It is always interesting to prepare a meal based on a theme. There is a lot to learn about food, tradition and culture that way.

Dishes I made for Rosh Hashanah.

Not your typical gedempte fleisch. Sous vided brisket (flat cut), very slow and low medium rare, with tamarind sauce. Came out tender like tenderloin. Very different tenderness than traditional braised brisket in texture and mouth-feel.

Brisket was on potato leeks Latkes/pancake.

Honey glazed Beets, carrots and fried apple slices with Pomegranate sauce.

Heart tomato and pickled green tomato with sweet black garlic sauce/dressing.

Bread, typical Challah recipe, but with crashed sesame seeds and cranberries.

How gorgeous! I'd say too pretty to eat, but I'm sure I would have gobbled it all up. You are an artist as well as a cook. Lucky guests!

Ron, came across your post which I missed before...what a beautiful place you have. I am in the midst of planting shade companion plants, so appreciate your thoughts on light for the list you have. Hope you will keep posting pics! Oh, forgot...the potted hostas that you overwinter in the garage...do you have any special tricks for overwintering? I have done it 3-4 years now with about an 85% rate, but I'd like to improve on that because I do not like losing even one! I overwintered some out in our shed this last year instead of the garage, and the mice got into them and I lost a bunch. My biggest problems have to do with springtime moisture levels...I do not water them at all in the garage, come spring, I try to make sure at least 1/2 have broken dormancy before going outside. (Leave them in the garage too long, they dry out and die, water them in the garage, or take them out too early, they can rot.) Would love to hear how you handle yours. For this next year, I'm thinking about giving each small one an ice cube in Feb/March. Just to add some moisture back in as the weather warms up.

Thanks so much for the responses. sprout I had no idea Milorganite could double as a repellant! I've been shaving Irish Spring soap around the yard and hanging mesh bags of it from hydrangeas and climbing roses with some success. Just bught a scarecrow sprinkler and hope to set it up this weekend. Papou thanks for the information on sun. Some of mine were burning (maybe from the sudden change?) and had to be moved but I probably did take it to an extreme. Slugs have not been an issue for me so far (knock wood!) but it would be good to strive for slug free varieties when I buy more. I don't think I've seen that designation on plant tags though - is that something only specialty hosta growers would provide? jbranch that's a wonderful link - thanks so much - in my favorites already. Clearing out a crowded garden should be no different than clearing out a crowded closet. I regularly purge closets and drawers and call Purple Heart - I need the same approach in my yard. Thanks for that nudge!

I like the one on the right. but I sort of like the one on the left too. sorry. It's just 2 different looks. That being said, you need to do the "squint" test. I think the lighter tile on the left will appear to give you a white-ish color--so stand back, squint your eyes at the painted backsplash area now--do you like what you see or would you want it darker? Maybe do the test again with the tile on the counter--where you have counters so as to get the full effect. If you want it to look really rich, then darker. If you want to keep it light, then the lighter one. I think both will look nice, seriously. I say pour yourself a cup of tea, and sit down and just stare at it. It will come to you. It is sort of like a meditation type of thing. If anybody is home, they will wonder if you are "ok".

Hi again, Thanks so much for the measurements! I think we can work something like that in our smaller bedroom and still have enough floor for his bed.... I will have to measure tomorrow when I don't risk making noise near the bedrooms (our sons sleep with their door open). He still wants to sleep with his brother, but they have made a few comments about having their own rooms soon. We can relocate the computer and set up the room as originally intended for him. Stunning!

To me, your use of sauces is very pleasing. You use sauce as a garnish beautifully. That bread is spectacular! Even the brisket is perfect. My briskets don't come out of the oven looking nearly so neat/tidy.

The brisket came out very nice, it was juicy and tender. You don't need teeth to eat it. :-)

The Challah is a six-strand braid. It's a little tricky, but there are many videos on youtube that show you how. The only thing I would suggest is for you to have a scale to measure and to make sure each strand is equal.

I pick six strands and also the six carrots to symbolize the Six Day War and to remember someone I know who fought in that war, came back without a scratch, but was killed here by a drunken driver.

Of course the various circular theme is also traditional for this Holiday.
