What do you think of this addition to oatmeal cookies?

I have what I thought was a great granny smith apple. I was going to turn it into one of those digusting caramel and chcolate and nut topped candy apples, and thought I picked one without any blemishes.

Today, I noticed it has a spot that grew to the size of a quarter. It's only one lonely little apple.

I was thinking of chopping it up into little pieces and adding to oatmeal cookie batter (instead of raisins).

Would this be a good choice?

Will the cookies keep?

Should I do anything to the apples before hand? dry them out or something?

Do I need to adjust any other ingredients?

I'm just going to follow the quaker oats recipe.

Thanks

Maryanne
