Mr. Clint, I'm not trying to chase you off, just try to make you understand your ability to crank out food comparatively easy for 365 days a year is a direct function of where you live, not from colossal cultural practices. Yes there are some tried and true methods of agriculture that have been around for ages that continue to be practiced and help in the struggle - crop rotation, trashy cultivation, trap crops, etc. But keep in mind none of the "natural" methods was rarely ever the sole means for protecting crops under Midwest conditions. Along with all that timeless advice, it was not uncommon for lead arsenate, Paris green, and other nasty things to be used to protect food crops. All I'm saying is here growing food is more of a battle and aged agricultural principles, although they may help, won't take care of the problem. Heck, last summer an orchard near here lost 100% of its apple crop due to fungus (black rot I believe). Seriously, I'm on their email list (as part of the Kansas Fruit Growers) and they sent an email indicating they canceled all sales. It is more of a battle to grow food here. Farmers around here have experienced it. Dare I mention it, but even the "evil" chemical companies market their crop protectants accordingly (Warrior, Pounce, Ambush, Assail, Stinger, etc.) I'm sure you'll argue the chemical companies are just doing that to keep the war mentality going, but I disagree. They are appealing to experiences that are already there (i.e. losing a whole apple crop to fungus) That growing food here is more challenging doesn't automatically make it unenjoyable. Perhaps an analogy would be rock climbing. It can be very difficult along the way, but can also be rewarding if successful.

Ok I'll stick my neck out but upfront is a BIG disclaimer that in no way is this tested, approved or even recommended. And add all that stuff the fast talking lawyers say on the adds on TV, ok? ;) The BBB Boston Baked Beans is the closest to your recipe posted above. 1 qt. dried navy beans (about 2 lbs.) 1/2 lb. salt pork cut into pieces 3 large onions, sliced 2/3 c brown sugar 2 tsp. salt 2 tsp. dry mustard 2/3 cup molasses Since you will be using the Bush canned beans I won't include the part in the recipe about pre-soaking/rehydrating the dried beans. Pour beans into a baking dish or bean pot. Add pork and onions. Combine remaining ingredients and 4 cups of the reserved bean liquid and add water to make 4 cups if necessary. (I would measure the juice from the Bush cans and bring it up to 4 cups with extra water, maybe even add a can of tomato sauce to it.) Ladle sauce over the beans, cover and bake at 350 degrees for about 3 1/2 hours. Add water if necessary as beans should be soupy. Pack hot beans and sauce into hot jars leaving 1 inch headspace.** Remove air bubbles. Adjust 2 piece caps. Process pints 1 hours and 20 mins, quarts 1 hour and 35 mins at 10 lbs. (depending on altitude). Now for the deviations: I see no problems with adding the pineapple as it is acid, HOWEVER it will change the density so finely chop it (not chunks) and add the pineapple juice too. Your recipe calls for less onions so use its lesser amount and the ketchup in your recipe to help compensate for the change in density the pineapple causes. This gets you everything EXCEPT the peppers and you will have to use dried, not fresh, for those - either dried pepper flakes of some kind or dried peppers that have first been rehydrated in vinegar, not water. Follow me? Just too much pH effect otherwise. Of course you can always add them after you open the jars at serving time too. **When it comes to filling the jars you MUST have this be SOUPY and thinner than normal, much soupyier than you wish. The other baked bean recipes say "fill the jar only 3/4 full and the rest of the jar with liquid, remove air bubbles and add more liquid If you have to add more water to the cooking liquid to have enough - do it. Better too thin than too thick. You can thicken it up at serving time by cooking it down or adding a bit of corn starch or flour. OK? Dave ~ ducking from the hail of stones ;)

It was maple cured and applewood smoked bacon with fresh eggs from the farm and homemade honey wheat toast: Chrystal made some of Julia Child's liver pate and sent some home with me, so we had it with crackers: I made three loaves of that honey wheat bread and Cooper and I had some hot with butter: I made venison meatloaf with the glaze that Nancy (wizardnm) uses, the girls love it: Finally, tonight we had the last package of locally caught salmon on the grill, with some of the pink half runner beans that we grew and canned last summer, and a side dish of quinoa with raisins and almonds, a knock-off of an Ellie Krieger recipe. It was all good... Tonight I made a rhubarb pie for my secretary's birthday, using the Never Fail Pastry recipe from SharonCB. It's so easy to handle, I roll it out right after I mix it, I don't even chill it and it comes out perfectly every time, without a tear: Perfectly browned and flakey, it'll go to the office tomorrow: Annie
