Comments (15)bcskye, Yes, you can tap hickories - and walnuts, too for that matter; there was an article published in the Proceedings of the Northern Nut Growers Assn annual meeting several years back, where they'd done just that - and the black walnut syrup came out pretty well-received in taste tests(IIRC, it beat out maple syrup). The only potential drawback I can see for you is that weather conditions in your area may not foster the sort of 'sap run' that folks farther north of you get(or, I may be totally wrong in this theory.). I'll hazard a guess that the shagbark hickory syrup you're seeing is made by boiling strips of bark peeled off the trees, straining that liquor, adding sugar, and boiling it down further. It's a well-known(well, at least in the nutgrowers circle I run in) procedure - and I've made hickory syrup in that manner, using shagbark/shellbark nut fragments left over after cracking and picking, whole cracked mockernut hickory nuts, and nice clean mockernut husks. Comments (8)I have a few Silver Maples in my yard. These were planted around new houses (back when my house was new) because they grow quickly. They also drop a lot of branches. However, I've tapped them a couple of times. Supposedly the sap is more dilute than that of a sugar maple, but I have no experince with Sugar Maple sap, so I don't know. I boiled down a gallon or so of sap to make a cup or so of syrup. It tasted great. On the scale I did it, it was a fun project for me and the kids, and we ended up with a meal of two worth of syrup. Comments (8)First thought was that there was too much maple syrup for the amount of chocolate. I normally heat the cream first and then add the chocolate, letting the heat from the cream melt it. According to Baking 911, it is the fat content of the cream that makes for a more stable ganache. And your recipe uses very little cream. Comments (13)Ginger, lime, grapefruit, hibiscus, rooibos tea, green tea, cucumber...any fruit in season. Whazz-up, make ice cubes...watermelon should be good soon and plentiful. We have used a soda stream for years. Sometimes just a bit of bubbly is good. The issue most have trying to get off sugary sodas, even the diet ones, is the lack of sugars and full flavor in lightly tinted water. Like a flat soda. Sort of defeats the purpose even though natural sweeteners are better for you. I used to buy the unsweetened cranberry but now just use the teas and a bit of fruit and ginger. Ice cubes made from a blender mix are a bit more flavorful than just a whole slice of fruit in a glass. Some of the concoctions are just pretty for a party. In the Fall when my fruit trees are harvested, pear and apple are good with ginger and lemon/lime. I like these cotton spice bags so I can use bulk spice and make my own mixes. Great for a work day...just stays in my water all day and cold brews. Much cheaper than those tiny purchased herb tea bags. And it will hold a couple ice cubes.
