with the salmon leaving no distinct mustard flavor but it also takes the fishy edge off leaving the salmon sweet and mild. PORK LOIN WITH APPLES, PRUNES, AND MUSTARD CREAM SAUCE 1 (4 lb.) boneless pork loin roast, tied by butcher 1-3/4 tsp. salt 1-1/2 tsp. black pepper 1 Tblsp. olive oil 2 Granny Smith apples (3/4 lb. total) 1 large onion, chopped 1/2 cup packed dried pitted prunes (sometimes called dried plums; 4-1/2 oz.), quartered 1-1/2 cups low-sodium chicken broth (12 oz.) 3/4 cup water 1/2 cup heavy cream 2 Tblsp. coarse-grain mustard 1/2 cup dry white wine Put oven rack in lower third of oven and preheat oven to 375�F. Halve pork loin crosswise, then pat dry and sprinkle with 1 tsp. salt and 3/4 tsp. pepper (total). Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then brown pork, 1 piece at a time, turning occasionally, 6 to 8 minutes per piece. With the blade still running gradually add oil. Store in the refrigerator. Palmiers With Honey Mustard And Prosciutto (Silver Palate) 1 sheet puff pastry -- 18 x 11" 3 Tbsp honey mustard 4 Ounces prosciutto thinly sliced 1 cup Parmesan cheese freshly grated 1 egg 2 tsp water Place the puff pastry on a work surface and spread the mustard over the top. Arrange the prosciutto evenly over the mustard to cover all the pastry, and then sprinkle with the Parmesan. Lightly press the cheese into the prosciutto with a rolling pin. Starting at one long edge, roll up the puff pastry like a jelly roll just to the middle of the dough; then roll up the other side in the same fashion, making two rolls that meet in the center. Using a serrated knife, cut the rolls crosswise into 1/2" slices. Place the slices on cookie sheets lined with parchment paper and press lightly with your hands to flatten. Refrigerate for 15 minutes. Preheat oven to 400 degrees. Beat the egg and water together in a small bowl. Brush the top of each palmier with the egg wash. Spicy Guinness Mustard Our favorite mustard recipe uses brown mustard seeds and Guinness beer (which lends a malty character and hints of sweetness). 1 12-oz. bottle Guinness Extra Stout 1 & 1/2 cups brown mustard seeds (10 oz.) 1 cup red wine vinegar 1 tbsp. kosher salt 1 tsp. freshly ground black pepper 1/4 tsp. ground cinnamon 1/4 tsp. ground cloves 1/4 tsp. ground nutmeg 1/4 tsp. ground allspice 1. Combine ingredients in a nonreactive mixing bowl. Cover with plastic wrap and let sit at room temperature for 2 days so that the mustard seeds soften and the flavors meld. 2. Transfer the mixture to the bowl of a food processor and process, stopping occasionally to scrape down the sides of the bowl with a rubber spatula, until the seeds are coarsely ground and the mixture thickens, about 3 minutes. I had totally forgotten that there was a story in this book about a county fair that included a Mad for Mustard competition! Of course there is a mystery in the story and the book is filled with lots of recipes using herbs and this story has lots of ways to use mustard. The book is now waiting in my kitchen for use very soon but I had to add some of the recipes to this thread. All recipes are from "Mustard Madness" one of the stories in "An Unthymely Death and Other Garden Mysteries" by Susan Wittig Albert. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Pete Hitchen's Blue-Ribbon Beer Mustard 1 c dark beer 1/4c yellow mustard seeds 1/4 c brown mustard seeds 1-1/2 c apple cider vinegar 1 small onion, chopped 6 cloves garlic, minced 1/2 c mustard powder 2 T. ice water 1-1/2 tsp salt 2 tsp sugar 1/2 tsp ground allspice 1/2 tsp ground cumin 1 tsp grated fresh ginger Pour beer over the mustard seeds and let soak overnight. In a non-reactive (glass or stainless) pan, place vinegar, garlic, and onion. Simmer until liquid is reduced by two thirds. Strain and chill. Mix dry mustard and ice water and let sit for 20 minutes. Stir in cold vinegar, salt, sugar, allspice, cumin, ginger, and soaked mustard seeds. Place in a blender container and blend until mustard seeds are coarsely ground, scraping sides often. Pour into a saucepan and simmer over very low heat 10-15 minutes, until it thickens. Cool, place in a glass jar with a tight lid, and let sit in a dark cupboard for 4-5 weeks before using. Refrigerate after opening. Process until the garlic and horseradish have been pureed, then strain through a fine-meshed strainer, pressing out the juice from any pulp in the strainer. Discard the material in the strainer. I'm sure this will become a favorite of yours too - it's great to bring on a picnic lunch! 2 teaspoons fresh chopped sage 2 teaspoons fresh chopped rosemary 1/2 teaspoon freshly ground black pepper 2 cloves garlic, minced Kosher salt and freshly ground black pepper 1/4 teaspoon fennel pollen* 4 tablespoons extra virgin olive oil 1 pork tenderloin, trimmed 1 loaf crusty baguette 3-4 T Dijon mustard (opt) On a work surface, mince the sage, rosemary, pepper, garlic, 1 teaspoon salt, 1/4 teaspoon black pepper, and fennel pollen together. Heat a frying pan over medium high heat. Add 1 tablespoon of the oil. Cook the pork, turning occasionally, until golden on all sides, 8 to 10 minutes. If you like, at this point, you can smear the seared pork with Dijon Mustard before rolling in the herbs. (This step adds moisture to the meat which I prefer). Roll the pork in the herb mixture and set aside. Cut the baguette in half the long way and scoop out the soft insides. Brush the inside of the baguette with the remaining 3 tablespoons olive oil. Place the pork on the inside of the baguette so that the pork is completely enclosed. Trim off the excess ends of the bread. Tie the baguette, at 1-to 2-inch intervals, with kitchen string. Preheat an oven to 375�F. Place the pork on a baking sheet and roast until done, 155�F on an instant-read thermometer inserted into the thickest part, 25 to 30 minutes. Remove from the oven, let rest 10 minutes. Remove the strings and cut into slices. Serve. Serves 2 Ingredients 12 oz (350 g) pork tenderloin 1 level teaspoon mustard powder 1 heaped teaspoon grain mustard 1 heaped teaspoon Dijon mustard 4 oz (110 g) small open-cap mushrooms 7 fl oz (200 ml) creme fraiche 1 dessertspoon groundnut oil 1/2 oz (10 g) butter 1 small onion, peeled, halved and thinly sliced 3 fl oz (75 ml) dry white wine salt and freshly milled black pepper You will also need a 9 inch (23 cm) solid frying pan. First of all prepare the pork by trimming it and cutting it into strips 3 inches (7.5 cm) long and 1/4 inch (5 mm) wide. Then prepare the mushrooms by slicing them through the stalk into thin slices. Now, in a small bowl, mix together the three mustards with the creme fraiche and, when you're ready to cook the pork, take the frying pan and heat the oil and butter together over a medium heat. Add the onion slices and fry them gently for about 2-3 minutes until they're soft. Using a draining spoon, remove the onions to a plate, turn the heat up under the pan to its highest setting and, when it's smoking hot, add the strips of pork and fry them quickly, keeping them on the move all the time so they cook evenly, without burning. It serves 2, but I could eat it all myself lol. I like to make it as a side with grilled steaks. WARM POTATO SALAD WITH RED ONION, DILL AND WHOLEGRAIN MUSTARD (serves 2) Ingredients: 2 large waxy potatoes 2 Tbsp finely diced red onion 2 Tbsp good mayonnaise 1 tsp wholegrain mustard 1/2 tsp dried dill salt and pepper Method: Boil the potatoes, then place them in cold water to cool down. When cool enough to touch, peel and chop into large cubes. Add all the other ingredients and mix well. Check seasoning and add salt and black pepper to taste. MUSTARD CHICKEN 4 boneless chicken breast halves 1/2 of a juicy lemon Salt and freshly ground pepper Butter or margarine About 1/4 cup Dijon-style prepared mustard 1/2 cup unseasoned fine dry breadcrumbs Squeeze lemon juice over both sides of chicken, then season with salt & pepper. Melt about 1/ 4 cup of butter and brush both sides lightly with butter or margarine and place in shallow broiler-proof pan. Roast in preheated 425 degree oven, turning twice, for 15-25 minutes or until just barely tender. Remove from oven and cool slightly. Spread the flat side with a layer of mustard; then turn breast mustard side down into a bowl containing the crumbs. Press with fingers to make a thin layer of crumbs over the mustard. Return to baking pan, crumb side up. Repeat with the other 3 chicken breasts. Drizzle the remaining melted butter or margarine (should be about 2 Tbs. ��" if not, melt additional) evenly over the crumbs. (I like to brush the butter on to get it even but it takes practice to do it without messing up the crumbs.) Set broiler about 6-7†from heat and preheat. Broil until crumbs are crisp and golden brown. Watch carefully that crumbs do not burn. Serve warm or cold.
