Corn - Help Grain Lady

I know this seems very out of place here. For fun, I grew a small patch of Reid's Yellow Dent corn, an open pollinated variety. I wanted to try grinding my own meal. The plan was to buy a Nutrimill (will do wheat berries also with it), now I am seeing various posts on the internet that it won't work....they are using popcorn. I don't know how I missed that little tidbit of info.

Grainlady, I know you have a mill. Have you used it for field corn?

OH BOY!!! You're going to love using freshly milled corn and won't believe the difference in flavor from commercial cornmeal.

The good news, the Nutrimill WILL mill corn. The grind is a fairly fine meal which will give you a more cake-like cornbread. You can also mill fine corn flour from your corn and add it to baked goods.

I use my Nutrimill for corn meal, but I also have a non-electric Corona Corn Mill I use if I want a medium or coarse grind of corn.

Suggestions:

1. Choose the smaller nibs of corn for milling. You can also use popcorn to make corn meal. The smaller nibs work well in the mill. You can crack the large nibs into smaller bits before milling. Place them in a small cloth bag and whack them with a hammer just before milling.

2. Set the mill dial all the way over to COARSER and the other one to LOW for the coarsest grind.

3. Only add about 1-cup of corn to the hopper at a time. This is a good rule-of-thumb for all the large grains/seeds/beans. Not only because of the over-all size of them, but because they also produce more flour volume than the smaller grains/beans/seeds. It's good to mill large things in small batches and allow the mill to rest and cool down so you don't over-heat the mill.

4. Mill what you need, and use what you mill. If you have any leftover meal or flour be sure to store it in the freezer. I make sure I use any leftover flour within a week of milling. The freezer only slows down the germ oils and nutrients from degrading - it doesn't prevent it.

5. For milling large grains/beans/grains, I make sure the mill is ON before adding corn to the hopper.

6. Helpful hint... On the base of the mill it has NO and YES in embossed lettering. Make sure the flour bowl is lined up with "YES". Otherwise you will get to experience how much flour spews out of the mill and have one heck-of-a clean-up.

I just added 100# of Prairie Gold white wheat, 25# dent corn, 25# rye and 15# barley to our home food storage over the weekend.

I am so relieved. I printed off your tips.
I could just as easily grown popcorn....will do that next year.
I am interested in seeing how many pounds of corn I grew in that little patch.

Only certain varieties of sweet corn will have their flavor affected by a nearby field corn planting. These are the ones labeled "super-sweet," "sugar-enhanced," etc. That's why some of the advice above is incorrect -- though it would be true for "ordinary" vegetables (and non-enhanced varieties of sweet corn, for that matter). You could try timing your planting to avoid cross-pollination, but I wouldn't rely on starting indoors; direct-sown corn catches up quickly to transplanted. Or simply plant a variety of sweet corn that doesn't become starchy if cross-pollinated. Some people prefer these; their disadvantage is that the corn must be eaten very quickly after harvest, while the enhanced varieties can keep their sugar for days. That is ridiculous. My local feed store also went up in price but not that much. alfalfa went from $13 to $17 and SBM went from $16 to $20 per 50lbs. I lucky found a new place near my house to buy grains (through google maps) with much better prices. $12.50-Alfalfa and $17.45-SBM. So definitely call around town and see if someone has a better price. I pulled up google map of New Jersey, then did a search nearby, typed in "feed" and below is a list of the first 10. Birds (robins and bluejays mostly) come solely to my lawn in swarms pre and post grain spreading all the time. The application of grains does not appear to attract them. I find the same thing, but I am hesitant to repeat it every single time I see someone ask the question. So much is interrelated with the organic program that every reply has the potential of going 3,000 words or more. I love to talk about wasps and dung beetles but I just have to stop myself. I spread coarsed cracked corn two weeks ago. Soil temps have been ~50. The corn is mostly dissolved and working its way into the soil. It seems to melt in. It doesn't dissolve so much as it disappears. When I say it disappears I mean that it is still there but you can no longer see it. It is covered with decomposing fungi and has assumed the color of soil.

Here's another advantage of whole-grain corn meal: ants and insects can't digest that stuff, thus decline. I buy 10 lbs. bag of cracked corn for $2.69 from the feed store, and grind them with a Nutri-mill flour-grinder. Awesome as a fertilizer, buds everywhere, fast result like alfalfa tea, but with more buds. NPK of whole-grain corn meal is 1.65/ 0.65 / 0.4 ... that's much better than horse manure with bedding, at NPK of 0.7 / 0.3 / 0.6, plus salt. pH of cracked corn is VERY ACIDIC at 3.5, thus neutralize my alkaline tap water at 8.3. I checked on fish bone meal, that stuff is so stinky that a person reported the neighbor couldn't sleep with its application. Both fish meal and fish bone meal attract huge black flies. I tested the refined corn-meal from Walmart ... it was worthless, no nutritious fatty germ layer, just junk-food that attracted flies, and didn't work as fertilizer nor fungicide. Some feed store grind the cracked corn into meal for a surcharge. Grubs are the larvae that hatch into Japanese Beetles.
