are in the crock pot...I don't know that I'll be able to can anything today, so I'll have to reheat and do it up tomorrow..

I made a half batch give or take a few apples. LOL

So here comes Apple Maple Butter, by way of Michelle from Nancy's Apple Maple Jam. LOL

The apples are not breaking down..so Hey I know I have a lovely pie apple..LOL..
so I'll have to use the stick blender...
They've juiced..The only liquid added was about a 1/3c of maple syrup and 1 c of sugar..and the liquid is probably close to 2 cups in the bottom of the pot..

Terry, I used Macs, Cortlands, Honey Crisp and Granny Smith and one of the varieties did not break down either (I think it was the Honey Crsip) so I just used my good ole hand stick blender and whizzed away.

This is not the first time we have made our own maple syrup. And yes, Manitoba maple trees make wonderful maple syrup, I think it is just as good as Ontario maple syrup. Manitoba maple trees...the sap you have to boil down a bit more than the sugar trees that are used in Ontario. So for every 44 gallons of sap collected we would get one gallon of syrup. We do not collect it with the "Belgins and the wagon" ...my son and DH will use the ATV and the little homemade trailer with a miniature water tank on the back of the trailer. We have a large flat tray which we have on top of a wood burning stove. The stove is out in a shed that we can swing open the doors at each end up. I would never want to do it in the house...too much humidity. We collect the sap, empty the jugs into a large round barrel that has a hose connected to the bottom of it. As my DH gets the sap boiling this hose is opened up just enough to add a little sap into the already boiling sap. It takes hours and hours to finish a batch of syrup. We have the sugar testing "thermometer looking" instrument that we use that tells us the sugar concentration of the liquid. Of course, we are never hungry those days, 'cause of all the taste testing a person "has" to do. We put the finished syrup into little jug containers (that you can buy maple syrup in the stores in) to give to others or just use glass canning jars if doing it for ourselves. I use maple syrup when cooking apples and squash. I also love homemade maple butter...I put it on toast. An interesting thing...I can only make maple butter on sunny days. It will not work if I make it on a cloudy day. Something to do with the humidity in the air...it doesn't let it set right. It is an experience to make homemade maple syrup. I have even had a nursing home bring out a van full of their residents on an activity/excursion (whatever you call it) one year. I made homemade biscuits for them and tea and they all seemed to really enjoy themselves. I will post pictures (probably starting tomorrow) with what we are doing, okay? Brenda

Lots of good stuff here! Zabby, the blueberry-lavendar jelly sounds great. Must give that a try. And Daisy, that chocolate-raspberry jam... wow. I just finished putting up a batch of rose petal jelly. (I saw an earlier post with a recipe; here's mine for those using US measures.) For what it's worth, I used a mix of white and pink blossoms today, since that's what the garden has to offer at the moment. And I go with less sugar than some recipes I've seen. More, and it seems too cloying to me. Enjoy. Rose jelly Makes just shy of five 8-oz. jars 3 C. rose petals (unsprayed, just-picked) 2 C. water 2 1/2 C. sugar 1/4 C. lemon juice, fresh-squeezed and strained 3 oz. package liquid pectin 1 T. rosewater Rinse petals well. Bring water to a boil in a stainless steel pan. Toss in petals and give them a good stir. Cover and let steep 30 minutes (stir once or twice in there somewhere). Strain petals through a colander lined with a clean cloth and gently squeeze out the liquid into a clean 2-quart saucepan. You should have 2 cups of liquid. Add lemon juice and sugar and bring to a quick boil, stirring a bit. Let it boil hard for 2 minutes. Add pectin. Boil for 4 minutes. Take off the heat; let it sit for 1 minute and stir in the rosewater. Pour into sterilized canning jars. (If you like, place a few tiny rosebud petals on the surface of the jelly before sealing it up.) Seal and process in boiling water for 10 minutes.

I use this recipe all the time with great results. It should work fine for your syrup, too. Season with spices as you want, too. Syrups made from blackberries, huckleberries, raspberries, boysenberries, loganberries, sour cherries, and Island Belle grapes as well as mixtures of berries are of good flavor, color, and consistency (thin like maple syrup, medium thick like corn syrup, or slightly jelled). Syrups can be made with or without pectin and lemon juice. Lemon juice may improve color. Use of pectin will vary consistency. To Prepare Fruit Puree: Sort, stem, and wash ripe fruit or thaw frozen unsweetened fruit; crush fruit thoroughly; measure crushed fruit. Add 1 cup boiling water to each 4 cups crushed fruit and bring to a boil. Reduce heat and simmer to soften--about 5 for soft fruits...about 10 minutes for firm fruits like cherries and grapes. Press through sieve. SYRUPS MADE WITH PUREE 4 cups puree 4 cups sugar 1/2 package or less powdered pectin (if desired) 3 or 4 Tbsp lemon juice (if desired) 1. Mix puree, sugar, pectin and lemon juice. 2. Bring to boil and stir for 2 minutes (boil till jelly thermometer reaches 218F). 3. Remove from heat, skim off foam, and pour into 1/2 pint or 1 pint jars to within 1/2 inch of top. 4. Adjust lids and process in boiling water bath canner for 10 minutes. 5. Nancy, here's a good bread recipe that uses a lot more than a couple of tablespoons of maple syrup. I love it, and the coffee does not add a discernable coffee flavor but it does add a nice "secret ingredient" flavor. MAPLE OATMEAL BREAD 3 3 Â¼ cups flour 1 pkg dry yeast Â¾ cup prepared coffee 1/2 cup quick cooking rolled oats Â½ (scant) cup maple syrup 2 tbls butter 1 tsp salt 1 egg Combine a cup of flour and the yeast. Heat coffee, oats, syrup, butter and salt until just warm and butter is almost melted. Add to flour mixture along with egg. Beat with electric mixer on low for 30 seconds. Beat on high speed for 3 minutes. Using a wooden spoon, stir in as much of the remaining flour as you can. Turn dough out onto lightly floured surface, knead in enough remaining flour to make a moderately soft dough that is smooth and elastic (3-5 minutes kneading). Shape dough into a ball, place in lightly greased bowl, and turn over once to grease surface of dough. Cover and let rise in a warm place until double in size, about an hour. Punch down dough, cover and let rest 10 minutes. Meanwhile lightly grease a 9x5x3 inch loaf pan. Shape dough into a loaf and place into prepared pan, cover and let rise in a warm place until nearly double in size (30 to 45 minutes). Bake at 350 F about 30 minutes or until bread sounds hollow when lightly tapped. Remove from pan immediately and cool on wire rack. Makes 1 loaf (14 slices) Each slice contains 149 calories, 3 grams total fat, 2 grams sat. fat, 1 gr fiber, 26 gr. Carbs, 196 mg sodium, 4 gr protein. (Contains 8% of daily requirement of iron) And here's a really nice maple scone... Maple Cream Scone 2 cups all-purpose or unbleached flour 1 tablespoon baking powder 3/4 teaspoon salt 4 tablespoons cold butter, cut into 1/4-inch pieces, plus 2 tablespoons butter, melted 3/4 cup heavy cream 1/4 cup plus 2 tablespoons pure maple syrup 1. Preheat oven to 425 F. Lightly grease a baking sheet (I used silpat on the baking sheet). 2. Combine the flour, baking powder, and salt in a large bowl. Cut the butter pieces into the flour until the mixture resembles coarse crumbs. Make a well in the mixture. 3. Blend the cream and 1/4 cup of the maple syrup and pour the mixture into the well. Stir, just until the dough coheres. 4. Lightly flour a work surface; turn the dough onto the surface and knead four or five times, gently. Pat or roll to a thickness of about 3/4 inch. Cut into 2-1/2-inch to 3-inch rounds with a biscuit cutter and place on the prepared baking sheet. 5. Stir together the melted butter and remaining 2 tablespoons maple syrup, then brush a little on each scone. Keep the remaining syrup mixture warm. Bake the scones for about 15 minutes, until golden. I did just whizz away..and I'll have to add a bit more apples..LOL went a bit heavy on the spices..LOL the sprinkle lid wasn't on the Pumpkin Pie Spice from TJ's that I used..eeek...LOL

So I'll have to add to it..these apples do NOT want to break down..but they will..LOL

No, actually they are apples from another place..and the variety is still unknown because I picked them..
They are actually from property that was my Great Aunt and Uncles, that is now being turned into a housing development. But they left this apple tree..the others are gone but this one still stands..

Right now it looks like thick applesauce...Going in the fridge over night..I'll put some more apples in the crock pot tomorrow am...and then combine them...It's certainly not going to be butter with this texture. LOL I think I'll have Maple Spiced Apple Sauce..not a bad thing. ~wink~

That's the texture you want for a butter. Just take a spoon, fill it and if it mounds and holds it shape, it is done.

My Peach butter was not as thick but I was afraid I would loose the gorgeous yellow peachy color if I cooked it any longer.

of course it mounds, becaues it's applesauce..LOL

and I actually might leave it as is and put in the freezer..
It tasted good a minute ago..

I'll start over tomorrow with another batch and watch my seasonings a bit more carefully...tee hee

I did the same thing with the peach butter..Nothing like that beautiful glow it has...

LOL Nancy, I've got pears too..just still on the tree..and they didn't grow very big this year....but atleast I have them..unlike my two nekkid apple trees..

Terri, mine took a long time to cook down also, and in the future I'd puree them first, rather than just roughly chop in the fp. I have very dark butter but it is gooood. And yes, I had some that stayed really firm for a long long time. I had a basket of mixed 2nds from the Farmers' Market so with two baskets - $1 a basket - I had more than enough apples. Apples are certainly cheaper to work with than other fruit!

Terri, when I make apple butter I cook the apples run them through a food mill first, then cook the resulting apple sauce down until it's as thick as I like. I LIKE the chunks in preserves, though.

Michelle, if you used Granny Smith, those might be the ones that stayed chunky.

Thanks for the tip Annie..I almost got out the step ladder and got the food mill down while I was grabbing that darn peeler, corer, slicer down from the other tall cab in the garage...I guess I'll have too..
