Tweaking a cake recipe

I have a client who ordered a carrot cake for an early August birthday, so I have some time to experiment. He wants just a basic cake. His wife has esophageal cancer and food as small as raisins get stuck in her esophagus. Finely chopped nuts are okay. I am not using pineapple. I want a cake with quite a bit of flavor. I have combined about four recipes, including some in the carrot cake thread as well as my own additions, and made cupcakes this morning. The inside of the cake is light and moist. The tops are sticky and they fell when cooling. Should I increase the amount of flour a little bit, and maybe reduce the white sugar?

Here is the recipe in progress:

2 eggs (mine are extra large)

1/2 cup butter

1/4 cup light olive oil

1 tsp vanilla

3/4 cup white sugar

1/4 cup brown sugar

1 cup AP flour

1 tsp baking powder

1 tsp baking soda

1/4 tsp salt

1/2 tsp cinnamon

1/4 tsp allspice

1/8 tsp nutmeg

1/8 tsp mace

1 tsp orange peel

1-1/2 cups shredded carrots

1/2 cup chopped pecans

Cream soft butter until fluffy. Added sugars then eggs one at a time. Mixed dry ingredients and orange peel. Alternate oil/vanilla with dry ingredients until all is incorporated. Add nuts. Fold in carrots.

Baked reg cupcakes in a silicone pan at 350 for 15-18 minutes. The center two never baked through. My oven is a stinker! It drops as much as 50F from the set temp while baking. I have to keep a close eye and 'preheat' to get it back up to temp. It does not bake a tray of cookies (or cupcakes) evenly. The thing is a GE Monogram double oven, less than a year old. Grrr...

Baked small cupcakes in an aluminum pan at 325 until above the edge of the pan. Raised heat to 350 until done. About 14 minutes.

Makes 12 regular cupcakes and 12 mini cupcakes.

Now that I think about it, this is half a recipe. I think the original called for 1-1/2 to 2 cups of white sugar. So I may have 1/4 cup sugar too much.

Any help is appreciated. I tried to find the recent muffin thread, but it didn't come up in a search.
