Ohhhh that sound so good! Often I just peel them, cut in chunks, put in a casserole dish with a real little water and bake. When soft and tender, I mash with a fork (drain the water if it hasn't evaporated) add butter S & P. use them like a side dish to go with a meat dish. Sweet potatoes are so good for us, I try to make them at least once a week in the winter.

This is a family favorite, whenever I get the chance. Got it out of a gourmet magazine many years ago.

Baked Sweet Potatoes with maple-jalapeno sour cream
Rub oil and salt on 4 scrubbed, sweet potatoes and dried
Place on rack and take 450 for 40-45 minuts or until soft (I wrap mine in foil)

Topping
Combine
1/2 c sour cream
1 Tbl maple syrup
2 tsp seeded and minced jalapeno ***I use canned minced green chiles, drained
1 tsp lime juice
salt and tobasco to taste **I use Frank's
chill

Serve potatoes with:
maple-jalapeno sour cream
bacon bits
sliced scallions

Google sweet potato recipes. there are alot of ways to use this vegetable. Also the Food Network has receipes. I have two mini booklets, one from The Sweet Potato Council of the US, ( 57 different ways to prepare sweet potatos) and from Louisiana Sweet Potato Commission in Opelousas, LA. I have had these for years, so not sure it they are still in business.

I love sweet potato French fries!

I sometimes include them in soup, stew, or pot roast!

My favorite way is just to bake them and put a little butter on them. My husband only will eat the candied ones :(

We are hoping for a good crop of them this year. We had a good one last year and I still have a small basket of them left.

I do a roasted vegetable medley. Not really a main dish...but a hearty side.

It sounds similar to what you do... I usually do gold potatoes, sweet potatoes, red pepper, red onion, squash, and carrots (you can do whatever mix of veggies you like). I cube or cut into chunks & Put in a big plastic bag, coat in oil, and dump in a packet of the Lipton recipe secrets packet stuff (you can try the onion mix or some of the other spice blends). Shake up until everything is coated... and put in roasting pan in the oven. Stirring occasionally. The red onions and red peppers really bring the dish to life (but keep them cut big or add them later because they will cook quickly). And the Lipton mix really does spice up the dish. I tried fresher or homemade spice blends and I really prefer their mixes for this.

I make this at Thanksgiving:

2-1/2 lbs sweet potatoes
3 tangerines (I use more)
1" piece of fresh ginger

Scrub potatoes but do not peel. Place in a pot with enough cold water to cover and bring to a boil. Lower heat to medium and cook for 50 mins or until the potatoes ae very soft.

Meanwhile, grate the rind of the tangerines on the fine holes of a grater to get 1 tsp. Cut 2 tangerines in half and squeeze to get 1/2 cup juice. Peel the remaining tangerine and remove the white pith and any seeds. Cut into small pieces. Drain the potatoes in a collander and peel under cool tunning water. Cut the flesh into large chunks and place in the bowl of a food precessor (I used a mixer). Using a small sharp knife, peel and finely mince 3 T of ginger. Add to the processor along with the tangerine zest and juice. Process until very smooth. Transfer mixture to a saucepan and add salt to taste. Reheat gently before serving. Top with diced tangerines. Can also garnish with finely chopped parsely or a little freshly grated nutmeg.

I love sweet potato fries too ,make a dip of sour cream about 2 c then add brown sugar maybe quarter cup I usually add till I like it let it sit so flavors mary till fries are done,this way and candied is only way I eat them yum..
