The label on "Daily Chef" brand non-dairy creamer (from Sam's Club) says "as a replacement for 2% milk, add 5 level tablespoons of Creamer per cup of water." Check the label of the brand you are using.

How about rice milk as an alternative, which you can easily make yourself at home and adjust the water to rice ratio to reduce the protein. At least it doesn't have what I would consider some pretty "negative" ingredients (corn syrup solids, partially hydrogenated soybean oil, etc...) that are in coffee creamer.

If it turns out horrible or not what you need/want, my daughter likes almond milk and coconut milk too, she's lactose intolerant. I can't stand soy milk, but the almond stuff is tolerable.

Non-dairy creamer has zero g. protein and rice milk has something like 1 g. per cup and is one of the lowest in protein (and nutrition) of the nut / seed alternative milks you can make.

Almond milk has approximately 2 g. protein per cup (and also depends on whether you use commercial or make your own at home - and the ratio of nuts to water).

Coconut milk also contains protein - how much depends on the source. For instance, 2 T. of powdered coconut milk has 2 g. protein and you would use 2/3 c. powder + 1-1/4 c. hot water to make a beverage ratio - although you can mix it any ratio you'd like, and 1 c. canned coconut milk has 3 g. protein but I think one would thin it with water.

I also thought of oat milk (another one you can easily make at home - bring 5 c. water to a boil, add 1 c. oats, simmer until oats are cooked - then blend into a "milk"). A cup of oats has 10 g. protein, so that's 2 g. (approx.) per cup of oat milk.

Hemp seeds are also used to make "milk", but they are pretty high in protein (the seeds are 30% protein), but have all 10 amino acids for a complete protein source, great for a vegan choice.

Other choices would be cashews, sunflower seeds, sesame, pumpkin seeds, walnuts, pecans, pine nuts, but I haven't figured the amount of protein.

It also makes a difference how you are using it. Most add a different flavor than cow's milk or the neutral flavor of non-dairy coffee creamer, and they don't all work well in all recipes as a milk substitute. However, most nut and seed milks add nutrition, which non-dairy coffee creamer doesn't.

I wonder if there are low-protein products available, like you can find low-sodium products?

i am so impressed at your understanding of these alternatives and i truly thank you for wishing only to help. the reason i avoid all those nut 'milks' is that nuts are protein and i have to stay away from whole grains too.

although so far i can only use non dairy creamer (in coffee) and hoped i could substitute one cup for one cup if only i knew the ratio.

so, mostly i just try to eat very small portions of everything except what i am strictly avoiding (nuts, whole grains, dairy and many fruits and veggies but not all).

hey, it seems to be working as my kidneys are still functioning exactly as they were two years ago (not good but not failing either).

diane, I do hope that you can find a good alternative and that your health continues to at least stay stable, if not improve.

My stepmother was on dialysis for a while and her doctor also told her to avoid potassium, phosphorus and sodium. Cooking meals for her was time consuming and difficult, so you have my empathy, that's for sure.

Too bad about the whole grains, I suppose that cancels out the possibility of Grainlady's oat milk also. Whole grains were one of the things the dietician told stepmom she could eat, so at least I had breakfast covered!

my doctor says i am on my road but yearssss from going on dialysis, especially as i am so careful about my diet .. and and 80 lb weight loss! i have so many restrictions in what i can and cannot eat that the only way i can really deal with all these issues is that i avoid what i can or eat a very small portion of what i am offered.
one thing that is important to me is that i dont ask friends or restaurants to feed me any differently than is already
being made. that's why i have only restricted the size
of what i put on my plate.

i do have to live in a real world and dont want to be bothering everyone in it! lol

Well congratulations on that weight loss, that's a lot of weight. And another congratulations on being able to eat out with friends while exercising that restraint, that's a hard thing to do.

thanks for your kind encouragement. once the announced blow was given to me by the doctor, what else can one do but become the most active one can?!?! eating less got me two things .. the weight loss and new potion sizes.
