Need ideas! Dish to take to out of town gathering

Having our annual family reunion and need a dish to take! I'm NOT much of a cook, so I struggle with day to day stuff...let alone trying to come up with an idea for an out of town gathering where I won't have a kitchen to work in. Too many people bring the store bought stuff...chicken, chips,etc...sick of that. Want something I can fix in a crock pot in the hotel room, or something I can fix the day before that will travel well and not be crusty or nasty when I go to serve it.

Any ideas??? TIA!

Marinated Mushrooms

I went to canning camp in the summer of 2006 in Michigan and met some of my internet cooking friends. This is a recipe our hostess, Sherry, shared with us (not for canning though).

Ingredients
Â½ cup salad oil (I used canola)
Â½ cup olive oil
Â½ cup lemon juice
1 clove garlic, crushed
salt and pepper to taste
a dash of Worcestershire
some chopped basil, oregano, parsley (I used dried)
mushrooms

Combine all ingredients. (You could also use Italian seasoning if you have it instead of the above herbs.) If it is not enough to cover the mushrooms, add equal parts of more oils and lemon. Marinate overnight. Serve using toothpicks.

How about a non mayonaise cole slaw....It's best after sitting in the refridge or a cooler for a day.

Cole Slaw, Fred Harvey's
Shred one medium head of cabbage and one medium onion ( use the 1 mm slicing blade on the Cuisinart or you could buy a couple of bags of shreded cabbage)
Add 1/2 c. sugar
Heat together 1 1/2 tsp salt
1 tsp dry mistard
1/2 cup peanut oil ( I use canola)
1/2 c cider vinegar
1 tsp celery seed
Pour over cabbage, stir and let sit at least 4 hoursI sometimes add black pepper and green pepper.
You can triple the recipe and only need to double the dressing.

Or how about "Snackers".
Snackers
1 ring Dutch Balogna ( about a pound ) or Kielbasa
2 medium yellow onions ( about the size of a baseball)
Slice and layer in a crock or straight sided bowl
In a sauce pan place 1 c. cider vinegar, 1 cup water and 3/4 c sugar and 1 tsp mustard seed ( whole). Bring to a boil and pour over meat and onions and let stand un refigerated for 24 hours. Serve with cocktail rye.
And you can always take an assortment of nice cheeses and crackers.

My wife and I live on a 1/3rd acre block in the Maryland suburbs and I have had to deal with the lawn that came with the house. Putting in a large veggie garden will help get rid of a lot of it. I think that the really hard work comes in getting it established (this depends a little on how you wish to do this and what sort of grass is already there -- some kinds are a real pain to get rid of). But once the garden is established and you get a routine going you will be surprised how little time is required on, say, a 1000 square foot garden. As the last poster noted, fruiting trees and bushes would be a good idea and will also help to get rid of that dreaded lawn. I notice that you seem to live in a well-manicured neighborhood, so perhaps this suggestion is not the best, but one way to keep a lawn down that is a lot quicker than a push-mower and does not use gas is a scythe, though it may not get you the fine cut you are used to with mowers (I have not used one, so others might care to comment on this). I don't see any reason you cannot have bees, provided they are legal (which they usually are, but check local ordinances). At the back of your property line seems like an out of the way spot or you could make an enclosure. We are going to put in bees this spring and there are plenty of people here in the suburbs who have bees on less than 1/3rd of an acre lots. But bees do involve a fair amount of work, initial expense, and a pretty steep initial learning curve. Whether they will bother the neighbors perhaps depends on whether they know about them. There is little doubt that bees in fact visit their gardens throughout the spring and summer. The main worries here --ones we are having to come to grips with -- are bees in neighbors swimming pools and the like (you must provide them a consistent water source) and swarming, the hive's reproductive strategy of splitting where one half of the hive takes off with the old queen to find new lodgings. Can be a bit alarming for people to see 20,000 or more bees clustered in their backyard. There are ways to minimize this -- that's part of the learning curve.

Hi Cassie, I am right there with you as far as removing a tub and putting in the same receptor. First if you don't have help you will need it for at least one step of the process. If the tub is cast iron you can bust it up into smaller pieces with a sledge hammer (eye and ear protection, of course). If you have a standard tub configuration then the receptor is made so you don't need to make any plumbing changes. If you currently have a right hand drain the positioning should be the same. Don't forget to order the drain as it doesn't come with it. I am looking at the same model (in Sea Salt) and just to let you know Kohler quoted that piece as weighing 193 pounds. So a few extra hands will be needed As far as the drain size goes I assume there is an adapter. Shower doors.... I have been searching for exactly what you describe and here is what I've found. Kohler has something pretty cool yet costly and I don't think it comes in the size we want. Look up K-705791 on their site. This is a bypass doe with fixed panels. This is another I found, its a company out of Canada, yet they claim its available in the US. Look here and I know you will really like it. gina_w, I made your poached salmon with chimichurri for supper tonight -- right down to the garnish. My husband and I both LOVED it! It is a definite contender for the party. Do you think that it would be good at room temperature? I don't want to be cooking during the appetizers or the soup course, but I am afraid if I keep it warm in the oven it will dry out, and even a reheat in the microwave might overcook it. Here is how I did the chimichurri and poached the fish (I'm sure you know how to do both, but just in case some other reader wants to know): I took a big handful of flat leaf parsley, 4 cloves garlic, and a bit of onion and minced them in the food processor. Then I added about 1/3 c of arbequetta olive oil, a little red wine vinegar, a little lemon juice, about 1/2 t of dried oregano, and S&P. That's it -- and it was really terrific. I poached the salmon by putting it in a deepish pan with water to cover, added some mirin, some peppercorns, and a bay leaf, as you suggested. I brought it to a boil, and then immediately took it off the heat, covered the pan, and let it sit about 10 minutes. eandhl, here is my recipe for stir-fried tofu. It was my first stir-fry. Many years ago, when I was about 22, my aunt gave me a wok. It just sat there until one day in the newspaper's food section, in the "kids in the kitchen" column, I found this recipe for stir-fried tofu and vegetables (I've rewritten it to leave out all the super-basic instructions like "peel the onion and put it on a plate"). I figured if kids could do it, I could, too! Now I love to cook all kinds of Chinese dishes, but this is the one that got me started. My kids always loved it. I make all kinds of modifications now, depending on what vegetables I have on hand, and I use sherry, dark soy, hot oil, etc. This is the basic; you modify it the way you want (use more or different vegetables; include water chestnuts and bamboo shoots; add or substitute chicken or beef for the tofu; etc.). Enjoy! Stir-fried Tofu and vegetables ¼ pound mushrooms 1 large carrot 1 small onion 1 small green pepper 1 - 2 pkg tofu (firm works best) 1 clove garlic 2 T water (I like sherry or mirin instead) 1 t cornstarch 2 T oil (I like to use peanut) 3 T soy sauce 2 t honey Prepare vegetables. Mix water and cornstarch in one bowl, soy and honey in the other. Stir fry vegetables 1 minute, add soy/honey mixture, cover and cook one minute. Stir in water and cornstarch and tofu, stir gently until heated, about 1 minute.

A couple of my favorites that I think are awesome - the Sue's crumb cake is enough to feed an army. The other two don't need to be served piping hot - warm or room temp is fine, since you have to travel. Simpler Times French Toast (David - Lakeguy) Chef & Innkeeper Cindy Belford, Simpler Times Inn, Grand Lake O'the Cherokees 8 cups sweet French bread in 1" cubes 5 eggs 1 cup sugar 1 teaspoon nutmeg 3 cups milk or Half & Half 3 cups fresh or frozen blueberries 1 cup chopped pecans 1/4 cup butter or margarine 1/2 cup brown sugar Put bread in large bowl. Whip eggs, sugar and nutmeg until light in color and thick. Add milk, stir and pour over bread. Cover and place in fridge overnight. In the morning, mix cup blueberries into bread and put in greased pan; sprinkle balance of blueberries on top, then pecans. In pan, melt butter and brown sugar until bubbly. Pour mixture over blueberries and pecans. Bake at 325 til puffed and brown - one hour. Marlen's Pull Apart Bacon Bread 1 pkg (10 oz) bacon 3/4 c green pepper, chopped 3/4 onion, chopped 3 tubes (7-1/2 oz each) refrigerated buttermilk biscuits 1/2 cup margarine, melted 1/2 c (2oz) shredded cheddar cheese Cook bacon until crisp. Drain, reserving drippings. Crumble and set aside. In bacon drippings (or vegetable oil) cook green pepper and onion until tender. Cut biscuits in fourths and place in large bowl. Cinnamon 1 Cup White Sugar In a large pot on the stove, melt the butter and add the vanilla and then mix in the remainder of the ingredients. Spread out with a large spoon and/or a spatula on a cookie sheet to dry out a little. Then make the cake. 1 Box of yellow cake mix. Make according to recipe on the box. Put the cake in a pan 11.5 inches by 17 inches. Bake the cake half way through the baking time (according to the package directions - this will be about 15-20 minutes). Take the crumb mixture and, using a spatula, lift it off the cookie sheet in chunks and, using your hands, crumble it up into big crumbs and put the crumbs on the cake (this will be a little messy) and continue baking until the end of the baking time. Remove the cake from the oven and cool on a rack. Wait until the cake is completely cooled and dust generously with powdered sugar. Lots of powdered sugar!

You could do Ginger's Crockpot French Dip Sandwiches. They are delicious!

CROCKPOT FRENCH DIP SANDWICHES

2 cups water
1/2 cup soy sauce
4 whole peppercorns
1 tsp dried rosemary
1 tsp dried thyme
1 bay leaf
1 tsp garlic powder (had none so used 1 minced garlic clove)
3 lb boneless beef chuck roast, trimmed
8 French or sourdough rolls, split

Combine water, soy sauce, peppercorns, rosemary, thyme & garlic in a slow cooker, stirring until well blended. Place roast in cooker & cover.
Cook on high for 5-6 hours or until beef is tender. Remove meat from broth & shred with a fork. Serve beef on rolls. Pour broth in small bowls for dipping.~~ Good topped with Swiss cheese or sauteed onions, peppers or both. I like mustard on the rolls, too.~~

My "cheater" Baked Beans are always well received by a crowd.

Although the recipe calls for them to be cooked in the oven, a crock pot would work fine. If using a crock pot be sure to drain the limas and kidneys and either omit the bacon or cut it up in pieces, fry it, drain and add to the beans.

Baked Beans

1 Can kidney beans drained
1 Can lima beans drained
2 Can Brown Beans (like Bush Beans)
1 1/2 Cup of chili sauce
2 Tbl brown sugar
1 TblDijon mustard
1 Tbl Worcestershire sauce
2 Tbl molasses
3 Slice bacon cut in half

Preheat oven to 325 degrees F. In a medium baking dish, mix kidney beans, lima beans, brown beanas, chili sauce, brown sugar, Dijon mustard, Worcestershire sauce and molasses. Top with bacon. Bake 1 hour in the preheated oven, until thick and bubbly.

NOTE: If using a crockpot,drain the limas and kidneys and cook bacon first and then add to beans.

Should have mentioned that you could mix everything together at home and transport in a large freezer plastic storage bag or a large tupperware container.
