Tweaking honey muffin recipe

I read honey, oats, bananas, almonds and cherries all help you sleep, so I decided to try and concoct a nightcap muffin recipe. I made these today and they were pretty good, but they burned on the outside probably due to the honey. But I liked the flavor and texture. Found the recipe on the Internet.

Ingredients

1 cup flour

1 cup quick one minute oats

1/8 cup wheat germ (optional) (I used oat bran)

1 1/2 teaspoon baking powder

1/4 teaspoon salt

3/4 cup milk (I was out so I used soy milk)

1/3 cup honey

1/4 cup vegetable oil

1/2 cup peanut butter (I used 1/3 cup almond butter)

1 beaten egg

1 teaspoon vanilla extract

2 mashed ripe bananas

1/8 teaspoon cinnamon

1 teaspoon of brown sugar

How to make it

-----------------------------------------------------------Preheat oven to 400Ã¯Â¿Â½F, and line cupcake pan with paper liners.

In one bowl, combine the flour, oats, baking powder, salt, cinnamon, and wheat germ if using.

In a second bowl, combine egg, honey, milk, vegetable oil, peanut butter, vanilla extract, and bananas.

Add the second bowl to the first, stirring until just moistened.

Distribute evenly among the cups.

Sprinkle tops with brown sugar.

Bake 20-25 min.

Any way I could tweak it so it doesn't burn? Less baking time would mean not done in the middle.

Bake at 375?

Forgo honey all together?

Use half honey and half sugar?

Make smaller muffins?

I had to cut the bottoms off all the muffins--not real aesthetic, lol!

400 temp seems a little high, but I'm not much of a baker.

You might want to try these one at a time to see what works. Reduce temperature first. Make sure muffins are in the middle of the oven, not on a lower rack (if you didn't already do that). Place muffin pan on a cookie sheet to insulate from the bottom if there's still excess darkening. If you're waiting till a skewer comes out clean to remove the muffins, back off a bit and remove when just a very few crumbs cling. They'll bake further from residual heat while resting and be a bit more moist. Waiting till there are no crumbs you risk dryness. You didn't mention tops browning excessively, but those could always be covered with foil part way into the baking process.

If you find you really like this combo and are baking them regularly, at some future point you might think about switching out the milk for buttermilk or yogurt and adding some soda. Their keeping qualities will improve and I keep thinking it would be a nice counterpoint to the sweetness of the other ingredients. Soda wouldn't hurt with the honey anyway.

These aren't "honey" cornbread muffins but it's my favorite recipe. Always moist. You could use honey instead of the sugar. 3/4 cup cornmeal 1 cup flour 1 cup yogurt 1/4 cup sugar 1/4 cup milk 2 tsp baking powder 1 egg, beaten 1/2 tsp baking soda 1/2 tsp salt 2 Tbsp butter, melted Mix all ingredients just enough to blend. Pour into greased 9x9 pan and bake at 425ÃÂ° for 20 min. Cut in squares and serve with hot butter.

Marie ~ I've not heard anything about the quilt show, yet, but then, I've not been to either quilt shop (East Grand Forks or Mayville) in months. I'll check it out. I do plan to come, and if I'm there I really would love to have coffee with you! Yes; I keep my batter/dough in a huge plastic mixing bowl. Margie has hers in gallon-size beverage pitcher. Sweet Betsy ~ I used a spoon, a small knife or spatula would have been better. I pressed the spoon down the side of the muffin cup and then into the roll slightly. It then popped out. They were not burnt, but they just didn't seem to want to slide out. I rubbed the muffin tin with vegetable oil and even dusted it with flour. I wondered if it was because I used the butter instead of shortening, or if I should shorten the cooking time by a couple of minutes. I'm glad your guests liked them. Arkansas Gal ~ The recipe yields a dough that is not stiff, but is too stiff to be called a batter. You can't really roll it out, and it's too thick to be poured. I use two soup spoons and "glop" it into the muffin cups. I fill them between 1/2 and 2/3 full. I don't try to level the batter; I cook them however they happen to fall. Have your cookie and eat it too! 1⁄4 cup oats, toasted and cooled (Use certified gluten-free if desired) 1⁄4 cup whole almonds, toasted and cooled 1⁄4 cup brown rice flour 1⁄4 teaspoon ground cinnamon 1⁄4 teaspoon baking powder 1⁄8 teaspoon nutmeg pinch salt 3 tablespoons mild tasting extra virgin olive oil or a neutral vegetable oil 1⁄4 cup maple syrup, Grade B or dark amber 1⁄4 cup brown rice syrup, warmed until pourable (see note) 11⁄2 teaspoons pure vanilla extract 1⁄2 teaspoon almond extract (omit if nut allergies are a consideration) Position a rack in the middle of the oven and another rack above it, and preheat to 325 degrees. Line two baking sheets with parchment paper. Grind the oats in a blender or food processor until fine. Add the almonds and process until the mixture resembles coarse meal. I like the idea of using a baking pan under the muffin tins. They seemed to be burning from the bottom up, the tops were fine.

L, I can't add one darned thing to Carol's very thorough post. I'd reduce the heat first, if that doesn't do it, try the baking pan and go from there.

Good luck, I don't know if they will help you sleep, but they would be a good quick/portable breakfast.

Carol I'm thinking about trying this recipe again using some cherry yogurt I bought instead of milk. How much soda should I add do you think? I'm thinking maybe 1 tsp. baking powder and 1/2 tsp. soda, or maybe keep all the baking powder and add some soda?? I'm out of my league.

Skip adding soda....and turn your oven down to 375 and test with a tooth pick after 20 minutes....and make sure the shelf of your oven is in the middle of the oven.

Now that I'm looking at that recipe more closely, I think for your first attempt you could just switch out the milk for yogurt and leave well enough alone as LindaC suggested. You already have 3/8 tsp. soda in the baking powder, which is probably about right.

If you do that and then discover there's a problem with the rise let us know. Soda is pretty potent stuff so it's better not to overdo it.

The main benefits with the yogurt would be a nice rise and better keeping qualities, which for a single person household is a real advantage, especially as we're moving into cooler seasons.

Another idea is to soak the oats in the milk (or yogurt) for a little while, maybe 15 minutes. That way some of the liquid will be absorbed.

Also, try using smaller bananas, or, if your bananas are big, use a bit less than all of them. "Two bananas" can yield wildly different amounts of mashed banana. I wish all recipes used measurements instead of numbers.

OK, I'm going to try these again. I'm out of instant oats, I just had some because I bought them by mistake but I have the old fashioned oats which I think I can use by pulsing them in the food processor. I'll probably omit the oat bran this time and use whole wheat pastry flour. They had a good rise, which is one reason I liked them. I think the cherry yogurt would be the perfect compliment to the other ingredients, and make the perfect bedtime snack. Although I've been eating them mostly in the AM.

I have about 30 med. bananas that my neighbor gifted me with that I'm trying to use up, so I'm going to make another batch right away. If they come out I'll post a picture.

I should have mentioned that the point of both my suggestions was to get the interior done before the outside got overdone. Twenty minutes tops.
