What magazine this month did I see the blueberry buckle recipe?

I read several magazines last week, Fine Cooking, Yankee,Country Living and maybe one other, can't remeber for sure but I am sure I saw a recipe about maine blueberries and then a recipe for blueberry bukcle. I just went through them and can't find the darn recipe now. Am I crazy? Did anyone else see the short article and recipe? Thanks!!!!

I can't say for sure, but it does ring a bell. Could it have been Martha Stewart Living?

Hello Java/Jazz and I hope you enjoy the Cooking Forum! I didn't see any article recently, but you can always depend on a recipe from Marilyn - they're always winners. Try it, you'll like it!

Marilyn's Blueberry Buckle

Â¾ cup white sugar
Â¼ cup shortening
1 egg
Â½ cup buttermilk
2 cups all-purpose flour
2 teaspoons baking powder
Â½ teaspoon salt
2 cups blueberries (fresh or frozen)
Â½ cup white sugar
1/3 cup all-purpose flour
Â½ teaspoon ground cinnamon
Â¼ cup butter

Preheat oven to 375Â°. Grease 8X8-inch baking pan.

Cream together Â¾ cup sugar, shortening and egg. In a separate bowl mix together 2 cups flour, baking powder and salt. Stir into sugar mixture alternating with milk.

Toss berries with 1 tablespoon flour and fold into batter. Spread batter into prepared pan. Combine Â½ cup sugar, 1/3 cup flour, cinnamon and butter. Sprinkle over cake batter and bake for 30 to 35 minutes.

I read in one of the farming books I have that in a good climate (and we qualify, though Minnesota doesn't), a person could raise enough food to supply every single meal for a family of four on an acre. This requires two growing seasons and that you mainly raise grains. Another book I have says that standard US agricultural practices produce about 2000 loaves of bread per acre or 35 bushels of wheat. For standard bread that's 1200-1500 calories per one pound loaf. One loaf (or equivalent) per day for each of four people... 4x365 = 1460. That leaves space left over to raise herbs and truck. It's not a high standard of living, but you could do it. I could do it. I own one acre. But I have a big house on part of it and a driveway. Those would detract. I found an internet site about all the food a family raised on 1/10th of an acre and I found it amusing their harvest report was six years after starting the garden. It's like when I was reading Ruth Stout's book and she said that after 10-20 years her garden did this or that. Ha! Yes, after years of effort, you get the soil right and it is wonderful stuff. I don't think most folk new to gardening understand that it will be years before they get a really good bumper crop. I'm very happy with how well my garden has done this year and I credit the dump trailer loads of soil amendments. I'm going to pop out to Wal-Mart and get some corn chips to enjoy my fresh salsa with. While I'm there I'll check their magazine rack for Urban Farm. I might even try to scrape up the money to subscribe. It sounds awesome!

Well, I ended up making peach cherry buckle out of a nectarine plum recipe!! It was in an old issue of MS Living magazine that I've had sitting around for a few years. The reason I didn't go with blueberries is they were $3.99 at the store, looked like carp, and came from g-d knows where. The sign said CA and the box said, "packaged in NJ." ? The "eastern" peaches were .99 cents a pound because they were kind bruised and marginal, but ok for cake, and I had MI cherries frozen. We'll see how it tastes. It looks good. I hate the grocery store I went to, but my bank is there and I had to go so I got the stuff there to save time and money on gas. My dad won't eat blueberry stuff either, to "tart" for him, which blows my mind since that's exactly why I LIKE blueberries!! Thanks for that info Gina. I will be making that cake because sooner or later I've got to be able to find some good blueberries. I live on the edge of what was once the blueberry capital of the US--NJ and the Poconos. I guess now it's all subdivisions.

Me too! I dropped all the subscriptions and for all the same reasons. I do get a little more exercise now because I walk to the library 3/4 mile from my home to read the same mags for free. I do make a small donation to the library every year because I use it so much and I believe if we help a little then we will always have the Free public library systems. I make it clear to many friends and family members they need to drop a bit of change in a donation box for the library. Remember libraries don't get the books and mags for free and many have had to cut back on subscriptions too. So when you can please give a little back. Ours accepts books from personal libraries and sell them (If there are copies on the shelves already) to make money for more newer books. I have bought many very inexpensively and them donated them back after my bookshelf has reached maximum capacity. LIL

I don't buy magazines anymore - they are way too expensive for my budget. I used to love Martha Stewart for baking and crafts when there were more articles than ads. I love cooking magazines especially Fine Cooking and the new Food Network magazine. My sister buys all the cooking and decorating magazines so when I go to visit her that is what we do - sit and look through magazines. That is her luxury and she buys them all. LOL My niece gave me a subscription to Chatelaine magazine but I don't care for that one so I usually just pass it along to someone else. I do like Hello Canada and Rayalty but my SIL gives me them after she has read them. At Christmas I may buy a holiday baking magazine for cookies but now I am realizing there isn't much new with cookie recipes these days. They just rehash the old recipes LOL I did used to buy the Collectors magazine but I don't even know if it is around anymore. My Sister always brings me home a Southern Living when she comes home from St. Louis but it is also for sale on our newstands. I like the recipes. I only get the Windsor Star if my sister goes away and has her paper rerouted to me which happens often. The news is old having been on the local television news the night before so it is no great loss if I don't get the paper. If I want really want to look at a particular issue of a magazine I can go to the library and read it. Anne

In case you don't find the one you saw in a magazine, here is the one we have used for years, from the Betty Crocker Picture Cookbook in the mid 1960Âs.

Blueberry Buckle

Preheat oven to 375 degrees.

1/4 cup butter or margarine, softened
3/4 cup sugar
1 egg
1/2 cup milk
2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 cups blueberries, fresh or frozen

Mix together sugar, shortening, and egg. Stir in milk. (Mixture may look curdled, but keep going, itÂs fine.)
Sift dry ingredients together. Add to above. Stir berries in gently.
Grease and flour 8-9" square baking pan. Spoon in batter and distribute evenly in pan.

Topping:
1/2 cup sugar
1/3 cup flour
1/4 cup margarine, softened
1/2 teaspoon cinnamon

Blend all topping ingredients. Distribute evenly over batter.

Bake for 45-50 minutes: If berries are fresh, check after 35 minutes; if berries are frozen, baking may take longer. Serve warm as coffee cake or dessert.

Thanks everyone! They all look good. I want to take this to the giant yardsale in Stormville, NY on saturday for a snack. I cleaned out the attic and some closets of all antiques/collectibles I don't want or have room for anymore and going to try and get sell them. The blueberry seemed like the perfect snack for the day! Thanks again! Richie
