Non-dairy/non-dairy substitute breakfast/brunch ideas

I've been having granola and yogurt for breakfast every morning, and I seem to be okay with yogurt (even though I don't like it), but I can't eat anything with milk or soft cheese. Hard cheese like Parmesan is okay, however.

I don't like using milk substitutes in a recipe that calls for milk because often milk is an essential ingredient for the dish to taste right. It's even worse if I go to a restaurant, especially ones that specialize in a breakfast/brunch menu.

I wanted to make quiche this morning (we're out of bread), but I felt that making it with a milk substitute would not be very good, especially since the recipes I found called for both milk and cream, which is the worst combination.

It seems to me that eliminating milk from one's diet should not be that big an issue, but it seems to crop up everywhere - at least in the things I would like to make. I sort of want to keep egg content down as well.

Today I made grits, and I flavored them with Cajun seasoning. Next time I will make them with chicken chili sauce that I have in the freezer. Maybe I should buy some turkey bacon - DB won't eat pork, and it's probably better for me to stay away from bacon as well.

I generally make omelets or Migas for breakfast - sometimes fried rice or Udon noodle soup. I've gotten tired of these, however, although I do like the idea of beans for breakfast.

Anyway, I would like to hear your thoughts or suggestions.
