Two GALLONS of the stuff??? Wow. Interesting.

Yes, I have some ideas of what *I'd* do with it--regift it to someone at a white elephant party if you aren't going to use it in any way, give it away on Freecycle, return it to the store (if you know where it was purchased) and use the return credit to get something you need for your jams.

It was thoughtful (?) that your neighbor thought of you and your jam-making. Do you think she just had it around the house or do you think someone gave it to her or do you think she bought it in order to give it to you?

lol I think if this happened to me, I'd have a ready excuse to tell her, like gee, that is so nice of you to think of me, but I'm gonna have to turn it down--it just doesn't make a sellable jam and I wouldn't know how to use it for anything else.

I found a spice cake that uses some but not 2 gallons. And http://www.sunsweet.com/recipes/prune_juice.asp has some recipes.

Original Recipe Yield 1 9x13 inch cake or 2-8 inch rounds (the pic shows a bundt)

Ingredients

2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
1/2 cup shortening
1 cup white sugar
2 eggs
1 cup prune juice
1 cup prunes, cooked and chopped
1 cup chopped walnuts
Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch baking pan.
Sift the flour, baking soda, salt, ground cinnamon, nutmeg, cloves and allspice. Set aside.
Cream the shortening with the white sugar. Blend in the eggs one at a time and beat well for 1 minute. Add the dry ingredients alternately with the prune juice. Stir in the prunes and nuts. Pour batter into the prepared pan.
Bake at 350 degrees F (175 degrees C) for 30 minutes or until done.

I've never been the recipient of such a unique gift but I'd probably mix part of it with some dry white wine, strips of orange zest and whole allspice and poach whole peeled pears or plums in it.

Ohh - ruthanna - 'tis a yummy idea for this weird gift. Thanks so much. Plums/prunes are supposed to be good for you but it's like between broccoli water and almond skins. Nutrition versus palatable.
