Sweet Potatoes with Caramelized Onions

3 or 4 Sweet Potatoes
1 large onion
olive oil
butter
Salt
Pepper

Cook onions in oil and butter until caramelized. Should take about 25 to 30 minutes.

While onions are cooking Boil potatoes until tender. Run under cold water to remove peel.

Mash sweet potatoes, add caramelized onions, a chunk of butter and season with salt and pepper to taste. If you like them even creamier add a couple of tablespoons of heavy cream.

I've made Ann's recipe above for Thanksgiving. It is delicious.

You can always bake them with skins on and add butter and sometimes cinnamon (not savory, but good), I like them cut like ranch fries sprinkled with a mixture of rosemary and garlic and roasted in the oven by themselves or with any other root vegetables. I have never roasted beets but I understand they need to be separated from the other veggies, else they'll be tinted red. Kind of like the red sock that was mixed with the white clothes in the wash.

I have a mixture of dried rosemary and garlic in one of the grinder bottles and I use it more than any other dried herb combination. Just ordered a new supply last week.

As I said, I don't think there's much you can do with sweet potatoes that's not good.

Do you add other ingredients to your white potato/sweet potato casserole besides garlic?

Parmesan-Coated Sweet Potato Fries

1/2 cup all-purpose flour

3/4 teaspoon coarse salt

1/2 teaspoon ground pepper

2 large egg whites

1-1/3 cups grated Parmesan cheese

4 small sweet potatoes (about 2 pounds), scrubbed and quartered lengthwise

1 Preheat the oven to 425�. Line a large rimmed baking sheet with parchment paper or aluminum foil and then set aside.

2 In a shallow bowl, stir together the flour, salt, and pepper. In a separate shallow bowl, lightly beat the egg whites with 2 tablespoons of water until combined. Place the Parmesan on a sheet of waxed paper or put it in another shallow bowl.

3 Dip the sweet potato first in the flour mixture, shaking off excess. Then dip each wedge into the egg white mixture until coated. Finally, dip the sweet potato in the Parmesan, pressing the exposed surface of the potato into the cheese. (Don't worry if some gets on the skin.) Transfer potato wedges onto the prepared baking sheet as you go.

4 Bake potatoes until tender and crisp, about 25 minutes. Serve sprinkled with more salt if desired.

I make a casserole with ingredients similar to Anne's sweets with caramelized onions recipe. The sweets are sliced and layered with the onions and topped with butter and a bit of dark brown sugar.

One of our favorites is chipotle mashed potatoes...just mashed sweets with butter, cream and canned chipotles.

I need to try those fries. I've never been able to get mine crisp.

We layer cubes cooked white and sweet potatoes in a frittata for our vegetarian friends. They love it!

Thanks so much for the ideas! I've had baked/oven fried sweets before but they weren't at all crisp. Ann, yours look to-die-for.

I went to a cooking talk & demonstration put on by a top local caterer today. She mentioned that Trader Joe's has sweet potato fries with a panko crumb coating which makes them crisper - a good thing.

Jasdip, I also like your idea of mixing the white and sweet potatoes w/fresh garlic and Olive Oil.
